PAN-FRIED GREEN BEANS AND ALMONDS
For this pan-fried green beans side dish, green beans are quickly pan-fried and tossed with fried almonds, sauteed garlic, and ground coriander.

Steps:
- Set a deep skillet over medium heat and fill halfway with vegetable oil. When it's hot but not smoking, add the almonds and fry until just golden and fragrant, about 1 minute. Using a slotted spoon, remove them to a paper towel-lined plate.
- Working in 2 or 3 batches, add the green beans to the oil and fry until tender and browned, 3 to 5 minutes. Remove the green beans with a slotted spoon, drain on a paper towel-lined plate, and then transfer to a serving plate.
- Carefully drain the frying oil from the skillet and add the olive oil. Place the skillet over medium heat, add the garlic, and cook until golden brown, about 2 minutes. Add the coriander and black pepper, season with salt, and warm everything until you smell the coriander toasting, about 1 minute. Turn the heat off, add the reserved almonds, and stir to combine. Sprinkle the mixture over the green beans and serve with lemon wedges.

- Cook green beans 5 minutes in 1-inch boiling water, covered. Drain beans and return pan to heat.
- Add oil and butter pat to the pan. Toss beans in oil and melted butter. Season beans with a little salt and transfer to a serving plate.
- Garnish green beans with toasted slivered or sliced almonds.
STRING BEANS WITH GARLIC
Steps:
- Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.
STIR-FRIED GARLIC GREEN BEANS
The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

- Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
- Set aside.
- Stir- Fry: In a large skillet or wok.
- Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
- Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.
- Add the sauce and continue stir-frying for 5 or 6 more minutes.

- Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
- Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. This recipe was published on the WW site last year. I made it for Thanksgiving dinner and everyone loved it. According to WW, a 3/4 cup serving is 1 point. Prep time includes snapping the fresh green beans. If you're faster than me or you're using frozen green beans, it won't take as long. For variety, you can substitute pine nuts for the almonds. Toast the pine nuts the same as the almonds.

BSD is a chef acronym you should know. It stands for blanch, shock and drain, and it applies to many vegetables that need precooking at restaurants. Blanching helps take the raw bite out of vegetables but keeps their texture. Once blanched, shocking in ice water stops the cooking process. Then draining removes any excess moisture and gets them ready for seasoning or sauce. This is a great technique for parcooking and holding all vegetables. It cooks the vegetable about 90 percent. Then all you need to do is finish cooking and season as you wish!

- Bring a large pot of salted water to a boil and prepare an ice bath. For the ice bath, use a lot of ice, add 1 teaspoon or so of kosher salt (which will make it a bit colder) and put a colander inside the bowl so that the ice stays separate from the beans and it's easy to drain the beans as soon as they are well chilled.
- Add the green beans to the boiling water and cook until tender-crisp, about 3 minutes. Ladle out 2 tablespoons (30 ml) of the water, then transfer the green beans to the ice bath using a wire mesh spider or tongs. Allow to chill completely, then lift the colander out of the ice bath, and dry the green beans thoroughly with kitchen towels or paper towels. This can be done ahead of time.
- In a medium skillet, heat the butter and almonds over medium heat and cook, stirring frequently, until the almonds are deeply browned and nutty, 2 to 4 minutes. Add the garlic and shallot and cook, stirring often, until lightly browned, about 2 minutes longer. Add the lemon juice, along with 1 to 2 tablespoons (15 to 30 ml) of the cooking water. Increase the heat to high and stir and shake the pan rapidly to emulsify, about 30 seconds. The sauce should have a glossy sheen and not appear watery or greasy. If it's still watery, continue to simmer and shake. If it looks greasy, add another 1 tablespoon (15 ml) of water. When the sauce is ready, remove from the heat.
- Add the green beans to the pan with the sauce and toss to coat and combine. Return to medium heat and cook, tossing, until heated through, about 1 minute. Season to taste with Maldon salt and pepper. Garnish with the lemon zest and serve immediately.
