100 g broccoli
100 g cauliflower
100 g carrot
100 g snow peas
100 g capsicums
1 teaspoon salt
3/4 teaspoon sugar
Dash ground white pepper
1 tablespoon oyster sauce
1/4 teaspoon cornflour
2 tablespoons water
1 tablespoon chopped garlic
1 tablespoons vegetable oil

Steps:

  • Cut the broccoli and cauliflower into florets.
  • Peel and cut the carrots into wedges.
  • Remove the stings of the snow peas.
  • Cut the capsicums into triangular pieces
  • Blanch the vegetables. Drained and set aside.
  • Heat up the vegetable oil in the wok.
  • Saute the garlic until fragrant over low heat.
  • Add the salt, sugar, ground white pepper, oyster sauce, cornflour and water. Cook until the sauce becomes translucent.
  • Add the blanched vegetables. Stir-fried over high heat until it turns fragrant.
  • Dish out and serve.

1/2 cup cold water

6 large mushrooms, sliced

Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

1 ounce dried Chinese mushrooms (donggu or doong gwoo, similar to Japanese shittake but more earthy and smoky)
2 1/2 ounces broccoli florets, cut through their stems into thin slices (1 cup)
1 lb napa cabbage or 1 lb kale
2 ounces jicama, peeled & cut into 2-inch-by-1/4-inch strips
2 ounces bamboo shoots, drained rinsed & finely shredded
1 tablespoon peanut oil or 1 tablespoon bacon fat
1 tablespoon fresh ginger, peeled & grated
water (if needed)
1 1/2 teaspoons sesame oil
2 teaspoons rice wine or 2 teaspoons dry sherry
4 teaspoons light soy sauce
2 teaspoons dark soy sauce
1 teaspoon hawaiian salt

Steps:

  • In a small bowl, mix together the sauce ingredients and set aside.
  • Soak the mushrooms in hot water until they soften (15-20 minutes).
  • Rinse under cold running water to remove any sand and squeeze out excess water to drain.
  • With a sharp knife, remove the stems & discard.
  • Finely shred the caps; set aside.
  • Blanch broccoli in boiling water and drain.
  • Chop cabbage into long shreds, about 1/4-inch wide.
  • Preheat wok or large skillet over high heat until it is hot.
  • Add oil, wait until the oil gets very hot, almost smoking (the vegetables should sizzle during the entire cooking time); add ginger and cook for 20 seconds.
  • Add the mushrooms, broccoli, cabbage, jicama, and bamboo, and continue to stir-fry for 1 minute.
  • Add the sauce and continue to stir-fry until broccoli and cabbage are tender (3 minutes), adding about a tablespoon of water, if needed, to keep moist.
  • Spoon onto a platter, sprinkle with sesame oil, and serve immediately.

Steps:

  • Heat the oil in a large pan over medium high heat. Add the carrots and mushrooms and cook for 4-6 minutes or until tender.
  • Add the broccoli, bell peppers, snow peas, water chestnuts, baby corn and 2 tablespoons of water to the pan.
  • Cook for an additional 3-5 minutes or until vegetables are tender and water has mostly cooked off.
  • Add the garlic and ginger and cook for 30 seconds. Season the vegetables with salt and pepper to taste.
  • In a bowl, whisk together the vegetable broth, soy sauce and honey.
  • Pour the soy sauce mixture over the vegetables and cook for 30 seconds.
  • In a small bowl mix the cornstarch with a tablespoon of cold water.
  • Add the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.

1 cup brown rice (uncooked (I used long grain))
1 1/2 cups water
Pinch of salt
1 cup walnuts (coarsely chopped (I buy cheaper walnut pieces))
3 tbsp soy sauce
1 1/2 tsp coconut oil
1 small onion (finely chopped)
2 large portobello mushrooms (sliced)
2 broccoli crowns (including stems, coarsely chopped)
1 1/2 cups peas (frozen or fresh)
1 tsp sesame oil
4 green onion sprigs (chopped)

Steps:

  • Add rice, water and salt to a small pot and bring to a boil. Cover, reduce heat to low and cook for 30 minutes. Rice should be al dente. Or cook rice al dente your proven method (I use 1:1.5 ratio instead of recommended 1:2).
  • In the meanwhile, preheat non-stick wok on low-medium heat, add walnuts and cook until golden brown, stirring frequently. In the last 30 seconds, stir in 1/2 tbsp soy sauce and transfer to a medium bowl and set aside.
  • Return wok to low-medium heat, add 1/2 tsp coconut oil, onions and cook until translucent, stirring occasionally. Transfer to a bowl with walnuts.**
  • Increase heat to high, add 1/2 tsp coconut oil, mushrooms and cook until golden brown, stirring frequently. In the last 30 seconds, stir in 1/2 tbsp soy sauce and transfer to the same bowl.
  • Add remaining 1/2 tsp coconut oil, broccoli and cook for a few minutes until softer but not overcooked. Transfer all ingredients from a bowl to the wok with broccoli; fluff rice with a fork and add to the wok; add peas, sesame oil, 2 tbsp soy sauce and green onions. 3 tbsp dark soy sauce
2 tbsp sweet chilli sauce
The zest of half a small lime
The juice of 1 lime about 3 tbsp
1/2 tsp rice wine vinegar
1 tsp toasted sesame oil
1 tbsp coconut oil
1/2 a medium onion (125g) (cut lengthways then sliced thinly)
1 red chilli pepper (1 level tbsp when chopped) (pith and seeds removed then finely chopped)
2 fat cloves of garlic (minced)
1 thumb size piece of ginger (20g) (peeled and finely grated)
1 red bell pepper (180g) (pith and seeds removed then sliced thinly)
280 g (or a small head) of broccoli (broken into florets)
50 g cashew nuts
175 g of noodles of your choice, we like wholewheat noodles
3 small spring onions (the white and some of the green part, finely chopped )
Sesame seeds for serving

