Number Of Ingredients 6

2 cups strawberries, washed and hulled
2 cups apricots, washed sliced and peeled
4 cups sugar
1 tablespoon lemon juice
1 tablespoon fruit pectin
8 tablespoons apricot brandy

Steps:

  • Once all fruit is prepped, place in blender and blend for 30 seconds on high.
  • Next add sugar, lemon juice, pectin and brandy.
  • Don't be alarmed, the alcohol will cook out of the brandy. Its for flavor only.
  • Blend until smooth.
  • Pour into a medium saucepan and boil for 8 minutes.
  • Skim off the foamy layer on top.
  • Pour the hot jam into hot sterile jars. Close tightly.
  • Allow to cool before refridgeration. Lasts 3-5 days after opening the jar.

Number Of Ingredients 4

1 sachet gelatine
450ml strawberry or apple juice
15-18 very ripe strawberries
whipped cream , for decoration

Steps:

  • Ask a grown-up to put 6 tsp boiling water into a jug. Sprinkle on the gelatine, then whisk carefully until it dissolves.
  • Pour in the juice and whisk, making sure it's all mixed in.
  • Pull the green hulls out of the strawberries. Use a knife to cut them into slices or small chunks.
  • Put some pieces of strawberry into 6 glasses leaving a few to decorate at the end. They should be full but with plenty of room around them.
  • Pour the juice into 6 glasses, filling them almost to the top. Put them on a plate or tray in the fridge to set. They will take about 4 hours to set.
  • When the jellies are set, decorate with whipped cream and extra strawberries.

320g sheet puff pastry
1 heaped tbsp jam (apricot, raspberry or strawberry work well)
1 beaten egg
icing sugar , for dusting
clotted cream , to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the puff pastry on a lightly floured surface. Cut the pastry into six squares. Spoon the jam in the centre of each pastry square. Seal the edges by pressing down with a fork and brush with the egg. Lay on a lined baking sheet and bake for 20 mins. Dust with the icing sugar and serve with the clotted cream.

125g unsalted butter , softened slightly
85g icing sugar
1 egg
200g plain flour , plus extra for dusting
100g strawberry jam
500g strawberries , (small hulled, large sliced)
2 tbsp apricot jam
300ml milk
150ml double cream
1 tsp vanilla extract
3 egg yolks
60g caster sugar
3½ tbsp cornflour
50g butter , cubed and softened

Steps:

  • Beat the butter and sugar together until smooth, but not fluffy. Mix in the egg until combined, then add the flour. Bring together with your hands to form a dough. Wrap and chill in the fridge for 30 mins.
  • Dust a surface with flour and roll out the pastry to a 26cm circle (or 3cm bigger than your tin). Line a 23cm fluted tart tin with the pastry, leaving an overhang. Prick the base with a fork to stop any air bubbles forming. Chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Line the pastry case with a scrunched up sheet of baking parchment and baking beans, then bake for 15 mins. Remove the parchment and beans and bake for 15-20 mins more until crisp and golden. Leave in the tin to cool.
  • To make the crème pâtissière, heat the milk, cream and vanilla in a pan over a medium heat, stirring occasionally. Bring up to a simmer. Meanwhile, whisk the yolks and sugar in a bowl for 3 mins until pale, then stir in the cornflour until combined. Pour a quarter of the hot cream over the egg mix, whisking continuously, then pour the warm egg mix into the pan with the rest of the cream. Stir over a low-medium heat for 5-8 mins until the crème pâtissière thickens. Transfer to a large bowl and cool for 15 mins, whisking occasionally. Gradually whisk in the butter until smooth, cover and put in the fridge until needed.
  • Beat the strawberry jam to loosen it, then spread over the bottom of the pastry case. Put the crème pâtissière into a piping bag and pipe in a spiral on top of the jam. Arrange the strawberries on top in a pattern. Heat the apricot jam in a small pan with 1 tbsp water until warm. Whisk to loosen the jam, then leave to cool slightly. Brush over the top of the strawberries.

2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons kosher salt
2 teaspoons sugar
2 sticks cold unsalted butter, cut into cubes
1/3 to 1/2 cup ice water
1/3 cup blanched hazelnuts
1/4 cup sugar
3 tablespoons unsalted butter, room temperature
1 tablespoon unbleached all-purpose flour
1 large egg yolk (white reserved for brushing crust)
1 tablespoon hazelnut liqueur, such as Frangelico
1/2 teaspoon kosher salt
5 teaspoons unbleached all-purpose flour, plus more for dusting
12 ounces apricots, halved if small, or cut into 1/2-inch wedges (about 2 cups)
4 ounces strawberries, cut into 1/4-inch slices (3/4 cup)
1/3 cup sugar
2 teaspoons fresh lemon juice
1/4 teaspoon kosher salt
1 large egg white (reserved from frangipane), beaten

Steps:

  • Pate Brisee:Pulse flour, salt, and sugar in a food processor until combined. Add butter; pulse until mixture resembles coarse crumbs with some pea-size pieces remaining. Drizzle with 1/3 cup ice water and pulse until mixture holds together when pressed between fingertips. Add additional water if needed; do not overprocess. Transfer mixture to a piece of plastic wrap. Divide in two; knead once or twice. Form into two rectangular disks and wrap each in plastic. Refrigerate at least 1 hour and up to overnight.
  • Frangipane:Preheat oven to 375 degrees. Toast hazelnuts on a baking sheet, stirring once, until deep golden brown, about 12 minutes. Let cool completely, about 15 minutes; then grind in a food processor until fine. Add sugar, butter, flour, egg yolk, liqueur, and salt; process to combine. Frangipane can be made in advance and stored in an airtight container in refrigerator up to 1 day; return to room temperature before using.
  • Fruit:On lightly floured parchment, roll 1 disk pate brisee into a 12-by-10-inch rectangle, about 1/8 inch thick (reserve remaining disk for another use). Transfer on parchment to a rimmed baking sheet. Spread frangipane evenly over dough, leaving a 2-inch border. Stir together apricots, strawberries, sugar, flour, lemon juice, and salt. Arrange fruit mixture in a single layer over frangipane. Fold dough over fruit, leaving center uncovered. Brush crust with egg white, brushing under folds to help seal.
  • Bake until golden brown and bubbling in center, 50 minutes to 1 hour. Slide galette off of pan onto a wire rack. Serve slightly warm or room temperature. The galette is best eaten the day it's made, but can be stored, lightly tented with foil, for up to one day at room temperature.

5 cups peeled pitted chopped apricots
1 1/2 cups water
1/3 cup fresh lemon juice
6 cups sugar
2 (3 ounce) envelopes liquid pectin

Steps:

  • Combine apricots and water.
  • Over medium heat bring mixture to a boil.
  • Reduce heat to a simmer gently for 5 minutes
  • Take pan off heat; skim and let set 30 minutes.
  • Sieve the apricots and strain juice from pulp (use pulp in apricot jam).
  • Line sieve with 4 layers of clean damp cheese cloth.
  • Strain; cover the juice and refrigerate overnight.
  • Ladle the juice from container, being careful not to disturb the sediment from bottom using 3 cups of juice.
  • To make the jelly, combine juices when they are warm add sugar.
  • Stirring constantly until sugar is dissolved, bring to a rolling boil.
  • Pour pectin in, bring to a rolling boil again, stirring constantly (apricot LOVES to burn) for 1 minute.
  • Remove pan from heat; skim off foam.
  • Ladle into hot jars, leaving 1/4 inch head space.
  • Water bath for 15 minutes.
