3 cups strawberries, finely chopped
1/2 cup sugar
Juice of 1/2 lemon
1 teaspoon vanilla extract

Steps:

  • Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Remove from the heat; stir in the vanilla.
  • Strain through a fine-mesh sieve into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.

FLAT IRON STEAK WITH CABERNET SAUCE

1 (1 1/2-pound) flat iron steak
1 cup beef broth
1 cup Cabernet Sauvignon (recommended: BV Napa Cabernet)
3 tablespoons canola oil
1 tablespoon grill seasoning
1 shallot, diced
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper

Steps:

  • Take the steak out of the refrigerator 20 minutes before you are ready to cook it so that it can come to room temperature. This will help it cook more evenly.
  • In a small pot over high heat, add the broth and wine and simmer until reduced by half, about 10 minutes.
  • Heat oil in a cast iron skillet over medium-high heat until it is very hot. Season the steak with the grill seasoning and put it in the skillet. Cook about 3 minutes per side for medium-rare. Remove it from the pan, cover it with foil, and let it rest for 5 minutes while you finish the sauce.
  • Reduce the heat under the skillet to medium and add the shallots. Cook until they begin to soften, about 3 minutes. Add the reduced broth and wine mixture and cook until thickened, about for about 5 minutes. Stir in the butter and cook until the butter is melted and incorporated into the sauce. Taste and adjust the seasoning with salt and pepper, if needed.
  • Slice the steak against the grain into thin slices, arrange them on a serving platter and serve with the sauce on the side or poured over top.

3/4 cup cabernet sauvignon wine or 3/4 cup dry red wine
1 tablespoon cabernet sauvignon wine or 1 tablespoon dry red wine
1/4 cup packed brown sugar
1/2 teaspoon vanilla extract
1 (10 ounce) bag frozen unsweetened strawberries, thawed and divided
1/2 teaspoon fresh lemon juice

Steps:

  • Combine 3/4 cup wine and sugar in a small saucepan; bring to a boil over medium-high heat. Cook until reduced to 1/3 cup (about 4 minutes). Remove from heat.
  • Place wine mixture, vanilla and half of strawberries in a blender or food processor; process until smooth. Pour pureed strawberry mixture in a large bowl.
  • Coarsely chop remaining strawberries. Add chopped strawberries, 1 T wine, and lemon juice to pureed strawberry mixture; stir to combine.

1 cup Cabernet Sauvignon
6 ounces dried calimyrna figs, stems trimmed and figs coarsely chopped (1 cup)
1 (12-ounce) bag fresh or frozen cranberries
3/4 cup sugar
3 (3- by 1/2-inch) strips orange zest

Steps:

  • Bring wine to a boil with figs in a small saucepan, then remove from heat and steep figs, covered, until tender, about 30 minutes. Strain mixture through a sieve into a medium heavy saucepan and reserve figs in a small bowl.
  • Add cranberries, sugar, and zest to wine and bring to a simmer over medium heat, stirring until sugar has dissolved. Adjust heat and continue to simmer, uncovered, stirring occasionally, until cranberries burst and mixture is thickened slightly, 10 to 15 minutes. Remove from heat and discard orange zest strips, then stir in figs. Let cool completely.

The salt and cayenne may seem like odd ingredients, but just a dash of each will really brighten the flavors of this great fresh cranberry sauce. 1 cup sugar
1/2 cup cabernet sauvignon wine (almost any red wine will work)
1/2 cup orange juice
2 tablespoons orange zest
1 cinnamon stick
12 ounces bag fresh cranberries
1 pinch salt
1 pinch cayenne
1/4 cup cold water

Steps:

  • Add the sugar to a sauce pan. Pour in the orange juice, wine, zest, cinnamon stick and spices. Bring that up to a simmer on medium heat. When it's simmering, add the cranberries. Bring back up to a simmer, and the berries will start to "pop." Simmer for about 10-12 minutes. The sauce will start to thicken and the berries will have all popped and collapsed.
  • Add a 1/4 cup of cold water and turn off the heat. Don't worry if a couple berries didn't pop, as they will break down as the sauce is cooled and stirred. Take out the cinnamon stick. As the sauce cools it will get very thick. Cool to room temperature, stir, and refrigerate until needed. This will keep for several weeks.

1 pint fresh strawberries, hulled
¼ cup white sugar, or more to taste
2 tablespoons water
½ teaspoon balsamic vinegar
2 tablespoons water
1 teaspoon cornstarch

Steps:

  • Combine strawberries, sugar, 2 tablespoons water, and balsamic vinegar in a saucepan and bring to simmer over medium heat.
  • Reduce heat to medium-low, cover, and simmer for 15 minutes.
  • Whisk 2 tablespoons water and cornstarch in a small bowl.
  • Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.
  • Transfer mixture to a blender and puree until smooth.

  • In a medium pot, bring the Cabernet, sugar, and 1/8 tsp of the pepper to a boil over medium high heat. Keep the syrup at a good boil and let it cook down for 5 minutes. Add the strawberries, bring the syrup back to a boil and then lower the heat to medium. Cook for 5 minutes. Take the syrup off the heat, add the balsamic and a pinch of salt. Taste the syrup and add up to another 1/8 tsp of black pepper.
  • Serve warm or room temperature over ice cream, pancakes, angel food cake, cheesecake, and more.
