BERRY CHEESECAKE CREPES RECIPE BY TASTY
Here's what you need: all-purpose flour, eggs, butter, granulated sugar, milk, raspberry, blueberry, blackberry, lemon juice, sugar, powdered sugar, cream cheese, powdered sugar

Steps:
- In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
- Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
- Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
- In a pan over medium heat, pour ⅓ cup (95 g) of the batter in the center and swirl the batter around the edges of the pan until set.
- To know when the crepe is ready to flip, lift up one of the edges about ⅓ of the way. The bottom side should be golden brown. Flip the crepe.
- Cook until the edges are starting to slightly crisp.
- Remove from heat and cover with a paper towel to make sure the crepes stay moist.
- In a pot over medium heat, combine all the berries with the lemon juice and the sugar, stirring until the mixture comes to a boil.
- Cook for about 2 minutes, then remove from heat and cool completely.
- Mix the cream cheese with the powdered sugar until smooth.
- Spread half of the cream cheese mixture on one side of the crepe.
- Spread half of the berries on top of the cream cheese.
- Fold the crepe over the berries, then fold in half.
- Repeat with the other crepe.
- Serve with powdered sugar.

- 1. Crepes: 1. In a blender, mix all ingredients and blend until smooth. 2. Heat a small (10 inch) round non-stick skillet to medium/high. 3. Spray pan lightly with PAM before each crepe. 4. Pour about 2-3 TBSP of batter into the hot pan and immediately begin gently swirling the batter so as to coat the entire bottom of the pan. 5. Cook for a minute or two until the crepe begins to lift off the side of the pan. 6. Using a soft spatula, gently remove the crepe and stack on a warm plate. 7. Continue for the rest of the batter. Makes about 20 crepes.
- 2. Cream Cheese Filling 1. In a bowl mix softened cream cheese, powdered sugar, lemon juice, lemon zest, vanilla, and sour cream with a mixer until smooth. 2. Gently fold in whipped cream to incorporate. 3. Chill until crepes are ready for filling.
- 3. Fruit Filling 1. In a separate bowl, add fruit and sugar and allow to sit for 15-20 minutes (or while you make the crepes)
- 4. Assembly 1. Take a warm crepe, add about 2 TBSP of Cream Cheese Filling and 1-2 TBSP of Fruit Filling. 2. Gently roll up the crepe and eat! 3. I like to either serve these buffet style for my family so they can fill theirs their own way (sometimes even with a drizzle of chocolate syrup on top and a dusting of powdered sugar) or I make a large batch and roll them into a casserole dish to share at family gatherings.

This recipe has been a family favorite for over 30 years! These crepes are delicious and very rich! Be sure you have at least 1 hour to prepare, they are worth every minute!

- Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.
- Blend the cream cheese, confectioners' sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.
- Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.
- To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

- In a bowl, mix together the eggs, milk, sugar, and vanilla. Stir in the flour and mix until well-combined.
- Using a non-stick pan that is approximately 6-7 inches in diameter, heat pan on medium heat. When pan is heated, add a small pat of butter. Use a heat resistant brush to spread butter evenly around the pan.
- Pour about 1/4 cup of the batter into the heated and buttered pan. Pick up the pan and quickly swirl the batter around the pan so that it covers the bottom of the pan. Tip: As you continue to cook each crêpe, you may find that your pan is getting too hot. If this is the case, remove pan from heat and wipe with a damp cloth in between each crêpe. You can also lower the heat.
- Cook the crêpe for approximately 2 minutes and then using a fork, gently turn the crêpe over and cook it on the other side for another 2 minutes or so until golden on both sides. You can turn it back to the other side again if needed. Remove the crêpe from the pan and put onto some wax paper to cool. Repeat with remaining batter.
