STRAWBERRY CHEESECAKE WITH PRETZEL CRUST

Strawberry Cheesecake with Pretzel Crust image

Provided by Michael Symon : Food Network

Categories     dessert

Time 8h20m

Yield 24 squares

Number Of Ingredients 11

1 1/2 cups ground pretzels
1/2 cup ground graham crackers
1/4 cup granulated sugar
Kosher salt
1 stick (8 tablespoons) unsalted butter, melted
Three 8-ounce blocks cream cheese, at room temperature
1 cup sour cream
1 cup granulated sugar
5 large eggs, at room temperature
1 teaspoon pure vanilla extract
One 10-ounce jar strawberry preserves

Steps:

  • Preheat the oven to 300 degrees F.
  • For the crust: Combine the pretzels, graham crackers, sugar, a pinch of salt and the melted butter in a large bowl. Press the crust into the bottom of a 13-by-9-inch clear glass baking dish. Set aside while you make the filling.
  • For the filling: In the bowl of a mixer fitted with a paddle attachment, cream the softened cream cheese on medium speed, scraping down the sides of the bowl and the beater often, until smooth and creamy, 2 to 3 minutes. Add the sour cream and sugar and continue to mix until combined, 1 to 2 minutes. With the mixer speed on low, add the eggs one at a time, thoroughly mixing after each addition. Mix in the vanilla. Pour the filling over the crust and bake until the center is no longer jiggly, about 1 hour. Let the cheesecake sit at room temperature for at least 1 hour.
  • Meanwhile, melt the strawberry preserves in a small saucepot over low heat. If you prefer no seeds, use a fine mesh sieve to strain it into another bowl. Pour the melted preserves over top of the cheesecake and smooth it out into an even layer. Let the cheesecake cool at room temperature for another 30 minutes to 1 hour, then slice into 24 squares while still warm. Refrigerate until chilled completely, at least 4 hours or up to overnight.

STRAWBERRY JELLO CHEESECAKE WITH PRETZEL CRUST

Strawberry Jello Cheesecake with Pretzel Crust image

We had this growing up, so nostalgia wells up again! Make sure to use the thinner pretzels, because the big fat ones don't crush down as much as you're looking for. TIME DOESN'T INCLUDE REFRIGERATION TIME!

Provided by Lori Loucas

Categories     Fruit Desserts

Time 35m

Number Of Ingredients 9

2 c crushed pretzels
3 Tbsp sugar
1/2 c unsalted butter, melted
2 pkg (8 oz ea) cream cheese, softened
1 c sugar
8 oz container of cool whip
6 oz package strawberry jello
1 1/2 c boiling water
16 oz package frozen sliced strawberries

Steps:

  • 1. Preheat oven to 350 degrees F. Mix together the pretzels, 4 tablespoons sugar and melted butter. Press into the bottom of a 10 inch spriingform pan. Bake for 10 minutes. Set aside to cool completely.
  • 2. Beat together the cream cheese and sugar until no lumps are left. Fold in the Cool Whip. Spread over the COMPLETELY COOLED crust. Make sure you spread completely to the sides of the pan, to keep the jello layer from seeping into the crust. Refrigerate for at least 30 minutes to an hour.
  • 3. Meanwhile, make the strawberry layer. Stir together the gelatin mix and boiling water in a medium sized bowl. Add the frozen frozen strawberries, and stir until they thaw and the mixture is partially set. Put the bowl in the fridge for another 15-20 minutes until thickened but not completely set.
  • 4. NOTE: If your frozen strawberries are whole, this recipe works better if you slice them before adding to the jello. They should be easy to slice, even when frozen.
  • 5. Spoon the Jello layer over the cream cheese layer. Refrigerate until completely chilled and the jello is fully set. This will take at least 1 hour.
  • 6. Right before serving, remove the sides from the pan. If desired, you can decorate the top with whipped cream and a sprig of mint.

STRAWBERRY PRETZEL SALAD

Strawberry Pretzel Salad image

Classic Strawberry Pretzel Salad is perfect for potlucks, BBQs and other gatherings! The combination of the salty pretzel crust, sweet cheesecake filling and fresh strawberries with jello is perfection. It's a cold and creamy treat that always gets rave reviews!

Provided by Dorothy Kern

Categories     Dessert

Time 6h30m

Number Of Ingredients 9

1 6-ounce box strawberry Jell-o
2 cups boiling water
2 cups crushed pretzels (about 5 cups of twists, see note)
3 tablespoons granulated sugar
3/4 cup unsalted butter (melted)
8 ounces cream cheese (softened)
1 cup granulated sugar
8 ounces Cool Whip
2 pounds fresh strawberries (hulled and sliced)

Steps:

  • Place Jello powder in a medium sized bowl. Carefully pour boiling water over the powder, stir until it's all dissolved. Let sit at room temperature until it is completely cool.
  • While the Jello is cooling, make the crust. Stir together the crushed pretzels with sugar and melted butter. Press into the bottom of a 9x13-inch pan. Chill for at least 30 minutes.
  • Make the cheesecake: Beat the cream cheese and sugar with a hand mixer until smooth, then mix in the whipped topping.
  • Spread cheesecake mixture on top of the crust. Make sure that the cheesecake completely touches all edges of the pan - leave no holes or areas where it's open, otherwise the jello will soak through when you pour it on. Chill 1 hour.
  • Assemble the dessert: place the strawberries in a single layer on top of the cheesecake mixture. Carefully pour the cooled jello mixture evenly over the berries and cheesecake. Chill until set, at least 3 hours.
  • Dessert can be made up to 24 hours ahead. Enjoy within 3 days.

CRANBERRY PRETZEL SALAD

Cranberry Pretzel Salad image

Cranberry pretzel salad puts a seasonal and slightly grown-up spin on the nostalgic strawberry pretzel salad dessert known across the US.

Provided by Casey Barber | Good Food Stories LLC

Categories     Desserts

Time 6h55m

Number Of Ingredients 12

5 ounces (140 grams) mini salted pretzels or pretzel sticks
8 tablespoons (1 stick) unsalted butter, melted
2 tablespoons light brown sugar
2 tablespoons hot water
1 teaspoon unflavored gelatin
1 cup (1/2 pint) heavy cream or whipping cream
3 tablespoons confectioner's sugar, divided
1 (8-ounce) package cream cheese, softened
1 (6-ounce) bag fresh cranberries
1/4 cup (50 grams) granulated sugar
1/2 cup water
1 (3-ounce) package cranberry or black cherry Jello

Steps:

  • Line an 8- or 9-inch square baking dish with parchment paper, making sure there is enough overhang to cover the sides by an inch or two.
  • Preheat the oven to 350 degrees F.
  • Crush the pretzels in a blender or food processor until they are mostly crumbs-I like to have a few larger pretzel pieces in there so people can really get a bit of pretzel texture in every bite.
  • Pour the crumbs into a large bowl. Add the butter and sugar, and stir until combined.
  • Press the crust mixture into the bottom of the prepared baking dish.
  • Bake for about 12 minutes, until golden brown and matte. Let the crust cool while you make the cream cheese layer.
  • Pour the hot water into a small heatproof bowl. Sprinkle the gelatin over the water and let dissolve.
  • In a stand mixer fitted with the whisk attachment, whip the cream on medium-high speed for 1-2 minutes until soft peaks form.
  • Add 1 tablespoon of the confectioner's sugar and whip until firm peaks form, about 1-2 minutes more.
  • Transfer the whipped cream to a separate bowl.
  • Gently heat the dissolved gelatin, either in the microwave in 10-second bursts or over a bowl of simmering water or diffuser plate on the stove. Stir frequently until the liquid is clear.
  • Let the gelatin cool slightly while you continue working.
  • Add the softened cream cheese to the stand mixer bowl and switch to the paddle attachment.
  • Beat on medium speed until fluffy, then scrape down the sides of the bowl and beat in the remaining 2 tablespoons confectioner's sugar. Scrape down the sides of the bowl again.
  • Add half the whipped cream to the cream cheese, beating on medium speed just until incorporated.
  • Beat in the remaining whipped cream and drizzle the dissolved gelatin into the mixture while the mixer is running, continuing to beat until all ingredients are evenly incorporated.
  • Spread the whipped cream cheese layer evenly over the pretzel crust, making sure all the edges are covered.
  • Refrigerate for at least 3 hours until fully chilled.
  • Heat the cranberries, sugar, and water in a medium saucepan over medium-low heat, stirring frequently until the sugar dissolves and the liquid comes to a simmer.
  • Continue to cook, stirring occasionally, until the cranberries soften and start to burst.
  • Remove from the heat and stir in the Jello packet until dissolved.
  • Carefully pour the cranberry Jello over the cream cheese layer, spreading it evenly in the pan.
  • Refrigerate for at least 3 hours until set-or let it rest overnight.
  • Carefully lift the dessert out of the pan and onto a cutting board using the parchment paper as a set of handles.
  • With a long knife, slice into 9 squares. Wipe the knife between slices to ensure clean cuts.
  • Refrigerate any leftovers for up to 3 days. The cranberry will eventually bleed down into the cream cheese and the pretzels will become soggy, so don't wait too long to enjoy!

