STRAWBERRY CRUSH
Recipe to make Strawberry crush using fresh strawberries at home. Great to make cocktails and mocktails. Can be stored for up to 1 month.

Steps:
- Thoroughly wash the strawberries and dry them. Cut the tops off and depending on the size of the berries, either halve or quarter them.
- Place the chopped berries in a large bowl. Add the sugar and mix well. Cover and put the bowl in the fridge overnight.
- Next day take the bowl out of the fridge. Using a slotted spoon remove the strawberries out of the sugar syrup and place them in a food processor or blender. Blend into a smooth puree.
- Transfer the strawberry infused sugar syrup to a medium size saucepan. Add water and mix well. Put the pan on medium heat and bring the mixture to a boil. Lower the heat and simmer for 15 minutes. Stir in citric acid, mix well to incorporate. Turn off the heat and let the mixture cool completely, about 45 minutes ~1 hour.
- Once the sugar syrup is completely cool, add the strawberry puree and mix well to combine. Strawberry crush is now ready to use.
- Pour the crush into clean glass or plastic jars and store in the refrigerator.

Steps:
- Wash, clean & cut strawberries into 1/4. Take out half the strawberries & grind them to a puree. Keep it aside.
- Take a deep vessel. Put another half of the strawberry pieces in it. Add sugar & heat until the sugar melts.
- Once the sugar melts add the strawberry puree to it. Stir thoroughly and bring it to a boil.
- Remove the vessel & allow it to cool down. Your strawberry crush is ready. Store it in a glass container.
- Make strawberry milkshake, thick shake, or mix it with plain vanilla ice cream.

- Place strawberries in an airtight container or plastic bag and leave in the freezer for 1 1/2 hours.
- Remove strawberries from freezer. Place half of the frozen strawberries in the jar of a blender. Add ice, whole almonds, sugar, milk, and liqueur and as many more strawberries as will fit. Blend until there is enough room to add more strawberries. Add remaining strawberries and blend until smooth and spoonable. Divide among 4 serving dishes. Garnish with slivered almonds and serve immediately.

- In a 2 cup measuring cup, combine the sugar, lemon juice, and water and stir to dissolve the sugar.
- In the bender, combine the strawberries and sweetened water. Puree on high speed until smooth. Add the sparkling water and pulse to incorporate. Taste and add more sugar if desired, and pulse to incorporate.
- Place cracked ice in 2 tall Collins glasses.
- Pour the strawberry crush over the ice, garnish with mint sprigs, and serve.

STRAWBERRY CRUSH COOLER
Had this at the Fountain Restaurant and loved it so tried to recreate it at home with good results. The Strawberry Crush is fresh strawberry crushed in a bottle with a little sugar added that we get ready-made as strawberries are not in season throughout the year. It has no fizz and is just a ready fruit drink (like a squash) that you just add milk or water too.You can actually get tiny pieces of strawberry at the bottom of the glass. Nummy!!! ;)

Steps:
- Place some salt in a plate.
- Take a tall glass.
- Invert it over the salt and rotate so that the rim gets coated with the salt.
- Now add ice cubes to the glass.
- Add the strawberry crush and the lime juice and a pinch of salt (optional).
- Top with water.
- Add the mint leaves (washed) and the lemon slice to the glass.
- Serve chilled.
