SKILLET CHICKEN LASAGNA

12 ounces bow tie pasta
2 tablespoons olive oil
2 boneless, skinless chicken breasts, sliced or diced
1 tablespoon Italian seasoning or herbes de Provence
Salt
1 medium onion, diced
2 cloves garlic, minced
1 cup low-sodium chicken broth
1 jar good-quality marinara sauce (14 to 16 ounces)
1 teaspoon red pepper flakes
1 cup grated mozzarella cheese, plus more if needed
1/2 cup whole milk ricotta cheese, plus more if needed
1/4 cup grated Parmesan, plus more if needed and for serving
12 fresh basil leaves, cut into chiffonade or chopped, plus more if needed and for serving

Steps:

  • Cook the pasta according to the package instructions; drain and set aside.
  • Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
  • Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes.
  • Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.

1 medium onion, cut in half, sliced (1/2 cup)
1 jar (26 to 30 oz) chunky tomato pasta sauce (any variety)
1 jar (4.5 oz) sliced mushrooms, drained
1 medium green bell pepper, cut into thin bite-size strips
3 cups uncooked mini lasagna (mafalda) noodles or medium egg noodles (6 oz)
2 1/2 cups water
1/2 teaspoon Italian seasoning
1 cup shredded Italian-style cheese blend or mozzarella cheese (4 oz)
Chopped fresh basil, if desired

Steps:

  • In 12-inch skillet or 4-quart Dutch oven, cook sausage and onion over medium-high heat, stirring occasionally, until sausage is no longer pink; drain.
  • Stir remaining ingredients except cheese and basil into sausage. Heat to boiling, stirring occasionally.
  • Reduce heat to medium; simmer uncovered about 10 minutes or until pasta is tender. Sprinkle with cheese. Let stand 2 minutes. Garnish with basil.

1 jar (24 ounces) pasta sauce
2 cups water
1 large sweet red pepper, chopped
1/4 cup Italian salad dressing
1 teaspoon garlic powder
10 uncooked lasagna noodles, broken into 2-in. pieces
1-1/2 cups 2% cottage cheese
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in pasta sauce, water, red pepper, dressing and garlic powder. Bring to a boil; stir in noodles. Reduce heat to medium-low. Cook, covered, until noodles are tender, 10-15 minutes, stirring occasionally. , Stir in cottage cheese; heat through. Remove from heat; top with mozzarella cheese. 1/3 cup onion, finely chopped
10 ounces enchilada sauce (1 10 oz can)
1 -3 teaspoon cumin, ground
1 1/2 cups chicken breasts (cooked and shredded or finely chopped)
4 flour tortillas, for burritos (8 inch)
1 cup monterey jack pepper cheese, shredded
1 cup cheddar cheese, shredded
1/3 cup jalapeno (sliced, from a jar)
green chili (chopped, from a jar)
sour cream (optional)

Steps:

  • In a medium size saucepan, melt butter over medium heat. Add onion; cook 3-5 minutes, stirring frequently, until tender. Reserve 1/4 cup enchilada sauce; add remaining sauce to the onion. Stir in cumin and chicken. Reduce heat to medium-low; simmer uncovered for 5 minutes.
  • Lightly grease 10 inch skillet with butter or cooking spray; heat over low heat. Place 1 tortilla in skillet; top evenly with pepper jack cheese and second tortilla. Spread chicken mixture over second tortilla; top with third tortilla. Sprinkle evenly with cheddar cheese, top with jalapeno and green chilies. 1 teaspoon vegetable oil
8 ounces fresh mushrooms, sliced
2 cups shredded carrots
1/2 cup sliced onion
1 -2 garlic cloves, minced or 1/2-1 teaspoon instant minced garlic
3 cups water
1 (14 1/2 ounce) can no-salt-added whole tomatoes, undrained, pureed
1 (8 ounce) can no-salt-added tomato sauce
1 teaspoon salt-free Italian herb seasoning, crumbled
1 teaspoon dried basil, crumbled
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon black pepper
4 dried lasagna noodles or 6 dried no-boil lasagna noodles, broken into 1 inch pieces
