Dim the lights when you flambé this strawberry-brown-sugar-rum sauce over crepes tableside. It makes for one spectacular and delicious dessert.

Simple Crepes
4 tablespoons butter
1/4 cup packed light-brown sugar
1/4 teaspoon ground cinnamon
Pinch of kosher salt
1 1/2 cups halved strawberries
2 tablespoons silver rum
3 tablespoons chilled heavy cream, whisked until slightly thickened, for serving

Steps:

  • Fold crepes in quarters. Heat in 1 tablespoon unsalted butter in a nonstick skillet over medium-high, flipping once, until warm and crisp, 5 minutes; divide between 2 plates.
  • Return skillet to heat; melt 3 tablespoons butter. Stir in packed light-brown sugar, ground cinnamon, and a pinch of kosher salt; cook, swirling pan, until darkened slightly, 1 to 2 minutes. Add halved strawberries; cook until tender, 2 minutes. Remove from heat; add silver rum.
  • To flambe, return skillet to medium-high heat. If using a gas burner, carefully tilt pan away from you to ignite; if using an electric burner, use a lit long match held just above the sauce. When flame subsides (5 to 10 seconds), spoon strawberries over crepes. Return skillet to medium-high heat and reduce sauce until thickened, 1 to 2 minutes; pour over crepes. Whisk heavy cream until thickened slightly. Drizzle over crepes; serve.

1 1/2 cups thinly sliced strawberries
2 tbsp sugar
5 tbsp readymade orange juice
1/2 tsp lemon juice
2 tbsp brandy
2 scoops vanilla ice cream

Steps:

  • MethodCombine the sugar and 2 tbsp of water in a broad non-stick pan and cook on a medium flame for 2 minutes or till the mixture turns light brown in colour, do not stir with a spoon, just gently rotate the pan occasionally.Add the orange juice, mix well and cook on a medium flame for 1 to 2 minutes or till the sugar melts.Add the strawberries and lemon juice, mix well and cook on a medium flame for another 1 to 2 minutes, while stirring occasionally.Remove from the flame and keep aside.Just before serving, pour the brandy into a large spoon and warm it on a direct flame. Set alight and pour it over the strawberries.Place 2 scoops of vanilla ice-cream in a bowl, pour ½ the strawberry flambé over it.Repeat step 2 to make 1 more serving.Serve immediately.

2 tablespoons unsalted butter

1 vanilla bean, split lengthwise
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving

Steps:

  • Remove 4 strips orange zest with a vegetable peeler. Squeeze the orange and strain the juice.
  • Melt the butter with the sugar, orange zest and vanilla bean in a large skillet over medium heat. Cook, stirring, until the sugar caramelizes, about 5 minutes. Remove from the heat and stir in the liqueur, orange juice and a pinch of salt.
  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Warm for a few seconds without stirring, then carefully tilt the pan so the rum ignites (if using an electric stove, hold a lit match near the sauce to ignite it). Spoon the flaming sauce over the bananas. Garnish with whipped cream and the glazed orange zest.

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 tablespoons brandy
2 glasses filled half way with vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream
2 whole strawberries (remove the stem and make a small hole for the cubed sugar)
2 sugar cubes

Steps:

  • In a large saucepan over medium heat, melt the sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur.
  • Continue to cook for about 2 minutes. Remove from the heat once again, then add the brandy. Once you put the pan back in the heat, it should flambe. Remove the pan from the heat and start spooning the flambeed banana into the ice cream glass. Add the chocolate syrup and the whipped cream. On top of the whipped cream, right in the center, place the cleaned strawberry, then place the sugar cube in the center of the strawberry. Pour a little bit of the brandy on top of the sugar and carefully ignite it with a match.

This is another recipe I found while looking for good Valentines Day cooking ideas...since my honey doesnt like chocolate, I usually make him something with strawberries(his fav) for special occasions.

2 cups strawberries (I keep frozen ones on hand for occasions such as this)
1 teaspoon butter
1 cup sugar
1 lemon, zest of (the outermost layer of the lemon rind, which is used for flavoring)
1 orange, zest of
4 scoops vanilla ice cream
1 orange, juice of
2 tablespoons brandy

Steps:

  • Slice each strawberry in half. (if using frozen be sure to let thaw completely).
  • Heat a large saucepan, and sauté the strawberries in butter lightly in one side of the pan.
  • In the other side, melt sugar.
  • When sugar almost melts, add the orange juice and zests.
  • Carefully add brandy and watch out for the flame!
  • Serve hot over ice cream.

2 teaspoons cornstarch
2 tablespoons lemon juice
1/4 cup slivered almonds, toasted
2 tablespoons orange liqueur

Steps:

  • Drain berries, reserving syrup.
  • Stir reserved syrup in cornstarch in a wok or other wide deep pan.
  • Stir in lemon juice.
  • Bring to boil and cook for 2 minutes.
  • Stir in berries and almonds.
  • Heat 1 minute longer.
  • Heat liqueur in a small saucepan or large ladle until just warm.

2 tablespoons brown sugar
1 medium ripe mango, peeled and sliced
2 medium ripe bananas, peeled and sliced

¼ teaspoon ground cinnamon
¼ cup dark rum
1 ½ scoops vanilla ice cream

Steps:

  • Set a large pan on the stove over medium-high heat. Pour apple juice into the pan and add brown sugar; let it simmer until golden and bubbling, about 4 minutes.
  • Put mango, banana, and strawberry slices in the pan with cinnamon. Stir to cover fruit with the sauce and cook for 3 minutes.
  • Remove pan from the heat and add rum. Place back on the heat and use a long lighter to set it on fire. Once the flame has gone out, cook for 1 more minute.
  • Divide fruit evenly between 3 bowls and top each with 1/2 scoop ice cream.

4 ounces unsalted butter
3/4 cup brown sugar
3/4 cup fresh- squeezed orange juice
1/2 cup Galliano
1/4 cup grand marnier orange liqueur
3 cups vanilla ice cream

Steps:

  • Slowly melt unsalted butter and brown sugar, forming a glaze.
  • Slowly add orange juice, forming a smooth gel.
  • Place strawberries into mixture and warm thoroughly, making sure all strawberries are covered with glaze.
  • Add Galliano to the mixture and bring to simmer.
  • Pour Grand Marnier into ladle and heat over flame.
  • Ignite Grand Marnier and slowly pour flaming liquid over strawberries, producing a nice even flame. Keep pan moving.
  • Spoon contents over ice cream. Keep pan moving and mixture flaming through entire process.

  • 1. Slice the strawberries. In a large bowl, toss three-quarters of them with the sugar and orange liqueur. Refrigerate at least 1 hour to macerate.
  • 2. Put the ice cream in the refrigerator to soften.
  • 3. Put the cream and half the macerated strawberries in a cold mixing bowl. With an electric mixer, whip to soft peaks, about 12 minutes. Fold in the ice cream.
  • 4. Distribute the cream among 6 chilled bowls. Mix the plain sliced berries with the remaining macerated berries and place on top of the cream.

  • Tip the strawberries into a large bowl. Splash over the Cointreau, add the orange zest and sift in the icing sugar, then give everything a really good mix. Cover, then leave for 1 hr or more for the juices to become syrupy and the strawberries to soak up some of the alcohol.

1/4 cup brown sugar
1/4 cup Grand Marnier

Steps:

  • Preheat oven to 350 degrees.
  • Peel bananas and arrange them, whole, side by side in a buttered baking dish.
  • Spread the butter on top of the bananas.
  • Rinse and hull the strawberries.
  • Arrange them in rows in the spaces between the bananas.

4 tablespoons granulated sugar
6 tablespoons water
4 tablespoons Cointreau liqueur or 4 tablespoons orange-flavored liqueur

1/2 cup whipping cream
powdered sugar, to sweeten the whipped cream to your taste
4 whole strawberries, for garnish

Steps:

  • Peel wide strips of zest without the pith from orange and cut into very thin strips. (Put aside rest of orange for another use.).
  • In small saucepan, combine granulated sugar and water; bring to the boil over high heat.
  • Add orange zest; reduce heat and simmer for 10 minutes.
  • Remove from heat and let syrup cool; stir in liqueur.
  • Put berries in bowl.
  • Add syrup and orange zest; set aside for 2 hours.
  • Whip cream and sweeten to taste with powdered sugar.
  • Serve strawberries topped with whipped cream and garnished each serving with a whole strawberry.
