PINEAPPLE STRAWBERRY BANANA UPSIDE DOWN CAKE
I came up with this recipe by combining three family favorites. The topping is basic pineapple upside down cake with the addition of strawberries. The cake is yellow cake mix with bananas added with a touch of cinnamon. Pure delight in every bite.

- 1. Prepare your 13x9-1/2x2 inch cake by either greasing the sides with butter or using cooking spray such as Pam. Place the butter in your cake pan and place it in the oven while your oven is preheating at 350 degrees so that your butter melts. Once butter is melted remove pan from oven and sprinkle one cup of the brown sugar evenly over the bottom of your pan.
- 2. Now spoon crushed pineapple evenly over the bottom of the pan. Add the chopped strawberries evenly over the pineapple layer and set aside until cake batter is prepared.
- 3. In a large mixing bowl place the dry cake mix, brown sugar, and cinnamon. Add mashed bananas, 1 cup water/pineapple juice mix, oil, and eggs. Blend with an electric mixer for one minute. Stop mixer and scrap down side of bowl with rubber spatula. Beat for 2 minutes at medium speed until well blended, scraping sides again if needed.
- 4. Pour batter evenly over the fruit layer in your baking pan. Place on center rack in your oven.
- 5. Bake until top is golden brown and a toothpick inserted in the center comes out clean, about 40 minutes. Remove from oven and let stand about 5 minutes for topping to set; then turn cake onto a large serving platter or a cookie sheet. Serve cake pieces with a dollop of whipped cream if desired. This cake is good both warm or cold. Enjoy!!
PINEAPPLE UPSIDE-DOWN CAKE

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with aluminum foil.
- For the topping: Pour the melted butter into a 9-inch pie dish. Use a pastry brush to brush the sides of the pie plate with butter. Sprinkle the butter with the brown sugar. Use clean hands to cover the base and sides of the pie plate with the butter sugar mixture. Arrange 7 pineapple rings on the base of the pie plate. Cut the remaining 3 rings in half and place them in the openings on the sides of the pie plate. Place a cherry in the center of each pineapple ring and in the empty spaces between the pineapple rings. Place the pie plate in the fridge while you make the batter.
- For the cake: Add the flour, baking powder, salt, and cinnamon to a mixing bowl and whisk to break up any lumps of flour and to evenly combine the ingredients. Set aside.
- Add the butter and sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream the butter and sugar together on medium-high speed until light and fluffy, about 2 minutes. Next, add the eggs, one at a time, fully incorporating the first egg before adding another. When the eggs are incorporated, add the vanilla and orange zest and mix until combined.
- Alternate adding the flour mixture and the sour cream to the mixer, starting and ending with the flour mixture. Mix until just combined. Spoon the batter into the chilled pie plate. Place the pie plate on the prepared baking sheet and transfer to the oven to bake until the juices are bubbling and the toothpick inserted in the center of the cake comes out clean, 45 to 50 minutes.
- Remove the cake from the oven and transfer to a wire rack to cool for 15 minutes. Place a plate over the top of the cake and carefully flip the cake over, inverting it onto the plate. Cool the cake for an additional 10 to 15 minutes before serving.
STRAWBERRY PINEAPPLE UPSIDE-DOWN CAKE
Haven't tried this recipe yet. Clipped it from my aunt's "Farm Bureau" magazine. The picture in the mag looked so good, I knew I'd definitely make this soon.

- Preheat oven to 350 degrees.
- Evenly coat a 13x9x2" pan with cooking spray.
- Evenly spread pie filling over the bottom of the pan.
- In a large bowl, beat eggs.
- Stir in cake mix, pineapple with juice and butter.
- Blend until well mixed.
- Pour batter over filling.
- Sprinkle evenly w/ almonds, if desired.
- Bake for 30 to 40 minutes, or until a toothpick inserted into center of cake comes out clean.
- Let cool for 10 minutes.
- Invert cake onto serving platter and serve warm.
- Refrigerate.

