Juicy strawberries poached with vanilla and peppercorns make a deliciously simple, lightly sweet, and good-for-you ending to a summer meal.They are delicious on their own and also pair beautifully with creamy Greek yogurt or vanilla ice cream. Peppercorns add a spicy note and a touch of heat.

- Place strawberries in a heatproof bowl. Combine water,sugar, vanilla, lemon zest, and peppercorns in a smallsaucepan over medium heat. Bring to a simmer, and cookfor 1 minute. Pour syrup over strawberries. Let standuntil cool, about 15 minutes.

- Combine water and sugar in a saucepan over medium-high heat; stir until sugar is dissolved. Mix strawberries into saucepan and bring to a boil; boil for 10 minutes. Reduce heat to medium-low and simmer until strawberries are mushy and sauce is thick, about 10 minutes. Strain liquid into a bottle and refrigerate.

Steps:
- Wash strawberries and remove stems; cut large berries in half or roughly chop them.
- Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
- Remove from heat. In a blender, puree about 1/3 of the sauce, then mix back into remaining topping. Store in refrigerator.

- Wash the strawberries and remove the green stems. Cut the strawberries and place them in a bowl. Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight. The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.
