This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

This healthy turkey chili recipe comes together in just 30 minutes! It's packed with flavor and perfect for busy weeknight dinners.

4 tablespoons olive oil, divided
2 pounds ground turkey (I used extra lean)
1 medium/large sweet Vidalia onion, diced small
1 medium/large red bell pepper, diced small
3 to 5 garlic cloves, finely pressed or minced
2 to 3 teaspoons kosher salt, or to taste* (see Note below)
1 teaspoon freshly ground black pepper, or to taste
one 15.5-ounce can red kidney beans (I used low-salt), drained and rinsed if desired
one 15-ounce can black beans (I used no-salt added), drained and rinsed if desired
one 14.5-ounce can petite diced tomatoes (I used no-salt added)
one 8-ounce can tomato sauce, plus 8 ounces water used to rinse out can (I used no-salt added)
about 8 ounces water, chicken or vegetable broth, optional (see step 5 below)
two 4-ounce cans diced green chilis (I used fire-roasted)
1 tablespoon cumin
1 tablespoon chili powder
2 teaspoons smoked paprika (regular paprika may be substituted)
2 to 4 bay leaves
1 to 2 teaspoons granulated sugar, optional and to taste
sour cream, green onions, shredded cheese, crushed tortilla chips or crackers

Steps:

  • To a large Dutch oven, add 2 tablespoons olive oil, turkey, and cook over medium-high heat to brown, crumbling it with a spatula as it cooks and tossing it to ensure even cooking. Cook through, about 5 minutes or as necessary.
  • Add the onions, red pepper, drizzle remaining 2 tablespoons over the top, stir, and cook for about 5 to 7 minutes, or until vegetables have softened, stir intermittently.
  • Add the garlic, salt (Note because I used all low-salt or no-salt added products I use 3 teaspoons salt total; if you're using salted versions of the other ingredients reduce salt level to 1/2 to 1 teaspoon to start with and add more if necessary), pepper, and cook for about 1 minute, stir intermittently.
  • Add the beans, diced tomatoes, tomato sauce, rinse can out with 8 ounces water and add the water, green chilis, cumin, chili powder, smoked paprika, bay leaves, and stir.
  • Depending on how thick you like your chili and if you prefer more broth, you may wish to add up to 8 additional ounces water, chicken or vegetable broth.
  • Bring to boil and cook for about 10 to 15 or until chili has reduced and thickened some.
  • Stir, taste, optionally add sugar to taste (I added 2 teaspoons because the sugar balances the acid from the tomatoes and peppers), and add more salt, pepper, or seasonings to taste.
  • Remove bay leaves.
  • Ladle into bowls and optionally garnish with sour cream, green onions, shredded cheese, crushed tortilla chips or crackers.

2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, small diced
1 green pepper, small diced
1 tablespoon ground cumin
2 teaspoons chili powder
Two 15-ounce cans pinto beans in chili sauce
One 15-ounce can kidney beans, drained and rinsed
One 28-ounce can crushed tomatoes
One 6-ounce can tomato paste
3 tablespoons brown sugar
4 cups chopped leftover turkey (see Cook's Note)
Chili toppings, such as sour cream, shredded Cheddar and sliced scallions, for serving

Steps:

  • Heat the oil in a large, heavy-bottomed pot over medium heat until warm. Add the garlic, onion and pepper and cook, stirring frequently, until the vegetables are soft, about 5 minutes.
  • Stir in the cumin, chili powder, pinto beans with the chili sauce, kidney beans, crushed tomatoes, tomato paste and brown sugar, stirring to combine. Add the chopped turkey, reduce the heat to low and cook, stirring occasionally, until the chili is heated through, about 10 minutes.
  • Serve topped with sour cream, shredded Cheddar and sliced scallions, if desired.

Sliced scallions, cilantro sprigs, avocado, sour cream, grated Monterey Jack cheese, and/or tortilla chips, for garnish, optional

Steps:

  • 1. Heat olive oil in a large, heavy skillet over medium-high heat. Add onion, garlic, 1 tablespoon salt, chili powder, and oregano and cook, stirring, until fragrant, about 3 minutes.
  • 2. Stir in tomato paste and chipotle chile and sauce; cook 1 minute more. Add turkey, breaking it up with a wooden spoon, and cook until meat begins to brown, about 3 minutes. Add beer and simmer until reduced by about half, about 8 minutes. Add tomatoes-crushing them through your fingers into skillet-along with their juices and beans; bring to a boil. Cook, uncovered and stirring occasionally, until thickened, about 10 minutes.
  • 3. Ladle chili into bowls and serve with garnishes of your choice.

1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
8 corn tortillas (6 inch), warmed

Steps:

1 teaspoon vegetable oil
1 pound ground turkey
½ onion, chopped
2 cups chicken broth
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (16 ounce) can refried beans
1 tablespoon minced garlic
2 ½ tablespoons chili powder
1 teaspoon paprika
1 teaspoon dried oregano
½ teaspoon ground cumin
salt and ground black pepper to taste
2 tablespoons shredded Cheddar cheese

Steps:
