CHEF JOHN'S STRAWBERRY ICE CREAM
Many people consider this type of strawberry ice cream recipe a 'hack' or a 'cheat' because we're skipping the more time-consuming and sometimes temperamental egg-custard step; but even if I didn't want to save time I'd still prefer this method. To be clear, I'm only speaking about this specific flavor of ice cream. For deep, dark chocolate, or butter pecan, I'll take the classic French-style every time. But, for sweet, juicy strawberries, I'm not a big fan of the egginess you get with the traditional method.

Steps:
- Place strawberries and sugar in a blender and pulse until pureed; steep for 10 minutes.
- Pour cream, milk, vanilla extract, and salt into strawberry mixture; blend until smooth and slightly thickened, 10 to 15 seconds. Whisk red food color into cream mixture.
- Pour strawberry mixture into the container of an ice cream maker and freeze according to the manufacturer's instructions. Transfer ice cream to a sealable container, cover the ice cream with plastic wrap, seal the container, and freeze, 2 hours to overnight.
- Process in an ice cream maker until thick. Immediately transfer to a sealable container, cover with plastic wrap, cover the bowl with a lid and freeze for 2 hours to overnight.

- For the ice cream: Pulse the strawberries in a food processor until you achieve pea-size chunks. Add the condensed milk, vanilla and salt. Pulse to combine; remove to a medium bowl and set aside.
- Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the strawberry mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. Continue to freeze, covered, until solid and scoopable, about 3 hours more.
HOMEMADE VANILLA ICE CREAM
This vanilla ice cream is everything you would want in a classic-rich and creamy with a pure, balanced flavor that can hold its own whether you serve it in a cone, with pie or as a base for candy or cookie mix-ins.

- Whisk the cream, milk, sugar, vanilla and 1/2 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Beat the egg yolks in a medium bowl. Slowly whisk 1 cup of the hot cream mixture into the beaten yolks, then pour back into the saucepan, whisking, and return to medium heat. Cook, stirring constantly with a wooden spoon, until the mixture thickens, coats the spoon and reaches 180 degrees F on a thermometer, 6 to 8 minutes. Remove from the heat and strain the custard through a fine-mesh sieve into a large bowl or measuring cup; discard the solids. Stir often until the mixture cools to room temperature. Lightly press plastic wrap directly against the surface of the custard to prevent a skin from forming. Chill until cold, about 3 hours. (For faster chilling, set the bowl of custard in a bowl of ice water and stir until cold.)
- Freeze the mixture in an ice cream machine according to the manufacturer's instructions. (Take care not to over-churn the ice cream or it can have a grainy texture.) Place the ice cream in the freezer to set up for at least 1 hour. Serve.
HOMEMADE STRAWBERRY ICE CREAM RECIPE
I have been wanting to try a Homemade Strawberry Ice Cream Recipe for some time now! I received this Cuisinart Ice Cream Machine months ago and to be perfectly honest with you, it intimidated me a little bit. The idea of making ice cream at home sounded like a daunting task, but that couldn't be further from the truth! I finally decided to try out my new machine to make some Homemade Strawberry Ice Cream and it was amazing! You don't realize how much better homemade tastes until you have tried it yourself. Plus, there is the added benefit of knowing exactly what ingredients you are giving your family. That's right, we can actually pronounce them all too. ;) The best testimony I can give you is from my son who does NOT like strawberries. He could not get enough of this ice cream. He didn't even seem to mind the fact that there were strawberries in it at all! Tip: The recipe calls for pureeing only half of the strawberries, but after putting in in the freezer a day we all agreed that the strawberry chunks weren't great. So next time I will puree all of the strawberries for a more creamy consistency.

- Combine strawberries, lemon juice, and 1/2 cup of sugar in a bowl and stir. Allow to sit for up to 2 hours.
- Strain berries and reserve the juices.
- Puree half the berries.
- In a medium bowl mix milk and remaining sugar until sugar is dissolved. Stir in heavy cream, leftover juice from the berry mixture, vanilla, and mashed strawberries.
- Turn on Cuisinart Ice Cream Machine and pour mixture into the frozen freezer bowl for about 20 minutes.
- Add the rest of the strawberries and mix for another 5 minutes.
- NOTE:.
- The ice cream will be very soft and creamy. We transferred ours to a container and stuck it in the freezer for about an hour to thicken it up a little the way we like it.
- I am looking forward to trying out some other new ice cream recipes now that I see just how easy it is to do! In fact, I have a container of blueberries in the kitchen that I think would be great in ice cream too!
STRAWBERRY ICE CREAM

- Place the berries into the container of a blender or food processor, and puree until smooth. Pour into a large bowl, and set aside.
- Heat 1 1/4 cups of the cream in a saucepan over medium heat until it begins to bubble at the edge of the pan. In a large bowl, whisk together the sugar, egg yolks, remaining 1/4 cup cream, and corn syrup. Gradually pour the hot cream into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan, and heat until the mixture is thick enough to coat the back of a metal spoon, about 5 minutes. Do not allow the mixture to boil. Strain custard into the berry puree through a sieve, mix, and refrigerate until chilled.
- Fill an ice cream maker with the mixture, and freeze according to the manufacturer's instructions.

