These soft and chewy strawberry oatmeal cookies are made with 4 ingredients and take 12 minutes! Healthy enough for breakfast, they are made with no eggs and no refined sugar, but you'd never tell. Vegan, Gluten Free, Dairy Free.

2 cups rolled oats (gluten free, if needed)
2 large bananas (mashed)
1/4 cup strawberries (chopped)
1/2 cup almond butter (can sub for any nut or seed butter of choice)
1/4 cup chocolate chips of choice (optional)

Steps:

  • Preheat the oven to 175C/350F. Line a large tray with parchment paper or prepare a Silpat cookie sheet. Set aside.
  • In a large mixing bowl, combine all your ingredients, except for your chocolate chips, and mix well. Fold through your chocolate chips.
  • Form 16 small balls of dough and place each one on the lined tray/cookie sheet. Press each ball into a cookie shape. Bake for 12-15 minutes, or until golden on the edges.
  • Remove from the oven and allow cooling on the tray/sheet before transferring to a wire rack to cool completely.

1 cup rolled oats
3/4 cup whole wheat flour
1 teaspoon baking powder
Pinch of Himalayan salt
1 teasppon Ceylon cinnamon
1/2 teaspoon ginger (freshly grated )
1 egg
1/2 cup pure maple syrup
2 tablespoons coconut oil (melted and cooled to room temperature)
1 teaspoon vanilla extract
1 cup fresh strawberries (diced)
1/2 cup walnuts (coarsely choped )

Steps:

  • Position an oven rack in the middle of the oven and heat to 356F (180C).
  • Line the bottom of a baking sheet with parchment paper. Set aside.
  • Prepare and measure all ingredients using measuring cups.
  • In a small mixing bowl add oats, whole grain flour, cinnamon, baking powder, and salt. Use a silicone spatula to mix the dry ingredients.
  • In a large mixing bowl combine coconut oil with maple syrup, grated ginger and vanilla extract. Use the whisk and mix it until you get the sticky texture.
  • Add in the egg, and stir vigorously using the whisk.
  • When the batter looks thick and well blended, add in the dry ingredients. Using the spatula mix everything until fully combined.
  • Gently fold in strawberries and chopped walnuts using spatula.
  • Let the mixture sit for at least 10 minutes.
  • Using ice cream scoop or tablespoon, scoop cookie mixture and place it on a baking sheet. Arrange the cookies 2-inches apart. Slightly flatten the dough and shape cookies with the spoon.
  • Bake cookies for 12 to 15 minutes until golden on the edges. Check the cookies regularly and don't over-bake them.
  • Leave the cookies to cool for 10 minutes on the baking sheet and then transfer them to a cookie rack to cool completely.

2 sticks (1 cup) salted butter, cut into pieces, plus more for greasing pan
1 1/2 cups all-purpose flour
1 1/2 cup oats
1 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
One 10 to 12-ounce jar strawberry preserves

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
  • Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

Steps:

  • Oven at 375 degrees F.
  • In bowl, mix oat bran, flour, cinnamon, nutmeg, baking soda, butter buds, sugars, ad salt.
  • Add oats.
  • In another bowl, combine oil, milk, yoghurt, egg whites and vanilla.
  • Combine dry and wet ingredients very well.
  • Drop tablespoon pieces of dough into cookie tray with cooking spray.
  • Bake for 15 minutes, or until cookies are golden.

1 cup unsalted butter, melted
1 1/4 cups brown sugar
3/4 cup white sugar
1 tablespoon pure apple syrup or 1 tablespoon honey
2 teaspoons pure vanilla extract
2 eggs
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1 teaspoon baking powder
3/8 teaspoon salt
1/8 teaspoon cinnamon
3 cups rolled oats
1 cup chocolate chips
1/2 cup walnut pieces
1 1/2 cups strawberries, hulled (cut in halves or quarters, depending onsize)
1/2 cup raisins
halved strawberry, as garnish

Steps:

  • Preheat oven to 350°F Line some baking sheets with parchment paper.
  • Cream together the butter with the sugar and apple syrup. Then add in vanilla and eggs and blend well, about 3-4 minutes. Fold in dry ingredients, including oatmeal. When just about blended, fold or mix in chocolate, nuts, strawberries and raisins. Try not to break up berries too much but but you cannot avoid this completely.
  • Drop by heaping tablespoons on prepared baking sheets, leaving about 2 inches or more, between each cookie. Press gently and garnish center of cookie with a strawberry half.
  • Bake about 12-16 minutes until cookies are set, and middles are slightly dry looking and edges have begun to brown.
  • Let the cookies cool ten minutes before removing to a wire rack to cool completely.
  • Makes about 12 large cookies.

1 1/4 cups brown sugar
3/4 cup white sugar
1 teaspoon vanilla
2 large eggs

1/2 teaspoon cinnamon (or to taste)
3 cups old-fashioned oatmeal
1 cup chocolate chips

Steps:

  • Set oven 350°.
  • Set oven rack to middle position.
  • Line a large cookie sheet with parchment paper.
  • With an electric mixer, cream melted butter with sugars until light and fluffy (about 5 minutes).
  • Add in the eggs and vanilla; mix well.
  • Mix together flour, baking soda, baking powder, cinnamon, oatmeal and salt; mix well to combine.

My family really enjoyed this oatmeal. When I made this recipe I made a few adjustments. I halved the recipe. I did used frozen strawberries which I cut in chunks. I used Splenda brown sugar substitute. When cooking my milk/water mix it seemed to curdle. I also took some advise of a reviewer and added the strawberries to the milk and water. This seemed to make the mix curdle alot worse. I added my sour cream directly to hot mixture. I got this recipe from Pinching Your Pennies.

2 cups quick-cooking oats
1 pint strawberry (thawed if frozen)
1 3/4 cups milk
1 3/4 cups water
4 tablespoons sour cream
2 -3 tablespoons brown sugar
1/4 teaspoon salt

Steps:

  • Prepare strawberries. The should be hulled and thinly sliced.
  • In a medium bowl, combine strawberries and brown sugar and gently stir until all strawberries have sugar on them. Set aside.
  • In a medium saucepan over medium heat, bring water and milk and salt to a boil. Immediately add the oats and reduce heat to medium. Stirring occasionally, allow to cool 5 to 6 minutes to desired texture.
  • Fill four serving bowls wil oatmeal, leaving room for the topping. Spoon 1 Tablespoon of sour cream on each bowl followed by 1/4 of the strawberries.

1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