- Preheat the oven to 350 degrees F. Make the cake batter: Combine the flour, baking powder, salt, granulated sugar, 1/2 stick butter, the shortening, milk, eggs, vanilla and 2 tablespoons pineapple juice in a large bowl. Beat with a mixer on medium speed until well combined. (There will still be a few small lumps in the batter.) Set aside.
- Melt the remaining 1/2 stick butter in a 12-inch cast-iron skillet over medium heat; swirl to thoroughly coat the skillet. Sprinkle the brown sugar over the butter, making sure it's evenly distributed-you want the entire surface of the butter to be covered in brown sugar. Do not stir. As soon as the sugar dissolves, remove from the heat and layer the pineapple slices over the top. If desired, place maraschino cherries in the centers of the pineapple slices.
- Pour the batter evenly over the pineapple slices and gently spread to even out the top. Bake the cake 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Immediately run a knife around the edge of the cake, then put a plate upside down on top of the skillet. Carefully invert the skillet so the cake is turned onto the plate. It should come out pretty easily; if bits of cake stick to the skillet, use a small knife to patch it together. Let cool slightly before cutting into wedges. It's best served warm.
PINEAPPLE UPSIDE-DOWN CAKE

- Heat oven to 180C/160C fan/gas 4.
- For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
- Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
- Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

STRAWBERRY UPSIDE-DOWN CAKE
This is for the Strawberry lovers. The best time for this would be during late spring and early summer when strawberries are at their peak. It is also great to take to potlucks or to treat the family. We found this recipe in the newspaper food section. NOTE: For the cake mix, we use the Betty Crocker Super Moist Butter Recipe Yellow Cake mix.

- Preheat the oven to 350 degrees.
- Place butter in a 9-by-13 inch glass cake pan and put it in the oven until the butter is melted.
- Sprinkle the brown sugar over the melted butter.
- Place the cut strawberries in a bowl and sprinkle them with the 2 tablespoons of sugar.
- Stir gently until a juice is produced.
- Place the strawberries (cut side up) in the pan over the brown sugar (Berries should not overlap).
- Reserve the juice.
- Place the dry cake mix in a large bowl.
- Use a whisk to break up any clumps.
- Make a well in the center of the mix.
- Pour the milk into the well and blend the batter together.
- Add the oil to the cake mix and blend well.
- Add the eggs, one at a time, blending after each addition.
- Add the reserved strawberry juice.
- Pour the batter over the strawberries in the pan.
- Bake at 350 degrees for 40-45 minutes or until the center of the cake feels firm when lightly touched.
- Cool the cake on a wire rack for 5 minutes.
- Place tray over the cake and carefully invert the cake and tray together so that the cake comes out of the pan with the strawberries on top.
- Drizzle the cooled cake with syrup (optional).
STRAWBERRY-RHUBARB UPSIDE DOWN CAKE
An upside-down cake is the perfect way to show-case the season's first strawberries and rhubarb. This recipe is a single-layer version of hot-milk cake, a standard for Southern home bakers. Serve it at room temperature with scoops of vanilla ice cream or dollops of whipped cream. If fresh rhubarb and strawberries aren't available, you can substitute frozen fruit. If the fruit is in large chunks, cut into 1/2"-inch pieces. Use the fruit straight from the freezer, without thawing. This came from Cooking Club of America. - Heat oven to 350. Spray 9-inch square baking pan with cooking spray. Pour 1/2 cup melted butter over bottom of pan; sprinkle with brown sugar. Scatter rhubarb and strawberries over brown sugar.
- Heat milk and 6 tablespoons butter in small saucepan over medium heat 3-4 minutes or until butter melts. Pour into medium bowl; cool.
- Whisk flour, baking powder and salt in small bowl. Beat eggs, sugar and vanilla in large bowl at medium speed 3-4 minutes or until thick, pale yellow and smooth. At low speed, beat in flour mixture in three parts alternately with milk mixture just until blended, beginning and ending with flour mixture. Spread batter over fruit.
- Bake 40-45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes.
- Invert cake onto serving platter, replacing any topping that remains in pan. Cool completely. Serve at room temperature.
