My family loves this all year round if we can find strawberries. Even the grandchildren love this salad. Quick and easy.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

  • In a large bowl, toss together the spinach and strawberries.
  • In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

2 tablespoons aged balsamic vinegar
1 teaspoon superfine sugar
Juice of 1/2 lemon
1 1/2 cups small strawberries
2 to 3 cups spinach leaves, from a farmer's market
1/2 cup fresh basil leaves
4 to 5 tablespoons EVOO
Salt and freshly ground pepper

Steps:

  • Chop the shallot and put it in a small bowl. Add the vinegar, sugar and lemon juice and set aside.
  • Meanwhile, hull the strawberries and cut them in half. Transfer to a serving bowl along with the spinach and basil.
  • Whisk the EVOO into the vinegar mixture and season with salt and pepper. Toss the salad with the dressing and season with salt and pepper.

2 1/2 cups sliced fresh strawberries (about 12 ounces)

1 cup sugar
1 tablespoon water
1 cup salad oil
1/3 cup cider vinegar

1 teaspoon celery seed
2 tablespoons corn syrup
6 cups fresh spinach, washed and dried

Steps:

  • Make spiced pecans. Beat egg white until very frothy, but not stiff. Add remaining ingredients, excluding pecans. Now add pecans and mix to coat. Spread pecans on baking sheet in single layer and bake in a preheated 200 degree oven for 45 minutes, turning every 15 minutes.
  • For dressing, shake together all ingredients. Toss together salad ingredients. Toss dressing with salad just before serving, sprinkle dressed salad with pecans.

1/4 cup grated Spanish onion (I always leave this out as I hate onion mushed in dressing!)
