1 and 3/4 cups (250g) all-purpose flour
2/3 cup (65g) unsweetened cocoa powder
1 and 1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cup (1 stick/115g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar (or brown sugar)
1 large egg
1 teaspoon pure vanilla extract
1 cup (240 ml) buttermilk, room temperature
1/2 cup (1 stick/115g) unsalted butter, softened to room temperature
2 cups Marshmallow Fluff
1 cup (115 g/4 oz.) powdered sugar
1 teaspoon vanilla extract
pinch of salt

Steps:

  • Make the cakes: Preheat oven to 350°F/180°C. Sift together flour, cocoa powder, baking soda, and salt. Set aside. Line 2 baking pans with parchment paper.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy, about 3 minutes. Add egg, and vanilla and mix until combined, then mix in buttermilk. Slowly add dry ingredients, and mix just until combined.
  • Scoop mounds of batter, 1 and 1/2 tablespoons in size (I use this ice cream scoop), onto prepared baking sheets, spacing them 2-3 inches apart. Bake for 10-12 minutes or until the tops spring back when touched. Allow to cool completely on a wire rack.
  • Make the filling: Place all ingredients in a large bowl and beat with a mixer until creamy and fluffy. If the filling is too stiff, you can add a little heavy cream or milk.
  • Assemble the cookies: Spread filling on the flat side of half the cookies. Sandwich with remaining cookies, pressing down slightly so that the filling spreads to the edge of the cookies.
  • Store in the fridge, well covered, for up to a week. Serve at room temperature.

Cookie:
2-1/3 cups all-purpose flour
1 tsp baking soda
3/4 tsp salt
2/3 cup buttermilk
3/4 tsp lemon juice
2 tsp vanilla extract
1-1/2 sticks (6-oz) unsalted butter, softened
1 cup + 2 Tbsp granulated sugar
2 large eggs
Filling:
4 Tbsp unsalted butter, softened
1 cup shortening
2/3 cup Nutella
2 tsp vanilla extract
2 cups confectioners' sugar
18 -20 strawberries, sliced
Confectioners' sugar (for dusting)

Steps:

  • To prepare the cookies, position an oven rack on the lower level and preheat to 350°F. Line 3 cookie sheets with parchment paper. Set aside. Combine the flour, baking soda, and salt in a medium-size bowl. Set aside. Stir together the buttermilk, lemon juice, and vanilla in a separate bowl. Set aside. In the bowl of a stand mixer, fitted with a paddle attachment, cream together the butter and sugar on medium speed. Add the eggs and mix until fully incorporated. Reduce the mixer speed to low and add the flour and buttermilk mixtures, alternating in batches, beginning and ending with the flour. Spoon 2 tablespoonfuls of batter onto the prepared cookie sheets, leaving 2" between each. Bake 1 cookie sheet at a time, for 14-15 minutes, or until the whoopie pie-cookies slightly spring back when touched. (They should NOT be brown.) Let the cookies cool completely and then gently transfer them to cooling racks. To prepare the filling, cream the butter, shortening, and Nutella in the bowl of a stand mixer, fitted with a paddle attachment. Add the vanilla and confectioners' sugar and beat until light, fluffy, and evenly incorporated, scraping down the sides of the bowl. To assemble the whoopie pies, pipe a thin layer of the Nutella filling on the flat side of all the whoopie pie-cookies. Arrange the strawberries on 11 of the cookies, cover with the remaining cookies, and press together gently. Lightly dust the tops with confectioners' sugar.

My pies were about 3 inches across. I chose to roll my pies in pecan "meal". My hubby is a finicky eater and he ate two without stopping! Makes it sound like these were a winner at my house!