Steps:

  • Whisk together all the marinade ingredients. Place the mushrooms in a large shallow dish then pour over the marinade, making sure to turn the mushrooms a few times so they are all coated in the marinade.Leave the mushrooms to soak up the marinade for about 10 minutes.
  • Cook the noodles according to the packet instructions.
  • In a large wok heat the oil over a medium heat. Add the onion and stir-fry for about 5 minutes. Turn up the heat then add the garlic, ginger and chilli pepper, stir-fry for about 2 minutes. Now add the pepper, broccoli and cashews and stir-fry for another 2 minutes. If the wok starts to get a little dry you may need to add a tiny bit more coconut oil here.
  • Now add the mushrooms and the marinade to the wok and stir-fry until the mushrooms are cooked about 4 or 5 minutes. Once the sauce is piping hot and the mushrooms are cooked add the noodles and toss until the noodles are covered in the sauce. Finally, add the spring onions.
  • Serve immediately and top with a sprinkling of sesame seeds and some more chopped spring onions.

  • To a large non-stick skillet, well-seasoned cast iron skillet, or wok, add the onions, garlic, sprinkle with salt, drizzle with olive oil, and cook covered over high heat for about 15 to 20 minutes, or until onions are caramelized and as browned, soft, and tender as desired. Stir mixture intermittently, especially towards the end of cooking, to ensure nothing burns.
  • While onions are cooking, chop and steam the broccoli. To a medium microwave-safe bowl, add the broccoli, cover with water, cover bowl with plasticwrap, and cook on high power for 3 to 4 minutes, or until broccoli is crisp-tender; don't overcook. Drain and set aside.

  • Add the onions, broccoli, stir to combine, and cook for about 1 minute, just enough to rewarm the onions and broccoli and coat with sauce.
  • Taste and if you think it needs a splash of apple cider vinegar, honey, salt, pepper, etc., add to taste.
  • Serve over a large handful of fresh kale (placing the hot stir fry on the kale allows it to wilt perfectly) or over a bed of rice. Stir fry is best warm and fresh, but leftovers will keep airtight in the fridge for up to 3 days and I enjoy leftovers chilled.

½ head Cabbage (sliced)
6 Shiitake Mushrooms (about a handful, sliced)
6 cloves garlic (chopped)
3 sprigs Green Onion (chopped)
2 tablespoon canola oil
2 tablespoon Soy sauce (light soy sauce)

Steps:

  • Gather the ingredients.
  • Heat 1 tablespoon of oil in your frying pan or wok. Add the tofu and fry until the edges are golden brown and crispy, about 5 minutes.
  • Make a well in the middle of your pan. Add the remaining 1 tablespoon of oil to the pan with the chopped garlic and green onion. Stir to combine the aromatics with the tofu.
  • Add the sliced cabbage and combine.
  • Add the sliced mushrooms and soy sauce. Combine the ingredients.
  • Add 2 tablespoons of water to the pan and cover with a lid. Allow the cabbage to steam until cooked, about 3 minutes.

150g/5.3oz pork (, sliced to thin bite size pieces (note 1))
5 dried medium size shiitake mushrooms (, rehydrated overnight (note 2))
2 shallots/scallions (, finely chopped)
1½ tbsp oil
½ tbsp sesame oil
2 tbsp soy sauce
2 tbsp sake
1 tsp vinegar
Salt to taste

Steps:

  • Remove the soft green/yellowish part of the cabbage leaves so that the white stem becomes a spear head shape. Cut the soft leaves to 4-5cm/1½-2" long.
  • Cut each white stem in half vertically, then slice each piece diagonally, perpendicular to the vertical cut, into large bite size pieces (see photo in the post, note 3).
  • Cut each shiitake mushroom into quarters or into three pieces (note 4).
  • Heat oil and sesame oil in a frying pan or a wok over high heat.
  • When it just starts smoking, add shallots and pork pieces. Stir fry until the pork is cooked through (about 1-1.5 minutes depending on the thickness of the pork).
  • Add soy sauce and sake to the pan/wok and stir vigorously (note 5), then add Chinese cabbage and shiitake mushrooms. Add a pinch of salt.
  • Stir to coat the sauce over the cabbage until the cabbage pieces become wilted.
  • Turn the heat off, add vinegar and quickly stir. Serve immediately.

  • If using, put the veg oil into the wok, then add the garlic and stir fry for a minute.
  • Add in chopped mushrooms and stir fry over a high-ish heat until water is released. If you're not using oil, you may need to add a splash of water to stop the garlic from catching or burning.
  • Pop the carrots and broccoli in, and continue stir frying for a couple of minutes.
  • Pour in the soy sauces and vegan Worcestershire sauce, the water and the sugar. Stir well - let the sauce boil, but only for around 30 seconds.
  • Add in the cabbage, then stir until it wilts down. Serve and enjoy! Optional garnishes can be added such as fresh coriander cashews, chopped red chilli and cashews.

Steps:

  • Heat a large wok over high heat. Add 2 tablespoons of the oil. When the oil is hot, add the ginger, garlic, and chili flakes and stir-fry just until they are aromatic, about 30 seconds. Scoop out the aromatics and set them aside.
  • Add the remaining oil to the wok. When it is hot, add the onion pieces and stir-fry until they turn glossy and bright, 1 to 2 minutes.
  • Add the bok choy and the Chinese broccoli stem pieces. Stir-fry 1 to 2 minutes more.
  • Add the long beans and the 1-inch scallion pieces. Continue stir-frying until they are bright green and glossy, 1 to 2 minutes more.
