BROWNIES WITH STRAWBERRIES (AND CHOCOLATE)



Brownies with Strawberries (and Chocolate) image

Moist brownies with strawberries and lots of chocolate made from scratch, a must-try brownie recipe this spring!

250 g/ 8.8 oz strawberries
125 g/ 4.4 oz/ ½ cup unsalted butter
150 g/ 5.3 oz dark chocolate (about 60-70 % cocoa)
150 g/ 5.3 oz milk chocolate
4 eggs (medium in Germany, large US)
200 g/ 7 oz/ 1 cup granulated sugar
100 g/ 3.5 oz/ ¾ cup + 1 tablespoon all-purpose flour
½ teaspoon baking powder
1 pinch of salt
small handful of chocolate chips (optional)

Steps:

  • Wash and dry the strawberries. Remove the stem. Chop the strawberries into small pieces. Set aside.
  • Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Line a baking dish of about 23x23 cm/ 9x9 inches with parchment paper.
  • Chop both kinds of chocolate finely and regularly, cube the butter. Place the chocolate and the butter in a small saucepan. Heat very gently while stirring often. The mixture should never get too hot or come to a boil. If you notice that the mixture might get too hot, remove the saucepan and continue stirring off heat until the chocolate-butter mix is very smooth. Set aside until you prepare the rest of the ingredients, it should cool slightly.
  • Place the eggs, sugar, and the flour mixed with the baking powder and a pinch of salt in a bowl. Mix well.
  • Slowly, start adding the melted chocolate mixture. You can add an extra small handful of chocolate chips to the mixture if you wish.
  • Pour the batter into the prepared dish. Sprinkle the strawberries all over the brownie batter and press them very gently into the batter.
  • Bake for about 25-30 minutes. The baking time depends on your oven and on the strawberries as well. They contain a lot of water and, depending on that, the brownies might need a bit longer to be ready than usual brownies do. When ready they should be set around the edges and still only very lightly jiggly in the middle. If the batter seems too wet still, allow some more minutes and check again.

1/2 cup plus 2 tablespoons unsalted butter, melted and slightly cooled
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
4 fresh strawberries-sliced and cut into heart shapes
1/2 cup semisweet chocolate chips- melted
1/2 cup semisweet chocolate chips or chunks- for garnishing

Steps:

  • Adjust the oven rack to the lower third position and preheat oven to 350°F. Line a 9x9 inch baking pan with parchment paper (making sure to leave some overhang), spray generously with non-stick baking spray and set aside.
  • In a large bowl, add the melted butter, melted chocolate and granulated sugar and whisk together until well combined. Add in the eggs and vanilla and whisk some more until fully combined.
  • Sift in the flour, cocoa powder, and salt. Using a rubber spoon, fold until just combined.
  • Pour the batter into the prepared baking pan and top with strawberry hearts and garnish with chocolate chip without covering the hearts.
  • Bake at 350°F for 25-27 minutes. Mine were perfect at 25 minutes
  • Remove from the oven and allow to cool completely before slicing.

These are great for Valentine's Day! The combination of chocolate and strawberries is fantastic, and they look lovely on the plate. You can prepare the brownies up to 2 days ahead of time and store them in an airtight container. Prep time includes cooling time.

1/2 cup margarine
3 tablespoons cocoa
1 cup sugar
3/4 cup flour
1/4 teaspoon salt
2 large eggs
1/2 teaspoon vanilla
hershey chocolate syrup
1 quart strawberry
powdered sugar

Steps:

  • Combine margarine and cocoa in a small saucepan; cook over low heat, stirring frequently until margarine melts.
  • Remove from heat and cool slightly.
  • Combine sugar, flour and salt in a mixing bowl.
  • Add chocolate mixture and beat at medium speed with electric mixer until blended.
  • Add eggs and vanilla, mixing well.
  • Spread into well-greased 9" square baking pan.
  • Bake at 350 degrees for 15 minutes or until wooden toothpick inserted in center comes out clean.
  • Cool 10 minutes on a wire rack.
  • Invert on rack; cool completely.
  • Cut into 8 (2 1/2-3") hearts, using a heart shaped cutter.
  • Spoon 2 Tbsp chocolate sauce onto each of 4 plates; place a heart brownie on each plate.
  • Arrange strawberries over the hearts; top with remaining heart brownies.
  • Sprinkle with powdered sugar.

1 stick (8 tablespoons) unsalted butter
2 ounces unsweetened chocolate, chopped
2 tablespoons unsweetened cocoa powder
3/4 cup granulated sugar
1/3 cup packed brown sugar
2 large eggs, at room temperature
3/4 cup all-purpose flour
8 ounces cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup seedless strawberry jam

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan with nonstick cooking spray. Line the pan with parchment, leaving 2 inches overhanging on 2 sides. Grease the parchment with cooking spray.
  • In a medium saucepan over low heat, melt the butter with the chocolate, whisking until smooth and fully melted. Whisk in the cocoa powder until combined. Remove from the heat and stir in the granulated and brown sugar until combined. Whisking constantly, add the eggs and mix until fully incorporated. Add the flour and whisk until completely smooth; the mixture will be very thick. Set aside.
  • For the cheesecake layer: Beat the cream cheese in a bowl with an electric mixer or in the bowl of stand mixer until smooth. Add the granulated sugar and vanilla and continue to mix until fully incorporated and fluffy. Add the egg and mix until fully combined.
  • Spoon the brownie mixture into the bottom of the prepared baking pan, using a spatula to spread it into an even layer. Carefully pour the cheesecake mixture over the brownie layer; distribute evenly and smooth.
  • Stir the strawberry jam with a spoon to loosen it. Drop spoonfuls of the jam over the cheesecake mixture. Using a toothpick or skewer, swirl the jam into the cheesecake, being careful not to press too deep and disturb the brownie layer.
  • Fill a separate baking dish with hot water and place on the bottom rack of the oven. This will add moisture to the oven during baking so the cheesecake layer does not crack. Place the cheesecake brownie pan on the center rack above and bake for 40 minutes. Turn the oven off and leave in the oven for an additional 10 minutes.
  • Remove the brownies from the oven and allow to cool completely in the pan. Refrigerate the pan until the brownies are chilled, 2 to 4 hours. Using the parchment edges, transfer the brownies to a board, then remove the parchment from under. Trim off the edges and cut into 8 bars.

Steps:

  • HEAT oven to 350 degrees F. Spray a 13x9-inch baking pan with no-stick cooking spray. Combine brownie mix, oil, water and 2 eggs in large bowl; stir 50 strokes with spoon. Stir in nuts, if desired. Spread into prepared pan. Bake 20 minutes.
  • BEAT cream cheese until fluffy in large bowl. Gradually beat in sweetened condensed milk. Mix in remaining 2 eggs, lemon juice and vanilla until smooth. Pour evenly over warm brownie.
  • STIR jam until smooth. Drop by teaspoonfuls over surface of filling. With a knife, swirl jam gently through filling to create marble effect. Bake additional 35 to 40 minutes or until top is lightly browned. Cool 1 hour. Loosely cover and chill in refrigerator for 2 hours or more. Cut into bars.

I made them one night with my boyfriend's daughter trying to teach her that there are no limits on what can be used when baking and cooking. I decided to use the fresh strawberries I had just purchased. I wouldn't suggest using frozen strawberries but if you do, defrost and drain well.
