Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk set aside.
- In a large bowl, blend sugars, using an electric mixer set at medium speed. Add butter, and mix to form a grainy paste, scraping the sides of the bowl. Add eggs, peanut butter and vanilla and mix at medium speed until light and fluffy.
- Add the flour mixture and mix at low speed until just mixed.
- Drop by rounded spoonfuls onto an ungreased cookie sheet. With a wet fork gently press cookies in a crisscrossed pattern. Bake for 18-22 minutes or until slightly brown along edges.

GRANOLA COOKIES
These chewy Granola Cookies with peanut butter are the perfect healthy cookie recipe. Add any combo of cranberries, chocolate chips, and nuts.

- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, place the butter, peanut butter, and brown sugar. Beat on medium-high speed for 2 minutes, until lightened in color and smoothly combined.
- Scrape down the bowl. Add the egg, milk, and vanilla and beat to combine. Stop the mixer to scrape down the bowl again as needed.
- Sprinkle the cinnamon and salt over the top.
- Sprinkle on the flour. Mix on low speed, just until the dough comes together and all bits of dry flour disappear.
- By hand or with the mixer on low, gently stir in the granola, chocolate chips, cranberries, and nuts.
- Portion the batter by generous ¼-cup-sized mounds onto the baking sheet, placing each cookie about 2 inches apart. With your fingers, gently flatten each cookie a little bit (they will not spread much during baking).
- Bake the granola cookies for 10 to 13 minutes, until lightly browned and dry to the touch at the edges and still slightly soft and the centers. The cookies will look a little underdone in the middle, but do not over bake or they will be dry. Let the cookies cool on the baking sheet for 3 minutes, then gently transfer to a wire rack to finish cooling completely. (I slide the parchment paper straight onto the rack).

- Chop the Chewy Granola bars into small pieces and set aside.
- Use an electric mixer to beat the butter with the sugar until light and fluffy. Beat in the egg, vanilla and peanut butter.
- Whisk together the flour, baking powder and salt in a separate bowl. Mix well and add to the peanut mixture. Beat until incorporated. Fold in the chopped Chewy Granola bars. Refrigerate for 1 hour or until very firm.
- Preheat the oven to 350°F and line two large baking sheets with parchment paper. Roll the dough into 1-inch balls and place about 2 inches from each other on the baking sheets. Use a fork to flatten and make crosshatch marks on top. Bake until lightly browned around the edges, 12 to 15 minutes. Cool on wire racks.

CHEWY, PEANUT-FREE, GRANOLA BARS
I've been working on developing a recipe for chewy, peanut-free granola bars so that my children can bring them to school.

- Preheat oven to 350 degrees.
- In a large bowl, mix together dry ingredients (barley flakes, rolled outs, crisped rice, wheat germ, flour, almonds, flax meal, and coconut flakes.
- At a low heat, slowly melt the sugar on the stove in a sauce pan, stirring regularly (you can substitute additional honey and molasses for this, if it's too much work, but I couldn't get the "stickiness" I wanted without melting the sugar. Once the sugar s melted through, immediately add the melted butter followed by the honey, agave nectar, and molasses. Stir in the sunflower butter, vanilla extract, and liquid lecithin. Once your wet ingredients are well combined, pour them into the dry ingredients.
- Mix together with a wooden spoon until all the dry ingredients are incorporated. Finally, add the chocolate chips.
- Spread into 2 greased 8x11 pans. Use a glass to smooth out the mixture making it uniform in thickness. Feel free to add additional chocolate chips at this time if they don't seem to be evenly dispersed. I just sprinkle them where I want them and then roll them into the mixture with the glass.
- Cook at 350 degrees for 20 minute.
- For best results, let cool in the greased pans for 12-24 hours before cutting. Cut them into bar form and they are ready to eat!
CHEWY NO-BAKE GRANOLA BARS
These chewy granola bars were adapted from recipe #73754 from Kittencal. My changes were to add coconut, dates, and walnuts. I also used butterscotch chips in place of chocolate chips. You'll see that your own options are endless - just substitute the ingredients that your family prefers!

- Prepare a 9x13 pan with non-stick spray.
- In a large bowl, mix all dry ingredients so they are ready for the hot sugar mixture.
- In a sauce pan, make sugar mixture. Combine brown sugar, corn syrup and optional molasses; bring to a full boil and allow to boil 1 MINUTE. Turn down heat and add peanut butter and vanilla, stirring quickly until smooth.
- Work quickly - pour the hot sugar mixture over dry ingredients and use two wooden spoons to thoroughly combine ingredients. Stir in chips LAST so they don't melt in the hot mixture.
- Press mixture very firmly into prepared pan. Keep pressing down until your bars are dense in order to keep them from crumbling later when you cut them.
- When cool, use a sharp knife to cut into 18 bars (1 cut lengthwise and then 9 cuts across).

- To toast almonds, spread out evenly on a baking sheet. Bake at 350 degrees for 8 - 10 minutes, stirring occasionally. You should be able to smell a nutty aroma when they are done.
