FRESH STRAWBERRY MARTINI
I have combined two of my favorite things to invent this tasty martini. I have tinkered with it a bit now and i'm quite satisfied with my creation. I hope you enjoy this too! The trick to selecting strawberries is to pick the darkest red strawberries you can. The darker red, the sweeter they seem to be. Only the deepest red strawberries will truly do this justice!

Steps:
- Prep martini glasses by either putting them in the freezer to frost or rimming them with sugar.
- To rim a glass with sugar slice a very ripe, or over ripe strawberry 1/2 way through and gently wipe it around the edges of the glass so the juice just barely coats it.
- Now turn it upside down into a shallow dish filled with sugar.
- In a shaker put clean, hulled strawberries in bottom and mash with a wooden spoon until they are very well smashed.
- Add fresh Ice to fill the shaker and add the vodka, strawberry syrup and about 1 tsp sugar or more depending on your sweet tooth.
- Shake for about 20 seconds until well mixed.
- Now pour into the prepped glasses, garnish and serve!
STRAWBERRY CREAM MARTINI

- Combine all ingredients in a pitcher filled with ice. Stir and strain into chilled martini glasses.
- Garnish with a strawberry.
STRAWBERRY BASIL MARTINI
Steps:
- In a 16-ounce cocktail shaker, add the basil leaves and the strawberry puree. Muddle until the basil leaves are broken into pieces. Add the ice cubes, then add the soju, lime juice, sweet and sour mix and strawberry syrup. Shake vigorously. Strain the drink into a 7-ounce chilled martini glass and serve cold.
STRAWBERRY 'MARTINI' WITH LEMONGRASS FOAM
Steps:
- Place the strawberries in a bowl and fold in with vodka and mint. Store in the refrigerator until cold about 1 hour.
- In a small saucepan over low heat, mix water and sugar until dissolved. Add lemongrass, ginger and lemon zest and bring to a simmer. Cover with a plate or lid and reduce by 1/2, or until a syrupy consistency is achieved, about 45 minutes.
- Mix in lemon juice and keep syrup warm on low heat. Bloom the gelatin in 1 cup water and add to warm syrup to dissolve. Strain syrup and keep at room temperature. It will thicken as it cools.
- Place syrup in a foaming canister with 2 cartridges and set aside. Strain the strawberries before serving and place the strained vodka in the freezer (optional).
- In 4 chilled martini glasses, place a small mound of the strawberries. Foam the lemongrass mixture on top and garnish with mint sprig.

GINGER MARTINI

- Fill a cocktail shaker or small pitcher with ice. Add the vodka, ginger syrup, and lime juice. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Strain into a chilled cocktail glass. Add twist and serve.
- Remove the outer peel of the lemon with a vegetable peeler, taking care not to include too much of the bitter white pith. Finely chop the lemon peel and ginger in a food processor.
- Transfer the lemon-ginger mixture to a medium saucepan, add the sugar and water and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to 1 week.
- Yield: 2 cups