  • Mix Jello: Start by mixing the jello so it has time to cool. Pour the powdered jello into a medium mixing bowl. Pour in the boiling water and whisk together until well combined. Make sure all of the powdered jello is mixed and dissolved. Set aside while you work on the other layers.
  • Make Crust: Place the pretzels into a large ziplock bag and use a rolling pin to roughly crush them. Alternatively, you could put them in a bowl and break them up by hand. Putting them into a food processor doesn't work well, I have found. You don't want them powdered, just nicely broken up like in the video and pictures in the post. Pour the crushed pretzels into a mixing bowl and add the sugar and the melted butter for the crust. Stir until well combined.
  • Bake Crust: Pour the prepared crust mixture into an ungreased 9x13" (23 x 33 cm) pan. This can be glass, ceramic, or metal. However, I prefer to use glass so you can see all of the layers. Spread the crust mixture out evenly in the pan (it will just barely cover the bottom) and use the bottom of a measuring up to firmly press it down until it is in a thin even layer. Bake at 350 F (180 C) for about 12 minutes until set and toasted. Allow to cool completely before adding the filling.

  • Use a food processor or blender to grind the pretzels and graham crackers into a fine crumb. (Or crush both in a zipped top bag with a rolling pin.) Mix the crumbs, granulated sugar, and melted butter together in a medium bowl until combined. The mixture will be thick, coarse, and sandy. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Make sure it is very tight and compact. Use the bottom of a flat measuring cup to press it down tightly. Bake the crust for 15-16 minutes. Remove from the oven and allow to cool for at least 30 minutes (and up to 2 days) before adding the filling. Meanwhile, prep the reduced strawberry puree in the next step.
  • Puree the strawberries completely. You will have 1.5 – 2 cups puree– anywhere around this amount is fine. Strain through a fine mesh sieve, using a spoon to press it down and work it through the strainer. Discard seeds. Stirring occasionally, simmer the strained puree over low-medium heat until you’re left with 1/2 cup or a little over 1/2 cup. This takes at least 25-35 minutes, but could take longer depending on your pan or how juicy your strawberries were. *Do not add sugar or anything to the puree or reduced puree– it’s just pure strawberries. Allow to cool completely to room temperature before using in the filling. (See make ahead instructions below if doing this in advance.)
  • Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the cold heavy cream into stiff peaks on medium-high speed, about 4 minutes. Set aside. Using a hand mixer or a stand mixer fitted with a whisk or paddle attachment, beat the cream cheese on medium speed until perfectly smooth and creamy. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the cooled reduced strawberry puree, confectioners’ sugar, and vanilla extract and beat on medium-high speed until combined, creamy, and smooth. Scrape down the sides and up the bottom of the bowl as needed to help combine. Make sure there are no large lumps of cream cheese. If there are lumps, keep beating until smooth.
