STRAWBERRY-BANANA COMPOTE
Fruit and butter with a little bit of brown sugar. Heat until it smells magical. That's it. You can add bourbon as well, for a hit of smokiness (the alcohol will cook off) that pairs well with French-toast brunches. Or let the mixture cool, then store in the refrigerator, and combine it later with thick Greek yogurt. One note: If you don't like the color of the compote, for the heating will pull some from the fruit, add a spoonful of strawberry preserves as a kind of blusher.

- Melt butter in a pot over medium heat; when it foams, add bananas, strawberries and brown sugar. Stir, and cook until sugar has melted into butter, about 5 minutes.
- Add bourbon, and continue to cook until fruit is deeply soft and all the alcohol has cooked off, an additional 10 to 15 minutes. Serve over French toast or pancakes, or cool it and serve in yogurt.

BANANA COMPOTE
Steps:
- In a stainless steel pot combine the orange and lemon juice and boil for 15 minutes. Reduce the heat to medium and add the maple syrup and brown sugar. Stir until the sugar has dissolved. Remove from the heat and whisk in the butter. Cool slightly and add the sliced bananas. Keep warm but do not boil again.*
- In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt.
- Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix**.
- Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.
- Serve with a dollop of whipped cream and maple syrup.

- Combine berries, Grand Marnier, and zest in a small bowl. Toss; let stand 30 minutes.
- Bring juice to a boil in a small saucepan over medium heat; reduce heat, and simmer until liquid is reduced to 1/4 cup, about 20 minutes. Remove from heat; let cool. Pour over strawberries, and toss to combine.
BIG-BATCH STRAWBERRY COMPOTE

- Combine strawberries, sugar, salt, and 1/4 cup water in a small pot. Scrape in vanilla seeds and add pod, or add lemon zest if using. Bring to a simmer over medium heat and cook, stirring occasionally and breaking up strawberries with a wooden spoon at beginning of cooking, until fruit is tender and juices are thick enough to coat spoon, 40-45 minutes. Fish out vanilla pod and/or lemon zest, then stir in lemon juice.
- Do Ahead: Compote can be made 5 days ahead. Let cool, then cover and chill.

- Preheat the oven to 425 degrees F (220 degrees C). Place a 10-inch ovenproof skillet in the oven to heat up.
- Combine eggs, milk, flour, 2 tablespoons sugar, and salt in a blender; blend until batter is very smooth.
- Remove hot skillet from the oven. Add margarine and swirl until melted. Pour batter into the hot skillet.
- Bake in the preheated oven until puffy and golden, about 15 minutes.

- Preheat oven to 350°. Grease a 9X4X11 in loaf pan and place a piece of parchment paper on the bottom of the pan.
- Beat together the sugars and butter until light and fluffy. Add in the eggs, one at a time, incorporating well after each addition then add the vanilla extract. Peel and mash bananas. Stir into the butter mixture. Add the flour, nutmeg cinnamon until just combined. Do not over-beat.
- Pour mixture into pan and bake for 1 hour, 15 minutes until a toothpick inserted into the bread comes out clean. Remove from the oven and let stand for 5 minutes before turning out onto a wire rack.
- Made the compote while bread is baking by mixing the first four of the compote ingredients together in a medium sized pan and bringing to a boil Add fruit and return to a boil. Remove from heat, pour into a heatproof bowl, and let cool.
- Serve slices of banana bread with a spoonful of mascarpone or yogurt and spoon over either warm or cold compote. Fish with a light dusting of confectioners' sugar.

- In a non-reactive saucepan, over medium heat, combine 2 pints of the strawberries, sugar and liquor.
- Bring the liquid to a boil, reduce the heat to medium and simmer until the fruit is soft, about 8 to 10 minutes.
- Remove from the heat and cool.
- In a food processor, fitted with a metal blade, puree the strawberries until smooth.
- Turn into a mixing bowl, and add the remaining sliced strawberries.
- Mix well.
