HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Provided by Cookie and Kate

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

3/4 cup vegetable oil
1/2 cup good honey

THE BEST GRANOLA

The Best Granola image

For our best granola, we wanted a crunchy, clustery version that wasn't too sweet. We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

Time 2h

Yield 5 cups

Number Of Ingredients 9

Nonstick cooking spray
3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.

  • In a medium bowl, combine the oats, walnuts, coconut flakes, if using, cinnamon, and salt. Drizzle in the coconut oil and maple syrup and add the almond butter. Stir until combined. Scoop the granola onto the baking sheet and press the mixture into a 1-inch-thick oval. This will encourage clumping.
  • Bake for 15 minutes, rotate the pan halfway, and use a fork to gently break the granola apart just a bit. Bake for 15 minutes more, or until golden brown. Sprinkle with dried cranberries, if desired. Let cool for 15 minutes before serving.

HOW TO MAKE GRANOLA FROM SCRATCH - DIY GRANOLA …

From prevention.com
  • Ace your base. Oats are the classic pick for a granola base (and they’re packed with gut-filling fiber, Newgent notes), but you can mix up your granola with tons of different options.
  • Add a touch of sweetness and fat. In order for the granola to bake into one crunchy sheet, fat and sugar are essential to hold everything together. Most recipes suggest a one-to-one ratio of an oil to sweetener, and this often comes out to 1/2 cup of sweetener and 1/2 cup of oil.
  • Customize your mix-ins. Perhaps the best part about homemade granola is all the delicious mix-ins you can use to customize your crunch. Add 2 to 3 cups of your favorite mix-ins, or more if opting for a grain-free option.
  • Bake until toasty and golden. Granola recipes vary, so it’s always best to find one you like and adjust ingredients from there. As a general rule, you can preheat your oven to 325° Fahrenheit and cook granola for 30 minutes on a sheet pan lined with parchment paper, mixing the granola and rotating the pan halfway through.
  • Enjoy! The easiest of all the steps is to dig in and enjoy! It’s important to keep in mind that though you’ve created your dream granola, packed with satiating fiber, healthy fats, and fantastic flavors, it should be enjoyed in moderation.
