CRISPY SQUID WITH GARLIC, CHILE, AND BASIL

4 eggs, lightly beaten
2 cups toasted bread crumbs
Kosher salt and freshly ground black pepper
1 pound small squid, cleaned, bodies cut into thin rounds, tentacles intact
1/2 teaspoon chile oil
2 cloves garlic, peeled and minced
3 yellow inner stalks celery, washed and sliced
1/2 lemon, halved lengthwise and sliced into thin half moons
1 quart frying oil
1/2 cup fresh basil leaves, stemmed, washed, dried and torn

Steps:

  • The lightly beaten eggs should be in one medium bowl and the bread crumbs in another. Season both the eggs and the bread crumbs with salt and pepper. Take the squid rings and tentacles and coat them with the egg. Remove and allow any excess egg to drip off, and then roll the pieces in the bread crumbs. Place them in a single layer on a baking sheet and refrigerate.
  • In a medium-size saute pan, heat the chile oil lightly. Add the garlic and season with salt and pepper. Take care not to brown the garlic but instead sweat it so that the liquid emerges and it becomes translucent. Add the sliced celery and stir to coat everything evenly. Cook for 1 minute. Stir in the lemon slices and set aside to cool.
  • Pour the oil into a heavy-bottomed pot (or alternatively, a deep fryer). Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the squid once they are cooked.
  • When ready to serve, drop the squid, in small batches, into the oil. Fry until crispy, turning on both sides with a slotted metal spoon, about 3 to 5 minutes. Drain them on the lined baking sheet. Season immediately with salt and toss with the basil leaves. Serve the garlic sauce on the side or drizzle over top. Serve immediately.

1/2 cup whole Thai basil, washed and dried
2 tablespoons peanut oil
1 tablespoon minced garlic
1/8 teaspoon crushed red pepper flakes
1 teaspoon salt (to taste)

Steps:

  • Dry the squid well. Cut vertically through the group of tentacles if it is large, otherwise leave whole.
  • Cut the squid body into rectangles, diamonds, or squares with no pieces being larger than 1 inch.
  • If the basil leaves are large, chop to about the same size pieces as the squid.
  • Mix the squid and basil together.
  • Heat wok or large skillet over high heat.
  • Lower the heat to medium, then add the peanut oil.
  • Swirl the oil and add the garlic. Stir once and return the heat to high before adding the squid-basil mixture.
  • Stir and add the red pepper. Stir frequently until the squid becomes opaque, less than one minute.
  • Begin tasting the squid and keep tasting until tender, about 1-3 minutes more. Add salt to taste.
  • Serve over rice.

1 pound whole squid, cleaned
1 cup milk
1 large egg
6 fresh basil leaves, chopped
Canola oil, for frying
2 cups all-purpose flour
2 teaspoons paprika
Sea salt and freshly ground black pepper
Lemon wedges, for serving
Smoked jalapeno aioli, for dipping, recipe follows
Tomato-basil sauce, for dipping, recipe follows

Steps:

  • Rinse the squid under cool water and pat dry with paper towels. Cut the body of the squid into 1/2-inch rings and trim the tentacles as necessary. Combine the milk, egg, and basil leaves in a bowl; mix with a fork until lightly beaten. Put the prepared calamari in the milk mixture and stick it in the refrigerator while getting everything else set up; it fries better if marinated and chilled for about 15 minutes.
  • Pour about 2 inches of oil in a fryer or large, heavy pot and heat to 375 degrees F. Mix the flour and paprika in a pie dish or plate; season with a fair amount of salt and pepper. Toss the calamari in the seasoned flour to coat. Fry for 1 to 3 minutes or until golden brown. Drain on paper towels and salt, to taste. Using a slotted spoon, transfer the fried calamari to paper towels to drain. Serve immediately with lemon wedges and dipping sauces.
  • Smoked Jalapeno Aioli:
  • 1 cup mayonnaise
  • 1 to 2 canned chipotle chile in adobo
  • 1 garlic clove, coarsely chopped
  • 1/2 lemon, juiced
  • 1 tablespoon chopped flat-leaf parsley
  • Pinch salt
  • Combine all ingredients in a food processor and blend for 1 minute to combine. Set aside to allow the flavors to marry. Serve as a dipping sauce with fried calamari.
  • Yield: 1 cup
  • Tomato-Basil Sauce:
  • 3 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • 4 fresh basil leaves, hand-torn
  • 1 (16-ounce) can crushed tomatoes
  • Pinch sugar
  • Kosher salt and freshly ground black pepper
  • Coat a saucepan with 2 tablespoons of the oil and warm over medium heat. Add the garlic and basil; cook, stirring, until soft. Add the crushed tomatoes and sugar; season with salt and pepper. Simmer the sauce for 10 minutes, stirring occasionally. Stir in the remaining olive oil. Serve as a dipping sauce with fried calamari.
  • Yield: 2 cups

A very, very fast dish, because the squid must be cooked only briefly to prevent toughness. So make your side dishes first; rice is the natural choice, and it will keep perfectly well over low heat while you stir-fry. Thai basil is so unlike Italian basil that they might as well be different herbs; not only does the Thai variety look different, but it is infinitely mintier. If you're using Italian basil, therefore, you might consider adding a small handful of mint leaves. See page 500 for information on Thai fish sauce (nam pla). If your squid hasn't already been cleaned, see page 98.

