1/2 cup sweet chili sauce
2 tablespoons lime juice
2 tablespoons ketchup
1 teaspoon soy sauce
1 large egg, lightly beaten
3/4 cup panko bread crumbs
1 green onion, finely chopped
1 tablespoon minced fresh cilantro
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 pound lean ground chicken

Steps:

  • Preheat air fryer to 350°. In a small bowl, combine chili sauce, lime juice, ketchup and soy sauce; reserve 1/2 cup for serving. In a large bowl, combine egg, bread crumbs, green onion, cilantro, salt, garlic powder and remaining 4 tablespoons chili sauce mixture. Add chicken; mix lightly but thoroughly. Shape into 12 balls., In batches, arrange meatballs in a single layer on greased tray in air-fryer basket. Cook until lightly browned, 4-5 minutes. Turn and cook until lightly browned and cooked through, 4-5 minutes longer. Serve with reserved sauce; sprinkle with additional cilantro.

2 pounds ground chicken
1 cup dry bread crumbs
4 green onions, sliced
1 tablespoon ground coriander seed
1 cup chopped fresh cilantro
¼ cup sweet chili sauce
2 tablespoons fresh lemon juice
oil for frying

Steps:

  • In a large bowl, mix together the chicken and bread crumbs. Season with green onion, ground coriander, cilantro, chili sauce and lemon juice; mix well.
  • Using damp hands, form mixture into evenly shaped balls that are either small enough to eat with your fingers, or large enough to use as burgers.
  • Heat oil in a large skillet over medium heat. Fry the chicken balls in batches until well browned all over.

2 lbs ground chicken
1 cup fresh breadcrumb
4 scallions, finely sliced
1 tablespoon ground coriander
1 cup chopped fresh cilantro
1/4 cup sweet chili sauce
2 tablespoons fresh lemon juice
oil (for shallow-frying)

Steps:

  • Mix all ingredients together, except oil (and cucumber and chile sauces).
  • Wet hands, and take one tbsp of mixture and form into meatball; repeat.
  • Shallow-fry the meatball until they are brown and cooked through.
  • Serve with Thai cucumber sauce (may use recipe#29196) and Thai red chile sauce (may use recipe#30195), or other dipping sauces of choice, if desired.

450 g ground chicken
1 cup dried breadcrumbs
2 teaspoons ginger, minced
1 teaspoon lemongrass, minced
3 tablespoons fresh coriander, chopped
1/3 cup Thai fish sauce
1 tablespoon lime juice
1/2 teaspoon garlic, minced
2 hot red chili peppers, sliced
1 teaspoon sugar

Steps:

  • Place a steamer or colander coated with cooking spray over a pan of boiling water and cover with the lid or firmly sealed with foil.
  • In a large bowl, combing the egg, chicken mince, breadcrumbs, ginger, lemongrass and coriander.
  • Mix well using your hands.
  • Form spoonfuls of the mixture into 24 balls.
  • Place in the steamer, cover and cook for 10 mins or until cooked though.
  • While chicken balls are cooking, combine the fish sauce, lime juice, garlic, chili and sugar.
  • Place in small bowls for dipping.
  • Remove the balls from the steamer and serve accompanied by the dipping sauce.
  • Enjoy.

1 egg
1 teaspoon paprika
1 teaspoon onion powder
1 Tablespoon sugar
1 teaspoon garlic powder
½ teaspoon pepper
1 fresh pineapple (cubed)
1 Tablespoon honey
⅓ cup Teriyaki sauce

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl combine your chicken, egg, paprika, onion powder, sugar, garlic powder, and pepper.
  • Mix until well combined (mixing with hands or a food processor works best) and roll into one inch balls.
  • Place on a cookie sheet and bake for 15 minutes, or until they are all the way cooked through and not pink in the middle.
  • Remove the meatballs from the oven and place on a pan rubbed with olive oil.
  • Let the meatballs brown on all sides, then remove from heat and set aside.
  • Slice a fresh pineapple. Using the same pan, brown the pineapple. I drizzled honey over my pineapple to give it a sweeter taste, but this is optional.
  • Cook until pineapple is browned.
  • Using a toothpick, pierce a pineapple chunk and a meatball and place on plate.
  • Drizzle teriyaki sauce over the kabob.
