ESCALLOPED FRUIT AND ICE CREAM

Steps:
- Heat a nonstick skillet over moderate heat. Add butter and sliced fruit and saute for 5 minutes until the slices of fruit are tender. Season fruit with nutmeg and cinnamon as it sautes. Sprinkle in brown sugar and cook 2 or 3 minutes longer to coat fruit.
- Spoon the warm fruit over vanilla ice cream and garnish with a couple of cookies or wafer sticks.
- Mix and match all apple, all pear, use whichever fruits you have on hand, you can even saute sliced peaches or sliced banana and still use the method provided in this recipe.

- In a large bowl, combine the apples, sugar, cinnamon and cloves. Transfer to a greased 13x9-in. baking dish. Dot with 2 tablespoons butter. Bake, uncovered, at 325° for 25 minutes or until apples are crisp-tender. , Meanwhile, in a small skillet, melt remaining butter. Add bread crumbs; cook and stir for 3-5 minutes or until crispy and golden brown. Sprinkle over apple mixture. , Bake 10-15 minutes longer or until apples are tender. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Combine brown sugar, flour, cinnamon, nutmeg, and cloves together in a large bowl; add apples and toss to coat. Stir raisins, walnuts, and butter into apple mixture. Spread apple mixture evenly in prepared baking dish. Combine milk and vanilla extract together in a bowl; pour evenly over apple mixture. Cover baking dish with aluminum foil.
- Bake in preheated oven until apples are easily pierced with a fork, about 30 minutes.
- Remove foil and stir apples. Bake until apples are very soft and mixture is bubbly, about 30 minutes more.

STOVE-TOP SCALLOPED APPLES
This recipe just screams for ice-cream! I actually make this as a side dish to serve with Pork Roast but the leftovers can easily become dessert. The sauce in this recipe is thin and we prefer it that way, but if you like a thicker sauce, just add one tablespoon of cornstarch mixed in with the brown sugar. Enjoy!!

- Melt butter in a large heavy saucepan over medium heat.
- Add apples and cook approximately 5 minutes, stirring often to coat apples and prevent sticking.
- Add apple cider to the pan.
- Sprinkle brown sugar, cinnamon, nutmeg and ginger over apples and continue stirring to coat apples.
- Add vanilla and wine, if using.
- Once sugar has melted and liquid in the bottom of the pan comes to a boil, reduce heat to low.
- Continue cooking on low simmer for about 20 minutes or until apple slices are tender.
- Remember to stir frequently to avoid sticking.

SCALLOPED YAMS AND APPLES
I used to waitress at a Stouffer's in Columbus, Ohio where they served this. It was so good, I decided to create my own version and it's been a part of our Thanksgiving and Christmas meals for over 25 years now!

Steps:
- In a 1 quart buttered (or use Pam) casserole, alternate layers of potatoes and apples.
- In a medium saucepan, melt butter, stir in brown sugar and spices.
- Add half of reserved sweet potato liquid and bring to a boil.
- Dissolve cornstarch in remaining potato liquid and add to pan.
- Lower heat and simmer while stirring until thickened.
- Pour over layered potatoes and apples until top layer is almost covered.
- Bake, covered, at 350°F for 1 hour.
- You may uncover during the last 15-20 minutes of baking time if the sauce needs thickening.
- This freezes well.