EXTRA-RICH STRAWBERRY ICE CREAM
Steps:
- In a bowl, whisk together the egg yolks, sugar, vanilla, and salt. Pour the half-and-half and cream into the top of a double boiler and heat over hot water until hot, but not boiling. Stir with a wooden spoon, scraping the bottom of the pan to prevent sticking. Slowly pour the hot cream into the eggs and whisk until smooth.
- Return to the double boiler and cook over medium-low until thick and bubbling around the edges. The custard will coat a wooden spoon. Strain the custard through a fine-mesh sieve into a metal bowl. Cover and chill for at least 4 hours or overnight.
- Rinse and hull the berries. Roughly chop the berries and transfer half to a small bowl. Mash the other half with a fork or potato masher; they will not be smooth but still a little chunky. Add them to the chopped berries. Chill for at least 1 hour. Pour the cream into the canister of an ice cream maker. Freeze according to manufacturer's instructions. When the ice cream is the consistency of whipped cream, stir in the berries. Transfer to a shallow quart container, cover with plastic wrap, and freeze in the refrigerator's freezer for at least 3 hours until ready to serve. Let the ice cream sit at room temperature for about 10 minutes before scooping.

- Pour milk and buttermilk into a large pan and suspend the thermometer in the milk.
- Cook over medium heat, stirring occasionally until the termperature reads 170 degrees.
- Keep the mixture on the heat and the temp of the milk between 170 and 175 degrees. After 30 minutes, the mixture should start to separate into curds (the lumps) and whey (the liquid).
- Line a strainer with several lavers of moistened cheesecloth and set it inside a large bowl to lift the curds from themilkmixture and lay them in the cheesecloth. Pour the remainder of the whey through the cheesecloth and save the whey for other recipes.
- Let curds drain at room temp for 2 to 4 hours. Remove the cheese from the cheescloth and place in blender with the salt. Blend until creamy.
- Store the cheese in small containers with tight fitting lids and refrigerate.
- Cheese can also be frozen thawed and then beaten again in blender until creamy.

Steps:
- Preheat oven to 350°F.
- Place pie crust dough on a pizza baking sheet.
- Press down firmly and stretch so that the crust laps a touch over the edge will shrink slightly.
- Bake until slightly golden.
- Remove from oven and let cool.
- Meanwhile, by hand, mix milk, 1/4 cup lemon juice and vanilla together in bowl.
- Chill.
- Slice bananas and toss in remaining one teaspoon lemon juice so they don't turn brown on the pie.
- Pour off excess lemon juice and set bananas aside.
- Spread chilled milk mixture on cooled crust, leaving empty a 1/2 inch space from the edge (to look like a pizza).
- Decorate the pie with banana slices, pineapple chunks, pecans and cherries.
- Warm Hot Fudge Sauce and drizzle on top.
- If you like, you can take a can of whipped cream and create slices.
S'MORES ICE CREAM (HOMEMADE)
It's like camping without the bugs. I use one full sleeve of graham crackers, which is about 10 sheets and 4 Hershey Bars - but the 'zaar computer cant seem to read those amounts no matter how I type them in (?)

- With a mixer, mix the eggs for 2min until light in color and slightly fluffy.
- Mix the cocoa powder into the sugar, then slowly add this mix to the eggs, mix for approx 1min longer or until well blended.
- Add the cream, milk, and vanilla again mix until well incorporated.
- Pour this mixture into your ice cream maker and freeze according to manufacturers directions.
- About 2min before the ice cream is finished, add the remaining ingredients.
- When finished scoop into container and if desired, top with additional crushed graham crackers, marshmallows and chopped or shaved chocolate.

STRAWBERRY ICE CREAM
Use sweet strawberries whilst they're in season to make this fabulous homemade strawberry ice cream. It's perfect on its own or as an accompaniment summer desserts

- Put the strawberries in a food processor or blender. Whizz to a purée, then add the lemon juice to taste - if the strawberries are quite tart you'll only need a little.
- Warm the cream and milk in a pan until just steaming, not boiling. Whisk the sugar and egg yolks in a bowl for a minute or two until pale yellow. Slowly pour the hot cream mixture into the eggs, whisking as you do. Once fully incorporated, strain through a sieve back into the pan. Gently cook over a low-medium heat until it thickens slightly - it should coat the back of your spoon and leave a channel if you run your finger through it (this will happen at about 82-85C). Be careful not to overcook it as the eggs will scramble. Transfer to a bowl. Cover and cool for 10 mins, then chill for 1 hr.
- Stir the strawberry purée and vanilla through the cold custard. Taste to see if it needs a little more lemon or vanilla.
- Freeze the ice cream in an ice cream maker, or container in the freezer. If you don't have an ice cream maker, freeze for 4 hrs, whisking vigorously or blending in a food processor every hour to remove any ice crystals. Will keep in the freezer for up to two months.

- In a large bowl, beat eggs on medium speed til frothy.
- While beating, gradually add 2 sugar.
- Beat in sweetened condensed milk.
- Beat in vanilla.
- In another bowl, stir together; strawberries, bananas, and pecans.
- Fold in Cool Whip.
- Stir fruit mixture into egg mixture.
- Put in 1 gallon ice cream freezer.
- Add milk to mixture in freezer.
