STRAWBERRY BASIL CHICKEN
Strawberry Basil Chicken is a super simple one pan dish that comes together in less than 30 minutes! You'll love the savory/sweet combo with fresh basil and strawberries.

- Begin by heating a large skillet to medium heat.
- Prepare your chicken breasts: you may need to pound the breast to make them a bit thinner, mine were approximately 1 inch. While the skillet is heating up, marinate the chicken with garlic and balsamic vinegar.
- Add oil to the pan. Cook for 3-5 minutes per side (until golden brown, but cooked through). Set aside.
- Meanwhile, prepare the topping. Toss together strawberries and basil. Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add additional balsamic vinegar or balsamic glaze* if desired. Serve immediately.

- Make the pastry by putting the butter and flour in a food processor and pulsing to a crumbly mixture. Tip in the sugar and egg yolk, and pulse to a dough. Wrap in cling film and chill in the fridge for at least 1 hr. Roll out the dough on a floured surface to the thickness of a £1 coin, then drape over a 12 x 35cm rectangular tart tin, press into the sides, and chill for 30 mins.
- Heat oven to 180C/160C fan/gas 4. Line the pastry case with parchment and baking beans. Bake for 25 mins until the pastry is a light biscuity colour. Remove the beans and parchment; if needed, bake a little longer just to crisp up the base.
- While the pastry is cooking, bring the milk, sugar and vanilla to the boil. Whisk the eggs and flours together, then pour over the milk, whisking as you pour. Return the mix to the pan and cook until it becomes a thick and glossy custard. Pass it through a fine sieve and leave to cool. Meanwhile, whisk the cream until it holds its shape. Fold the cream and custard together.
- When the tart case is cool, spread the custard over the base. Slice the strawberries and arrange them over the top. Bring the jam to the boil with a few tbsp water, simmer to a smooth glaze, then brush over the strawberries. Scatter over the basil leaves and serve.

- In a Dutch oven, combine strawberries and butter. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. Immediately stir in basil., Remove from heat; skim off foam. Ladle hot mixture into 9 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. - In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.
PEPPERED BEEF STEAK WITH STRAWBERRY BALSAMIC SAUCE

- For the glaze: In a saucepan, over medium heat, add olive oil, and heat, then add onion, garlic and Europe's Best Country Strawberries and cook, stirring occasionally for 5-6 minutes, or until strawberries are just softened. Add vinegar, honey, salt and pepper and cook for 2 minutes. Purée in blender or food processor.
- For the Steak: In a small bowl, combine the mustard, garlic, pepper and salt. Rub over steak. Grill steak for 4-5 minutes pr side for medium-rare, or longer until desired doneness. Let stand for 5 minutes. Carve steak thinly, across the grain. Arrange on a serving platter. Spoon over sauce. Garnish with basil.
- Boneless rib steaks can be substituted for sirloin steaks.

- Place strawberries in a food processor; cover and process until pureed. Transfer to a large glass bowl; add vinegar and lemon zest. I came up with this recipe as a creative way to use some basil. The shortbread crust also provides a different spin on traditional cheesecake bars.

Steps:
- For Strawberry Basil Sauce:.
- Place strawberries, 2 T water, 1/4 cup sugar, lemon juice, lemon zest (if using), and a pinch of salt into a sauce pot and bring to boil over medium-low heat.
- Whisk 2T water with 1T cornstarch and add to strawberry mixture.
- Add basil leaves to strawberry mixture.
- Use an immersion blender or transfer to blender and blend until smooth. Return to sauce pot.
- Adjust basil, lemon, and sugar amounts to desired levels.
- Reduce heat and let simmer for 10-15 minutes until reduced to about 1 cup of thick sauce (a little thinner than the consistency of honey).
- Let sauce cool.
- For Crust:.
- Cream the butter and 1/2 cup sugar.
- Add the salt and 1 3/4 cup flour to sugar mixture and combine until the dough is well mixed. Add remaining 1/4 cup flour as needed to form dough.
- With floured hands, dump dough into a greased 9x13 pan and press to form crust.
- Let the dough chill for 15-20 minutes (about the time it takes for the oven to preheat).
- Bake crust at 350 until barely brown (10-12 min), let cool on a wire rack for about 15 minutes.
- For Cheese Filling:.
- Beat cream cheese and 1/2 cup sugar until smooth.
- Blend in eggs, sour cream, vanilla extract, and a pinch of salt.
- To Assemble:.
- Pour cream cheese mixture over crust.
- Drop spoonfuls of strawberry sauce onto the top and use a knife to cut through the cheese layer to create a swirl appearance.
- Bake at 350 for 25-30 minutes until the outer edges are set, but the middle is still slightly jiggles.
- Let cool on the counter before transferring to the refrigerator.
