- Combine lime zest and 2 tablespoons sugar in a food processor. Pulse until combined. Set aside.
- Place lime juice, strawberries, rum, 2 to 4 tablespoons sugar, depending on the sweetness of your strawberries, and ice cubes in a blender. Blend until smooth.
- Rub the rims of four glasses with a lime wedge, dip rims in lime sugar, and fill glasses with daiquiri.

- For a frozen strawberry daiquiri, add everything but the ice into a blender.
- Blend the ingredients together first to mix them well.
- Add in the ice (crushed ice preferred) and blend until desired consistency.
- If consistency is too thick add more strawberry mix. If too thin, add more ice.
- For a shaken strawberry daiquiri, add ingredients into a cocktail shaker.
- Shake vigorously, strain, and serve.

- Using a vegetable peeler, remove green lime peels in strips, being careful to avoid white pith. Place peels in a large bowl. Juice limes, and set aside juice.
- Add strawberries and juiced limes to bowl with lime peels. Add sugar, and muddle to crush fruit. Let stand at room temperature, stirring occasionally, until sugar is completely dissolved, about 1 hour. Pour through a fine wire-mesh strainer, and discard solids. - Heat oven to 180C/160C fan/gas 4. Butter a 30 x 20cm tin and line with baking parchment. Put the cake ingredients in a bowl except for the white rum. Put the cakes on wire racks set over trays to catch the drips, then coat each one in the icing. The best way to do this is to hold each one over the bowl of icing on a slotted spoon then generously drizzle over the icing with a tablespoon. Remove from the slotted spoon with a cutlery knife and sit on the rack to dry. Decorate with a sprinkling of freeze-dried strawberries and white icing. Serve in cake cases, if you like.
