FRESH STRAWBERRY PIE
From a Houston Junior League cookbook, this is by far my favorite way to eat fresh strawberries. Quick, fresh, sweet and not at all gloppy. I think it's better when eaten right away than when chilled. If you purchase the red gloppy substance sold in your grocer's produce section to make strawberry shortcake or pie, please stop!!! This recipe can also be used as a quick strawberry shortcake or poundcake topping. You'll be suprised at the bright red color without food coloring, corn syrup or other nasty things that detract from beautiful fresh berries.

Steps:
- Mix sugar, cornstarch, 1/2 c of the strawberries, crushed, water and lemon juice in a saucepan. Cook until thickened. Chill.
- Fill cooled pie shell with remaining strawberries, halved, and cover with cooked mixture.
- Top with whipped cream. Chill.
STRAWBERRY PIE

- Quarter 2 pounds of the strawberries and set aside. Dice half of the remaining pound, then slice the remainder.
- Stir 1 tablespoon granulated sugar together in a bowl with the elderflower liqueur until the sugar dissolves. Toss with the diced berries and set aside to macerate at room temperature.
- Place the quartered strawberries in a medium pot and gently stir together with the jam, cornstarch, lemon juice, a pinch of salt and the remaining 1/3 cup granulated sugar. Bring to a simmer over medium heat and cook, stirring often, until the strawberries begin to break down and the mixture is thick and jammy, 15 to 20 minutes. Remove from the heat and let cool about 10 minutes, then stir in the reserved macerated berries.
- Pour mixture into the baked crust and allow to chill in the refrigerator until set, at least 3 hours.
- Decorate the top of the pie with the sliced berries in concentric circles. Refrigerate until ready to serve.
- Whip the cream along with the confectioners' sugar, vanilla and cream of tartar until it holds medium stiff peaks. Serve alongside the pie.

- Cook stirring constantly for 1 minute or until thickened.

This is my favorite pie. It is very easy to make. I got the recipe many years ago in North Jersey. It is from the Sussex County Strawberry Farms.

- Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
- In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.

Steps:
- Crush enough strawberries to make one cup of crushed berries.
- In a saucepan stir together sugar and cornstarch. Stir in the water, then stir in the crushed berries.
- On medium heat, stir until mixture thickens. Let cool.
- Place washed berries, whole or sliced in half, in a large bowl.
- Pour cooled berry mixture over berries and lightly stir to coat.
- Dish berries into the pre-baked pie shell. For a beautiful appearance, turn cut berries over so their rounded, red sides face up.
- Chill for several hours. Serve with whipped cream or ice cream.

STRAWBERRY PIE
Steps:
- In a large bowl, add the strawberries and 1/4 cup of the sugar and mix together. Let macerate for at least 30 minutes.
- Sprinkle 1/4 cup of the sugar on the bottom of the pie crust and pour the macerated strawberries on top. Pat down, so the berries come just to the edges. Sprinkle the remaining 1/4 cup sugar on top of the strawberries. Cover with whipped cream and use a spatula to smooth.

Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough forms a ball. Press dough between hands to form a 5 to 6-inch pancake. Lightly flour rolling surface and rolling pin. Roll dough into circle. Trim 1-inch larger than upside-down pie plate. Loosen dough carefully. Fold dough into quarters. Unfold and press into pie plate. Fold edge under. Flute.
- For the filling: Blend sugar and cornstarch in a saucepan; add lemon-lime soda. Cook stirring until smooth and thick. Add strawberries and cook for a few minutes. If desired, add red food coloring. Pour into cooled pie shell. Chill. Top with whipped cream if desired.

Steps:
- Combine sugar and cornstarch; set aside.
- Crush (don't puree) one pint of berries in blender or with potato masher, and add enough water to make 1 1/2 cups.
- In saucepan, bring crushed berries to a boil over medium heat, stir in sugar and cornstarch all at once. Stir constantly until thick and clear.
- Remove from heat and add strawberry gelatin. Stir until gelatin is dissolved. Set aside.
- Mix cream cheese and 1 tablespoon of hot cooked berries; spread mixture over baked pastry shell.
- Stand the uncooked whole berries, stem end down, on top of cream cheese.
- Pour hot cooked berries over whole berries.
- Refrigerate until set, about 3 hours.
- Garnish with whippped cream and serve.

- Set baked pie shell aside.
- Mash enough of the berries to make 1 cup full of mashed berries.
- Mix dry sugar and dry cornstarch well.
- In a medium saucepan,mix sugar and cornstarch mixture with water and berries.
- Cook on medium heat (stirring constantly) till mixture boils and gets thick.
- then boil for 1 minute stirring constantly.
- While this mixture is cooling, beat cream cheese till smooth and softened.
- Spread the cream cheese in the bottom of the baked pie shell.
- Put the remaining WHOLE berries in the pie shell over cream cheese.
- Pour the cooked berries over top and refrigerate till cold and set.
