The irresistible combination of cherries and cream cheese shines in these Cherry Cheesecake Muffins!

Number Of Ingredients 13

1 cup (99g) old-fashioned rolled oats
1 cup (236ml) buttermilk
8 ounces (226g) cream cheese, softened
1/4 cup (50g) granulated sugar
1/2 teaspoon vanilla extract
1 cup (120g) all-purpose flour
3/4 cup (150g) packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1/4 cup (56g) unsalted butter, melted and slightly cooled
1 cup sweet cherries, pitted and quartered

Steps:

  • Preheat oven to 350°F. Line 12 standard muffin cups with paper liners.
  • Combine the oats and buttermilk. Let stand for 10 minutes.
  • Using an electric mixer on medium speed, beat the cream cheese, sugar, and vanilla until combined. Set aside.
  • Whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  • Add the egg and melted butter to the oat mixture, stirring until combined. Add to the flour mixture, stirring just until combined. Gently stir in the cherries.
  • Place about 2 tablespoons of muffin batter in each muffin cup. Top with 1 & 1/2 to 2 tablespoons of the cream cheese filling. Then, top with the remaining muffin batter. (The cups will be almost full.)
  • Bake 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.

1 cup crushed vanilla wafers (about 30 wafers)
3 tablespoons butter, melted
1 package (8 ounces) cream cheese, softened
1/3 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons vanilla extract
1 large egg, room temperature, lightly beaten
TOPPING:
1 pound pitted canned or frozen tart red cherries
1/2 cup sugar
1 tablespoon cornstarch
Red food coloring, optional

Steps:

  • Preheat oven to 350°. Combine crumbs and butter; press gently onto bottoms of 12 foil-lined muffin cups. In another bowl, combine cream cheese, sugar, lemon juice and vanilla. Add egg; beat on low speed just until combined. Spoon over crusts. , Bake until centers are almost set, 12-15 minutes. Cool completely. , For topping, drain cherries, reserving 1/2 cup juice in a saucepan; discard remaining juice. To reserved juice, add cherries, sugar, cornstarch and, if desired, food coloring. Bring to a boil; cook until thickened, about 1 minute. Cool; spoon over cheesecakes. Refrigerate, covered, at least 2 hours.

3 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar, divided
1-1/2 teaspoons vanilla extract, divided
5 large eggs
1 cup sour cream
1-1/2 cups cherry pie filling
Mint leaves, optional

Steps:

  • In a large bowl, beat cream cheese, 1 cup sugar and 1 teaspoon vanilla until smooth. Add eggs, one at a time, beating well after each addition. , Spoon into foil-lined muffin cups. Bake at 300° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes. , In a small bowl, combine sour cream and the remaining sugar and vanilla until smooth. Spoon onto cupcakes. Return to the oven for 6-8 minutes or until set. Cool for 10 minutes before removing from pans to wire racks to cool completely., Top with pie filling; garnish with mint if desired. Store in the refrigerator.

2 tablespoons white sugar
1 pound whipped cream cheese
¾ cup sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with foil liners.
  • Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar together in a bowl. Press crumbs into the bottoms of prepared muffin cups.
  • Beat cream cheese, 3/4 cup sugar, eggs, and vanilla extract together in a bowl until filling is smooth. Divide filling between muffin cups.
  • Bake in the preheated oven until top is golden around the edges and slightly cracked, about 10 minutes. Cool completely and top each with cherry pie filling.

1/3 cup butter, softened
3/4 cup sugar
2 large eggs
1/3 cup 2% milk
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
CREAM CHEESE FILLING:
6 ounces cream cheese, softened
1/3 cup sugar
1 large egg
3/4 cup fresh raspberries
3/4 cup fresh blueberries
STREUSEL TOPPING:
1/4 cup all-purpose flour
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk. In another bowl, whisk flour, baking powder and cinnamon; add to creamed mixture just until moistened. Fill greased or paper-lined muffin cups one-fourth full., For filling, in a small bowl, beat cream cheese, sugar and egg until smooth. Fold in berries. Drop a rounded tablespoonful into the center of each muffin., For topping, in a small bowl, mix flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter., Bake 27-32 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.

I found this in a muffin cookbook by Canadian Living. You can use different jams if you don't have cherry jam. They will freeze very well , just place in a zip lock bag or in an air tight container.

1/3 cup cream cheese
2 tablespoons icing sugar
1/3 cup softened butter
2/3 cup brown sugar
1 egg
1 teaspoon orange rind
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
1/3 cup whole cherry jam
2 teaspoons finely chopped pecans (optional)

Steps:

  • Blend cream cheese with icing sugar, set aside.
  • In bowl cream the butter and brown sugar.
  • Beat in egg and orange rind.
  • Combine flour, baking powder and salt.
  • Add to the creamed mixture alternately with the milk. Stirring until blended but do not over mix.
  • Spoon into large greased muffin tins , filling 1/2 way up. Add 1 tsp of the cream cheese mixture and 1 tsp of the jam to each. Top with remaining batter.
  • Sprinkle with nuts.
  • Bake for 25-30 minutes at 375 until firm to the touch.
  • Remove from tins.

This recipe has overturned a lifetime's prejudice - which is good, but unsettling. I had always been a committed believer that the only true cheesecake was the proper, baked cheesecake, but now I'm not so sure. This improper, unbaked cheesecake, feature of many a 1970s dessert trolley, has entirely won me over. It's light, it has tang, it is rapturously good. The fact that it is speedily easy to make is more reason for general hilarity and joy. Even in the spirit of retro-accuracy, please do not be tempted to open a jar of cherry pie filling over the cake. I use some French cherry concoction that seems to be pretty universally available and has no added sugar, but anything labelled 'conserve' as opposed to 'jam' should be safe. And, if you feel like it, when cherries are in season, rather strew the top with a couple of handfuls of beautiful fruit.

1 1/4 cups graham cracker crumbs
2 tablespoons sugar
3/4 stick soft unsalted butter
10 ounces cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon juice
1 cup heavy cream
1 (10-ounce) jar black cherry spread (recommended: St Dalfour Rhapsodie de Fruit)

Steps:

  • Blitz the biscuits in a food processor until beginning to turn to crumbs, then add the sugar and butter and whiz again to make the mixture clump. If using graham cracker crumbs, you can use a bowl and wooden spoon to mix the butter in, with the sugar added.
  • Press this mixture into a 8-inch springform tin; press a little up the sides to form a slight ridge.
  • Beat together the cream cheese, sugar, vanilla and lemon juice in a bowl until smooth.
  • Lightly whip the cream, and then fold it into the cream cheese mixture.
  • Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula, put it in the refrigerator for 3 hours or overnight.
  • When you are ready to serve the cheesecake, un-mold and spread the black cherry spread over the top.
