- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
- Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.
STRAWBERRY COBBLER
I love anything with fruit filling and crust. The great thing about a cobbler, it's easier than a pie and you get to eat the yummy crust first. That sweet filling oozing through the cracks and crevices of that biscuit top is what makes this summery dessert sing. And no cobbler is complete without vanilla ice-cream!

- Preheat the oven to 375 degrees F. Butter a large (10-inch) cast-iron skillet.
- Stir together the strawberries, sugar, cornstarch, lemon zest, lemon juice and vanilla in a medium bowl. Set aside to allow the strawberries to macerate while making the biscuit dough.
- Stir together the flour, granulated sugar, brown sugar, baking powder and salt in a medium bowl. Press the cubed butter into the flour with your fingers or a pastry cutter until the mixture resembles wet sand. Gradually mix in the half-and-half with a rubber spatula until a wet shaggy dough forms.
- Pour the macerated strawberries into the prepared skillet, then drop large spoonfuls of the biscuit dough on top, leaving some space between each. Sprinkle the coarse sugar on top of the dough and place the skillet onto a rimmed baking sheet. Bake until the biscuits are golden brown and cooked through, 40 to 45 minutes. Let cool 10 to 15 minutes before serving. Serve with vanilla ice cream.

Steps:
- Pre-heat oven to 375°F.
- Spread the sliced strawberries evenly in an 8 or 9 inch square baking dish.
- In a medium sized bowl, mix together the flour, baking powder and sugar.
- Add the egg, and mix (a fork works best) till crumbly and the dry ingredients are completely incorporated.
- Spread this over the berries.
- Dot with the butter cubes.
- Bake for 45-50 minutes, until the top is golden and the berries are bubbling.
- Cool slightly before serving.

- Stir the flour, sugar and salt together in a large bowl. Add the melted butter and stir until a shortbread-like dough comes together. I even use my hands to bring it together. Press half of the dough into the bottom of the dish.
- In another bowl, whisk together the eggs, half and half, sugar, vanilla, cinnamon, salt and cornstarch. Gently fold in in the strawberries.

- Preheat the oven to 375. Take a medium size bowl and add in the whole wheat flour. To this, add the granulated sugar, baking powder and a pinch of salt. Mix this to combine. Next, add 2 sticks of COLD salted butter diced into chunks.
- Using either a pastry cutter or your hands “cut” the butter into the flour mixture. This basically requires you constantly mixing/kneading it, making sure the butter is incorporated thoroughly and evenly in the flour. See photo in blog post for reference!
- Once it has a “pea” like coarse crumble consistency, gently fold into a lightly beaten egg using your hands! This will make sure that the crust thickens and doesn't fall apart.
- Next, grease a 9x13 baking dish. To the bottom, add about ⅔ of the crust mixture. Firmly press it down to form the crust. Set this aside.