1 1/2 pounds cleaned squid, rinsed well

2 small fresh chiles, preferably Thai, stemmed, seeded, and chopped, or to taste, or crumbled dried chiles or hot red pepper flakes to taste
1/4 teaspoon ground coriander
1 tablespoon sugar
2 tablespoons nam pla
1 lime leaf, minced, if available
1/2 cup basil leaves, preferably Thai, roughly chopped if large
Salt to taste

Steps:

  • Dry the squid well with cloth or paper towels. Cut vertically through the group of tentacles if it is large; otherwise, leave whole. Cut the squid bodies into rectangles, diamonds, or squares, with no dimension greater than 1 inch. The pieces should be fairly uniform in size. Have everything else ready and at hand before you begin to cook.
  • Put a large nonstick skillet over high heat; add the oil and, when it shimmers, add the garlic, chiles, and coriander. Cook, stirring almost constantly, for 15 seconds. Raise the heat to high, add the squid, and cook, stirring occasionally, for about 3 minutes, just until it loses its raw look.
  • Lower the heat to medium and stir in the sugar, nam pla, lime leaf if you have it, and basil. Cook, stirring, for another few seconds, just until the basil wilts. Taste, add salt or more chile or nam pla if necessary, and serve.
  • Same technique, different ingredients: In step 3, stir in 1/4 cup water, 1 tablespoon go chu jang (page 591) or 1 tablespoon miso mixed with a pinch of cayenne, 2 tablespoons soy sauce, 1 tablespoon toasted sesame seeds (page 596), and 1 teaspoon dark sesame oil. Instead of basil, garnish with minced scallion.

This has to be one of my favourite Squid Recipes Be sure not to overcook the Squid as it will toughen...It doesn't take long at all to cook through to opaque.

Number Of Ingredients 11

600 g squid, cleaned, sliced,scored
2 Tbsp vegetable or peanut oil
4 clove garlic,finely sliced
2 large hot red chillies,finely sliced on the diagonal.
2 Tbsp shao hsing wine or dry sherry
2 Tbsp water
2 tsp white sugar
2 tsp sea salt
1 c finely sliced spring onions ie scallions
2 tsp lime juice
2 limes halved

Steps:

  • 1. Clean Squids and remove Skin.Then with a sharp knife open out tubes.Using a sharp knife score shallow,diagonal cuts on the inside of each squid in a criss cross pattern. Cut the scored Squid in half,then into 2 inch strips
  • 2. Heat 1 Tablespoon of the Oil in a Hot Wok until surface appears to shimmer slightly. Add Half the Squid and stir Fry for about 30 Seconds. Remove from Wok with slotted spoon and set aside.
  • 3. Add remaining Tablespoon of the oil to the hot wok and toss in remaining Squid and stir fry for 30 seconds as before.Do not remove from wok.
  • 4. Return reserved cooked squid to the wok together with the ginger, garlic and chilli and stir fry for 30 seconds stirring constantly to ensure garlic does not burn.
  • 5. Add the wine or sherry,water,sugar and salt and stir fry for 20 seconds.
  • 6. Toss in Spring Onions and stir fry for a further minute or until squid is just cooked through.
  • 7. Finally ..add a little Lime Juice and remove from heat.
  • 8. Arrange the Squid on a platter in a pile,garnish with some thinly sliced shards of fresh Red Chilli and serve with Lime Halves

  • Bring a pot of water to a boil. Add squid and boil for 30 - 40 seconds, till the surface turns white but the squid is not cooked through. Drain and set aside.
  • Heat a wok on medium high heat. When wok is heated, add 1 tablespoon vegetable oil, chili pepper, garlic and ginger. Give it a quick stir until fragrant, add mixed sauce from step 1 and keep stirring to avoid burning the sauce. When the sauce has reduced to half, after about 30 seconds, add boiled squid into wok and stir until squid is cooked through, in about 30 - 40 seconds. Remove from heat and place squid and sauce on a plate. Scoop 1 tablespoon of the sauce into a separate bowl for cooking the baby bok choy.
  • Heat the same wok on medium high heat, add the rest of the oil and swirl. Add the baby bok choy and stir a few times. Add the 1 tablespoon of sauce from step 3 and keep stirring, until baby bok choy is cooked through but still crisp. Remove from heat and place baby bok choy on a plate. Add the squid with all the sauce onto the bok choy.
