My grandmother makes this every Christmas morning, and it's amazing. My husband hates eggs and he always has seconds, even my 1- and 2-year-old gobble this up. Perfect for breakfast, lunch, or dinner! Ingredients are forgiving; add your favorites or spice it up. Just make sure your veggies are not going to water it down.

1 pound sausage, casings removed
2 cups sliced fresh mushrooms
8 eggs, beaten
10 cups cubed, day-old bread
3 cups whole milk
2 cups shredded Cheddar cheese
1 ½ cups cubed Black Forest ham
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 tablespoons all-purpose flour
2 tablespoons mustard powder
1 teaspoon salt
2 teaspoons butter, melted
2 teaspoons dried basil

Steps:

  • Generously grease a 9x13-inch casserole dish.
  • Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.
  • Cook and stir mushrooms in the same skillet over medium heat until liquid has been released and mushrooms are lightly browned, 5 to 10 minutes; drain.
  • Mix mushrooms, eggs, bread, milk, Cheddar cheese, ham, spinach, flour, mustard powder, salt, butter, and basil together in a large bowl; pour over sausage. Cover casserole dish and refrigerate, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until a knife inserted into the center of the strata comes out clean, 60 to 70 minutes.

If you want to make the most delicious Strata recipe, you need to make this Instant Pot Breakfast Casserole! With just six ingredients you can make this delicious spinach and cheese strata.

6 Eggs
1 cup Half and Half (or milk)
1 teaspoon Kosher Salt
1 teaspoon Ground Black Pepper
4 slices Sourdough Bread (cut into cubes)
3 cups Spinach (chopped)
1 cup Green Onions (chopped)
1 cup Shredded Cheese

Steps:

  • Grease a 6 x 3 springform pan and set aside. Grease it very well, or use a circle of parchment paper to line the bottom of the dish for extra easy removal.
  • In a large mixing bowl, whisk together the eggs, half and half (or milk), salt and pepper. Stir in bread, cheese, spinach, and green onions.
  • Pour the mixture into the greased pan.
  • Put 1.5 cups of water into the Instant Pot. Place a steamer rack in the pot. Place the bread and egg mixture on the rack.
  • Close the lid. Press PRESSURE COOK and cook on HIGH PRESSURE for 15 minutes. Allow the pot to rest undisturbed for 10 minutes, and then release all remaining pressure.
  • Carefully remove the pan from the rack and ensure the strata is cooked through. You may need to use a paper towel to pat the top of the frittata dry. Allow it to cook a little from the residual heat before releasing the sides of the springform pan.
  • Serve and enjoy!

The fresh bounty of vegetables at my local farmers market was the inspiration for this breakfast dish. This recipe uses a set of stackable stainless steel insert pans which can be found on Amazon.

4 slices bacon, chopped
½ cup chopped onion
1 ½ cups chopped spinach
4 eggs
1 cup shredded Swiss cheese
¾ cup half-and-half
¼ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon lemon pepper
cooking spray

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Cook bacon, turning occasionally, until crisp, 5 to 7 minutes. Remove bacon from pot and drain grease.
  • Add onion to the pot; saute until browned, about 5 minutes. Remove onion. Saute spinach until wilted, 2 to 3 minutes. Remove spinach and squeeze out excess liquid. Clean out Instant Pot® liner.
  • Beat eggs in a medium bowl until yellow and frothy. Add onion, spinach, Swiss cheese, half-and-half, salt, garlic powder, lemon pepper. Stir in 1/2 of the cooked bacon.
  • Spray stackable insert pans with cooking spray; divide egg mixture between the pans. Fill liner with 1/2 cup water. Cover pans with a lid and place inside the liner. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Remove casserole from pans and garnish with remaining bacon.

Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Butter or nonstick cooking spray, for greasing pan
6 large eggs
1 1/2 cups milk
1/2 cup half-and-half
Pinch of ground nutmeg
Pinch of cayenne pepper
Kosher salt
1/2 teaspoon freshly ground black pepper
3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
  • Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
  • Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

BREAKFAST STRATA TOPPED WITH POTATO CHIPS



Breakfast Strata Topped With Potato Chips image

I got this recipe back in the 70's from a co-worker. I have been making it ever since. Makes the perfect casual brunch entree for a crowd. Serve it with fresh fruit and your all set! I use a large aluminum foil baking pan. Make the night before or a minimum 4 hours ahead. Be sure to take out of the fridge an hour before baking.

12 ounces sharp cheddar cheese, grated
1 lb bacon, cooked and crumbled
16 slices hearty white bread, may use less depending on an size
8 extra large eggs
3 cups milk, any type
1/2 teaspoon dry mustard
1 cup butter
2 cups potato chips, crushed, set aside

Steps:

  • Assemble the night before.
  • Grease pan with a light coat of nonstick cooking spray or butter.
  • Trim the crusts off the bread slices. Butter on one side of bread.
  • Place buttered slices of bread **butter side up on the bottom of the baking dish.
  • Sprinkle with all the bacon and cheese.
  • Top with layer of buttered bread slices, butter side up.
  • Beat eggs, milk and mustard together.
  • Pour over bread, gently press slices into the egg mixture to coat. Cover with foil and refrigerate overnight.
  • In the morning:.
  • One hour before baking, remove from fridge and bring to room temperature. (cuts down on the baking time).
  • Preheat oven to 350°.
  • Bake COVERED for 40 minutes. After 40 minutes remove foil.
  • Continue baking for approximately 10-15 minutes until center is done and top is lightly browned. *check fro doneness like you would a cake.
  • Top with crumbled potato chips, bake for an additional 5 minutes.
  • Let stand for 5-10 minutes before slicing into squares.
  • NOTES:
  • To halve the recipe, use an 8x8 pan and approx 6-8 slices of bread.
  • 9x12 pan, use approx 12 slices.
  • Large aluminum baking pan, use 18 slices.

8 large eggs
2 cups whole milk
1 cup buttermilk baking mix (Bisquick)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Butter 13x9 baking dish.
  • Arrange broccoli and half of green onions evenly over bottom of dish. Sprinkle with smoked salmon, Monterey Jack cheese, cream cheese pieces and remaining half of green onions. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Preheat oven to 375.
  • Mix eggs, milk, baking mix, salt and pepper in blender until smooth (or in bowl using beaters).
  • Pour batter over salmon mixture.
  • Bake casserole until just set in center, about 30 minutes.
  • Let cool 10 minutes before serving.
