2 ounces dried mung bean thread noodles
10 dried shiitake mushrooms
1 cup warm water
1 1/2 pounds vegetables, such as carrots, asparagus, green beans or snow peas
1/2 cup bamboo shoots
1 bok choy, thinly sliced
1/2 cup broccoli florets
1 small red pepper, julienned
3 tablespoons sesame or peanut oil

Return the vegetables to the wok, add the diluted cornstarch, and cook until the vegetables are glazed. Toss with the dark sesame oil and serve.

ASIAN VEGETABLE STIR-FRY WITH SUGAR SNAP PEAS AND BABY BOK CHOY

Asian Vegetable Stir-Fry With Sugar Snap Peas and Baby Bok Choy image

This is a recipe I found at Canadian Family and have adapted to my taste The addition of the cooked pork tenderloin is optional. Without the pork it makes an excellent vegetarian meal. It is quick and healthy. Serve over brown rice for a hearty meal.

KID FRIENDLY STIR FRY VEGETABLES & NOODLES

Kid Friendly Stir Fry Vegetables & Noodles image

This one came to being late one evening when my son asked for noodles for dinner and I needed to make something quick. The veg can be swapped for things you know your child likes. Adjust quantities according to how many people you are feeding.

Provided by Food_Addict

Categories     Lunch/Snacks

Time 15m

Yield 2-4 serving(s)

Number Of Ingredients 11

ribbon noodles (as many nests as needed)
1 large carrots or 2 medium carrots, sliced very thinly
1 onion, chopped into very small strips
1 red pepper, sliced thinly
1 cup peas
1 cup sweetcorn
1 (500 g) packet quorn pieces, peices (optional, chilled or frozen) (optional)
olive oil, for stir fry
butter, small knob for dressing noodles
ground pepper
sweet chili sauce (or similar)

Steps:

  • Place pan of water on to boil. Whilst it's heating prep your veg.
  • Just before water for the noodles hits boiling point put a wok or large heavy based frying pan to heat as hot as you can possibly get it and had about a tablespoon (15ml) of olive oil. Place noodles in water and boil for roughly 2 minutes (please check instructions on your noodles first).
  • When oil is hot add the quorn (if using), carrot and onion to the wok and toss (or stir). Separate noodles with a fork and test a strip, if not ready keep them simmering. Add red pepper, peas and sweetcorn to the wok and stir. Add a teaspoon of chilli sauce and a teaspoon of water to wok and stir.
  • Take noodle of the heat and drain. Add some butter and a good twist of black pepper to the noodle and toss to coat all the noodles with butter. Place in a serving bowl. Take stir fry off heat and add to separate serving bowl, add some spoons and instruct starving children to help themselves. Serve.

VEGETABLE STIR-FRY WITH CHINESE NOODLES

Vegetable Stir-Fry With Chinese Noodles image

This is something that I do mainly for my father because he really loves Chinese food. If you can't find Chinese noodles you can substitute Thai noodles. Please don't use rice noodles because they are too thin and white and will hardly be noticed. Also, the amount of soya sauce is a bit high in this recipe, so feel free to reduce as much as possible. The amount given here will only be a suggestion and really reflects my family's tastes and no one else's.

Provided by Studentchef

Categories     Vegetable

Time 35m

Yield 8-10 serving(s)

Number Of Ingredients 12

1 lb chinese noodles
1 large onion, cut into half moons
1 tablespoon olive oil
3 cups white mushrooms, sliced
2 cups broccoli, chopped
1/3 lb yellow bean sprouts
1/2 lb sugar snap pea
1 1/2 teaspoons garlic powder
salt and pepper
2 tablespoons soya sauce
2 teaspoons balsamic vinegar
1/2 teaspoon sherry wine (optional)

Steps:

  • In a large frying pan or wok add oil and heat on medium high. Add onions and stir fry for 3 minutes.
  • In the meantime boil the Chinese noodles (this should take five to ten minutes).
  • Add mushrooms and stir fry for another 7 minutes or until mushrooms begin to cook. Add the salt, pepper, and garlic powder.
  • Add the yellow bean sprouts and the sugar snap peas and continue to stir fry.
  • Drain the noodles and add them to the frying pan or wok with the other vegetables. Add the soya sauce, balsamic vinegar and the sherry wine if using. Cook for another 5 minutes.
  • Serve hot or warm. This reheats very well.

  • Whisk together sauce ingredients in a small bowl and set aside. The chili garlic sauce and red pepper flakes will determine the spiciness. If you'd like the sauce less spicy, add less of each then adjust to taste later by adding more if desired.
  • Cook noodles according to package directions as they will vary by type. My ramen-style soba noodles were ready in 3 minutes. Once tender, drain noodles and set aside.
  • Heat sesame oil (or olive/avocado oil if preferred) in a large skillet or wok over medium high heat. Add bell pepper, carrot, and green beans. Cook, stirring frequently until tender.
