Everybody has at least one tuna noodle recipe. For me tuna noodle is something I do when I want a quick all in one meal. I needed a quick meal one night but the only pasta I had in the house was orzo. So, this dish was born. I tried to reduce the fat as much as possible and to pack in a bunch of veggies without them being overly noticed by the picky eaters.

1 1/2 cups orzo pasta
2 (12 ounce) cans tuna, drained
1/2 cup onion, diced
3/4 cup mushroom, sliced
1 small carrot, shaved into ribbons and then ribbons cut in half width wise
1 cup corn, from a can
1 cup baby peas, from a can
1 (10 1/2 ounce) can 98% fat-free condensed mushroom soup
1/3 cup nonfat milk
1 teaspoon garlic powder
1 teaspoon dried parsley
1/4 teaspoon ground pepper
1/2 cup low-fat swiss cheese, cubed

Steps:

  • Cook orzo according to packet directions. Mine says to cook for 15 minutes.
  • Meanwhile heat a large skillet and either spray with cooking spray (as I do) or add a bit of oil.
  • Saute onions and mushrooms for about 2 minutes just until the onions start to soften.
  • Stir in the corn and cook for another minute or so just to warm through.
  • Add the tuna, peas and carrot ribbons.
  • Add the can of soup to the pan and stir so that all the vegetables are coated.
  • Add milk and stir until the sauce thickens up slightly.
  • Add in the garlic powder, parsley and ground pepper.
  • By now the orzo should be finished cooking. Drain it well and stir into the pan containing the vegetables and soup mix. Stir really well so that the orzo and is well blended with the mixture.
  • Add cubes of cheese and stir until the cheese has melted and evenly distributed itself amongst the dish.
  • Serve.

2 tablespoons extra-virgin olive oil
1 clove garlic, thinly sliced
4 scallions, thinly sliced
1 14-ounce can no-salt-added diced tomatoes
1/4 teaspoon dried oregano
1 1/2 cups orzo
Kosher salt and freshly ground pepper
1 14-ounce can cannellini beans, drained and rinsed
1 small green bell pepper, thinly sliced
1 5-ounce can solid white tuna packed in water, drained
Juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and half of the scallions and cook, stirring, 1 minute. Add the tomatoes and oregano and cook, stirring, 3 minutes. Stir in 21/2 cups water, the orzo, 1/2 teaspoon salt, and pepper to taste. Bring to a boil, then reduce the heat to medium low and stir in the beans. Cover and simmer until most of the liquid is absorbed and the orzo is tender, about 10 minutes.
  • Add the bell pepper and continue cooking, covered, until tender, about 3 minutes. Stir in the tuna, lemon juice and parsley. Season with salt and pepper. Top with the remaining scallions.

This stovetop tuna noodle casserole is a healthier take on a comfort food classic. It's gluten-free, dairy-free, and can be made paleo and AIP.

1 1/4 cup coconut milk (I use this)
2 1/4 cup chicken broth
1 tbsp arrowroot starch
2 tbsp avocado oil
1/2 white onion, diced
3 cloves garlic, minced
1 cup broccoli florets
3/4 tsp salt
1/4 tsp black pepper (omit for AIP)
2 5oz cans of tuna
2 cups gluten-free shell pasta (Jovial rice pasta for gluten-free, or jovial cassava pasta for paleo/AIP)
1-2 tbsp nutritional yeast
2 tbsp parsley, chopped

Steps:

  • Using a large bowl, stir the coconut milk, broth, and arrowroot. Set aside.
  • Use a large, deep pot heat the avocado oil over medium heat. Add the onion and garlic and saute for 3-4 minutes or until lightly translucent. Add the broccoli and saute for another 3-4 minutes or until the broccoli is lightly soft and bright green. Season with salt and pepper.
  • Drain the canned tuna and add to the pot. Using a wooden spoon to crumble the tuna into small chunks.
  • Pour in the broth mixture and pasta. Stir well to combine. Turn the heat to high and bring to a boil. Reduce the heat, bringing the pot to a simmer. Allow to simmer for about 10-12 minutes, stirring often, until the pasta is cooked. When the pasta is just about done, stir the pot continuously for 1 minute to allow the sauce to reduce. See notes in the pasta needs more time to cook to your liking.
  • Stir in nutritional yeast to taste and serve topped with parsley.

This recipe is as easy as making a box of macaroni and cheese (almost), and it's a one dish comfort meal. I've been making this as long as I can remember, and don't think I ever had a recipe for it. When I made it this week, I looked to see if it was posted, and I could only find recipes with "cream of whatever" soup or sour cream, and most of them required baking in the oven. This recipe is creamy and delicious from the simple bechamel (white) sauce. This is a flexible recipe, too. I love to use a generous amount of a mixed pepper blend, freshly ground, for seasoning because I don't like bland food. I've also used lemon pepper seasoning, and/or freshly snipped chives and parsley. It's up to you to choose your favorite seasoning or herbs to go nicely with the tuna. Tuna noodle casserole is one of the most popular American casseroles, and is common is any region of the U.S.

2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
1 teaspoon kosher salt
1/2 teaspoon ground pepper, less if you prefer less spice
1 -2 tablespoon of chopped fresh herbs, such as chives (optional) or 1 -2 tablespoon parsley (optional)
2 (6 ounce) cans tuna, drained (I prefer albacore solid packed in water)
1 1/2 cups frozen peas
8 ounces wide egg noodles, cooked

Steps:

  • Cook the egg noodles.
  • During the last few minutes add the frozen peas to the simmering noodles; then drain.
  • Meanwhile, melt the butter in a medium saucepan over medium heat.
  • Whisk in the flour, and continue whisking for about 2 minutes or until the flour butter mixture starts to turn a beige color (a very light colored roux).
  • Continue whisking and slowly add 1 of the cups of milk, incorporating the liquid as you whisk; then add the remaining 1 cup of milk.
  • Let it come to a gentle boil, stirring regularly to keep from burning on the bottom of the pan as it thickens.
  • When it's thick enough to coat a spoon and leave a strip behind where you ran your finger through the coating on the spoon, it's ready to add the drained tuna.
  • Break up the solid tuna chunks with a fork and mix throughout the sauce.
  • Add the salt, pepper, and any seasonings or herbs.
  • Pour the tuna sauce over the noodles and peas, and serve.

1/2 cup celery, sliced

1 (6 ounce) can tuna (Can be omitted for vegan diets)
1 (15 ounce) can sweet peas
1 (4 ounce) can mushrooms (optional)
1 (10 ounce) can cream of mushroom soup
1 (16 ounce) bag pasta, of your choice

Steps:

  • Heat water to it's boiling point.
  • Once boiling, place pasta or noodle in water and boil for 6 minutes.
  • Strain noodles and place back in original pot.
  • Place all canned ingredients into your noodles making sure to drain the liquids from the peas, mushrooms and tuna and stir.

2 tablespoons butter
1 large onion, minced
2 tablespoons flour
