I have been experimenting with bread machine recipes; and this has to be the BEST yet. I love it! Wonderful warm from the oven or toasted.

1 large egg, room temperature plus
1/4 cup milk
3/4 cup water
1/4 cup softened butter
1/3 cup sugar
1 teaspoon salt
3 1/2 cups bread flour
2 teaspoons active dry yeast
1/2 cup raisins
1/3 cup butter, melted and cooled
1/3 cup sugar
3 teaspoons cinnamon
1 egg white
1 1/2 teaspoons sugar

Steps:

  • Put milk and egg into measuring cup.
  • Add enough tepid water to make 1 cup.
  • Pour into bread machine pan.
  • Add the softened butter, 1/3 cup sugar, salt, bread flour and yeast.
  • Set bread machine to dough cycle.
  • Add raisins at the beep.
  • Remove the dough at the end of the dough cycle.
  • Roll dough to 10x12 rectangle.
  • Brush egg white on surface of dough.
  • Brush with melted butter.
  • Combine cinnamon and sugar.
  • Sprinkle over dough; leaving about 1 inch on each edge.
  • Roll from short side.
  • Pinch where it meets and roll ends under.
  • Place in loaf pan.
  • Cover with cloth and let rise for about an hour.
  • Preheat oven to 350 degrees.
  • Once the dough has risen, brush top with egg white and sprinkle with 1 1/2 teaspoon sugar.
  • Bake at 350 for about 35 minutes.

This bread is just so good, more like a coffee cake than a bread. I didn't have bread flour, so used regular unbleached, all-purpose flour and took it out about 3 minutes before the beeper because I like a less-crispy crust. Well, what a treat. Major keeper. Not only would I make it again, I think it would make some of the most awesome cinnamon roll dough, and I'm definitely going to try that very soon. I would also suggest using this bread to make Cinnamon Toast Deluxe, recipe #93128. A definite cinnamon extravaganza, and a wonderful treat, especially for those of you who are looking for a stronger cinnamon flavor.

1 cup milk
1/4 cup butter or 1/4 cup margarine, softened
1 egg
3 cups bread flour
1/2 cup sugar
1/2 teaspoon salt

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer.
  • Bake using the sweet bread setting if your machine has it.
  • If not, use white bread setting.
  • When the bread is done, remove from the machine and let sit on a rack for 10 minutes before removing from the pan.
  • If it sticks, just loosen the sides with a pliable, plastic spatula and it should slip out easily.
  • This makes a 1 1/2 pound loaf that rose really nicely.
  • I did check the dough about 5, 10 minutes into the kneading cycle; if you squeeze a good amount of the dough between your thumb and fingers and it seems a bit moist, and some dough sticks to your fingers, it should be just right; if not, adjust with water or flour accordingly.

Steps:

  • Put yeast in bread machine first on bottom, then flour, sugar and salt.
  • Then melt butter in microwave. Add beaten egg, milk and water.
  • Pour onto dry ingredients in bread machine on the dough setting.
  • When dough is done, put it onto a lightly floured surface.
  • Knead in enough flour to make it easy to handle.
  • If it is too elastic, cover and leave 10 minutes.
  • Use floured rolling pin to roll out dough on floured surface.
  • Roll out into rectangular shape to approx 1/4-inch thick.
  • Use filling and spread over entire surface of dough with spoon.
  • Roll up dough.
  • Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
  • Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
  • Bake in a 350° oven for about 25 minutes, light brown on top.
  • When done, make glaze and swirl over buns.

1 cup whole milk
6 Tablespoons unsalted butter
2-1/2 teaspoons Active Dry Yeast
2 large eggs
1/3 cup sugar
3-1/2 cups flour
1 teaspoon salt
1/3 cup sugar
2 Tablespoons cinnamon
2 Tablespoons unsalted butter (melted)
2 tablespoons unsalted butter (softened)
1 large egg
2 tablespoons whole milk

Steps:

  • Melt butter with milk. Heat until very warm, but don't boil. Allow to cool until still warm to the touch, but not hot. Sprinkle yeast over the top, stir gently, and allow to sit for 10 minutes.
  • Sift flour and salt.
  • In the bowl of an electric mixer, mix sugar and eggs with the paddle attachment until combined. Pour in milk/butter/yeast mixture and stir to combine. Add half the flour and beat on medium speed until combined. Add the other half and beat until combined.
  • Switch to the dough hook attachment and beat/knead dough on medium speed for ten minutes. If dough is overly sticky, add 1/4 cup flour and beat again for 5 minutes.
  • Heat a metal or glass mixing bowl so it's warm. Drizzle in a little canola oil, then toss the dough in the oil to coat. Cover bowl in plastic wrap and set it in a warm, hospitable place for at least 2 hours.
  • Turn dough out onto the work surface. Roll into a 18 x 9 inch rectangle. Smear with 2 tablespoons melted butter.
  • Mix sugar and cinnamon together, then sprinkle evenly over the butter- smeared dough.
  • Starting at the far end, roll dough toward you, keeping it tight and contained and pinch the seam to seal.
  • Smear a 9x5 loaf pan with softened butter. Place dough, seam down, in the pan. Cover with plastic wrap and allow to rise for 2 hours.
  • Preheat oven to 350 degrees.
  • Mix egg with milk, and brush over the top.
  • Bake for 40 minutes on a middle/lower rack in the oven. Remove from the pan and allow bread to cool.

  • Add pumpkin, water, warm milk, vegetable oil, brown sugar, salt, nutmeg, cinnamon and egg to the bread machine pan. Add the flour. Make a well in the top of the flour and add the instant yeast. Turn the bread machine on the dough cycle and let it do all of the work (my dough cycle takes 1 1/2 hours). You will want to check it at first while it is mixing, to make sure you have enough flour.