1 box strawberry cake mix
3 large eggs
1/2 c oil
1/2 c water
FILLING
1 stick butter
8 oz cream cheese
16 oz powdered sugar
1 tsp vanilla
1/2 c pecans, chopped

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In medium bowl beat strawberry cake mix, eggs, water, and oil.
  • 3. Using an ice-cream scoop drop batter by apx. 2 tablespoon mounds, 2 inches apart, onto parchment lined cookie sheet.
  • 4. Bake 8-10 mins or until toothpick inserted in center comes out clean. Allow to cool.
  • 5. In a mixing bowl combine filling ingredients and blend until light and fluffy.
  • 6. To assemble Whoopie Pies turn one Pie piece rounded side down and apply a good amount of filling. Place apx. same size Pie piece, rounded side up, on top and press gently until the cream reaches the edges.
  • 7. Roll the edges of the Pies in a plate or bowl of chopped pecans or pecan pieces or pecan meal. Yummm! Wrap individual pies in plastic wrap and store in frige and they will last a good while or at least until they are scarfed down...lol

1/2 cup graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon fine salt
1 cup lightly packed light brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
2 teaspoons pure vanilla extract
1 large egg
1 cup milk
Confectioners' sugar, for dusting
One 8-ounce package cream cheese, at room temperature
1 cup marshmallow creme
1/2 cup finely diced strawberries
1/4 cup strawberry jam

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk together the flour, graham cracker crumbs, baking powder, baking soda and salt in a medium bowl. Set aside.
  • Beat together the brown sugar, butter and vanilla in a large bowl with a stand mixer on medium-high speed until light and fluffy, about 2 minutes. Add the egg and beat until combined. Reduce the speed to low and add the dry ingredients in 3 batches, alternating with the milk, beginning and ending with the dry ingredients; beat after each addition until just combined.
  • Scoop tablespoon-mounds of batter and place on the prepared baking sheets about 1 inch apart. You should have 20 cookies per baking sheet.
  • Bake, rotating the baking sheets halfway through, until the tops of the cookies spring back when lightly touched, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely, about 30 minutes. Using a small fine-mesh sieve, dust the tops of the cookies with confectioners' sugar.
  • For the filling: While the cookies cool, whisk the cream cheese and marshmallow creme together in a medium bowl with a handheld mixer until smooth and well combined. Transfer to a piping bag fitted with a medium round tip.
  • Gently fold the strawberries and jam together with a rubber spatula in a medium bowl until combined; set aside.
  • Flip half of the cookies so they are flat-side up; pipe a ring of cream cheese filling around the edge of the cookies to create a "dam," then spoon about 1 teaspoon of the strawberry filling in the center. Sandwich them with the remaining cookies flat-side down. Using a small fine-mesh sieve, dust the tops of the cookies with confectioners' sugar.

3/4 cup chocolate hazelnut spread (Nutella)
1 (8 ounce) package cream cheese or 1 (8 ounce) package neufchatel cheese, softened
1/4 cup powdered sugar
1 1/2 lbs fresh strawberries
1/3 cup granulated sugar
1/2 cup water
2 tablespoons cornstarch

Steps:

  • In a medium bowl, beat softened cream cheese, powdered sugar and Nutella with a mixer on medium speed until creamy. Spread mixture evenly in pie crust. Refrigerate.
  • Slice and mash about 3/4 cup of the strawberries. In a medium saucepan, mix the mashed berries, granulated sugar, cornstarch and water. Heat over high heat until boiling, stirring constantly. Continue to boil and stir another minute. Remove from heat and cool in the refrigerator for about 10 minutes. (For faster prep, skip this step and use pre-made strawberry glaze).
  • Meanwhile, slice remaining strawberries. When glaze is cool, pour over sliced berries and toss to combine. Spoon strawberries into the pie pan. Refrigerate until ready to serve, up to 8 hours. Slice and serve with whipped cream (optional).

1 egg

1 bag white chocolate chip

Steps:

  • Preheat the oven to 350°F and cover a pan in parchment paper.

  • Mix flour, baking soda, baking powder, and salt in a separate large bowl.In a smaller bowl, combine vegetable oil and water.

  • Make the filling: Beat cream cheese, ¾ cup softened butter, powdered sugar, vanilla, and marshmallow fluff in a medium sized bowl. Stir in chopped strawberries.
  • After the pies have cooled completely, spread the filling on one cookie and sandwich it with another. Serve.
