6-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Cajun seasoning
1-1/2 cups cold water
1/2 teaspoon canola oil
2-1/2 cups sweetened shredded coconut
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
Additional oil for deep-fat frying
1/2 cup orange marmalade
2 tablespoons honey

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in water and oil until smooth. Place coconut in another bowl. Dip shrimp into batter, then coat with coconut. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 3 minutes or until golden brown. Drain on paper towels., In a small saucepan, heat marmalade and honey; stir until blended. Serve with shrimp.

  • Heat oil in deep fryer or deep skillet to 325*.
  • Meanwhile, mix flour, salt, ginger, and pepper.
  • Beat egg whites, just until foamy.

1 pound large shrimp, peeled and deveined
⅓ cup cornstarch
1 teaspoon salt
¾ teaspoon cayenne pepper
2 cups flaked sweetened coconut
3 egg whites, beaten until foamy

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Lightly coat a baking sheet with cooking spray.
  • Rinse and dry shrimp with paper towels. Mix cornstarch, salt, and cayenne pepper in a shallow bow; pour coconut flakes in a separate shallow bowl. Working with one shrimp at a time, dredge it in the cornstarch mixture, then dip it in the egg white, and roll it in the coconut, making sure to coat the shrimp well. Place on the prepared baking sheet, and repeat with the remaining shrimp.

1/2 cup orange marmalade
4 teaspoons rice wine vinegar
1/2 teaspoon crushed red pepper flakes
peanut oil (for frying)
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
2/3 cup water
2 cups shredded sweetened coconut
1/2 cup breadcrumbs
1 lb shrimp, peeled and deveined

Steps:

  • Dipping Sauce:.
  • Add all the sipping sauce ingredients to a pot on a low temperature. Heat for 10 minutes, making sure you stir ingredients every few minutes.
  • In a large, heavy pot, heat 2-inches of the peanut oil to 325degrees f. Or use a deep fryer.
  • Meanwhile in a large bowl, whisk together the flour, salt, and baking powder. Add the water and whisk until smooth. Let the batter stand for 15 minutes.
  • In a wide shallow bowl, toss the coconut and bread crumbs together.
  • Put the shrimp into the batter. Remove the shrimp, 1 at a time, and dredge in the coconut mixture, pressing to help the cocnut adhere.
  • Fry the shrimp in batches in the hot oil for 1 to 2 minutes or until brown. Use a slotted spoon to transfer the shrimp to a baking sheet lined with paper towels.

½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
¼ cup cornstarch
2 eggs
½ cup sweetened shredded coconut, or more as needed
½ cup unsweetened shredded coconut, or more as needed
1 pound jumbo shrimp, peeled and deveined

Steps:

  • Fill a 9-inch cast iron skillet with 1/2 inch of peanut oil. Clip a thermometer onto the side of the skillet and turn heat to medium-high; heat oil to 350 degrees F (175 degrees C). Place several layers of paper towels on a platter; set aside.
  • Whisk salt, black pepper, and cayenne pepper in a small bowl until even in color. Add cornstarch and mix until blended. Whisk eggs thoroughly in a second bowl. Mix sweetened and unsweetened coconut in a third bowl until well combined.
  • Pat shrimp dry. Dredge each shrimp in the cornstarch mixture until thoroughly coated; set on a plate. Repeat with remaining shrimp.
