SPICY EDAMAME (SOY BEANS)



Spicy Edamame (Soy Beans) image

This is a fiery appetizer of savory and spicy edamame (soy beans) seasoned with garlic, sesame oil, chili oil, and Japanese 7-spice chili peppers.

Number Of Ingredients 7

1 pound frozen edamame (in shells)
1 teaspoon sesame oil
1 small garlic clove, finely chopped
1/2 to 1 teaspoon Japanese rayu (or chili oil), to taste
1/2 teaspoon Japanese shichimi togarashi (7-spice chili pepper), to taste
1 1/2 teaspoons Kosher salt
1/2 teaspoon red chili flakes, for garnish

Steps:

  • Gather the ingredients.
  • Cook frozen edamame (in their shells) in boiling water for 5 minutes.
  • Rinse quickly with cold water. Drain completely. Set aside, and allow edamame to dry off slightly. Use a paper towel if necessary to remove excess water.
  • In a large pan, heat sesame oil and chopped garlic over medium heat until fragrant.
  • Add Japanese rayu (chili oil) and cooked edamame (in their shells). Quickly stir-fry, then turn off heat.
  • Add shichimi togarashi (7-spice chili peppers) and salt. Gently toss.
  • Serve spicy edamame on a platter and garnish with red chili pepper flakes.

Number Of Ingredients 8

2 to 3 tablespoons vegetable oil
4 scallions, sliced, white and green parts separated
1 red bell pepper, diced
1 cup shelled edamame, thawed if using frozen
2 cloves garlic, chopped
2 large eggs
2 tablespoons low-sodium soy sauce, plus more if needed
2 cups cooked long-grain white rice

Steps:

  • Heat the oil in a large skillet. Add the scallion whites and bell peppers and cook until just starting to soften, a few minutes. Stir in the edamame and garlic, then cook for 30 seconds.
  • Break the eggs into the skillet and stir-fry them quickly to scramble them. Add the soy sauce. Add the rice and stir it around to cook it for a couple of minutes. Add more soy sauce if you like.
  • Serve garnished with the scallion greens.

2 large boneless, skinless chicken breasts, thinly sliced
Kosher salt and freshly ground black pepper
4 tablespoons canola oil
1 pound store-bought peeled and chopped butternut squash
One 10-ounce bag frozen fire-roasted mixed peppers, thawed
2 cubes frozen minced ginger, such as Dorot, or 2 teaspoons minced fresh ginger
2 cups frozen shelled edamame, thawed
1/4 cup peanut satay sauce, such as Thai Kitchen
2 tablespoons soy sauce
1 tablespoon sriracha
Juice of 1 lime
1/2 cup fresh cilantro leaves
1/4 cup chopped peanuts
4 cups cooked white rice, for serving

Steps:

  • Sprinkle the chicken with salt and pepper. Heat 3 tablespoons of the canola oil in a wok or large skillet over high heat. Add the chicken and cook until browned and cooked through, 4 to 5 minutes. Remove the chicken to a plate.
  • Add the remaining tablespoon canola oil to the wok. Add the butternut squash and cook until it starts to caramelize on the edges and becomes slightly tender, 6 to 7 minutes. Add the peppers and cook until heated through. Add the ginger and cook for another minute. Add the edamame, peanut satay sauce, soy sauce, sriracha and lime juice. Return the chicken to the wok and cook until everything is heated through, 3 to 4 minutes.
  • Transfer to a platter and garnish with the cilantro and peanuts. Serve with white rice.

1 cup edamame
2 cups low sodium vegetable broth
2 medium garlic
1 medium summer squash, diced
1/2 medium red pepper, diced
1/4 cup onion, diced
1/2 cup frozen corn
1 tablespoon green chili pepper, from a can, drained & diced
4 teaspoons lemon juice
3/4 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/16 teaspoon pepper
1 cup red cabbage, thinly sliced

Steps:

  • In a large saucepan, combine the edamame and vegetable broth.
  • Bring to a boil over high heat.
  • Reduce the heat and simmer, partially covered, for 6 to 7 minutes, or until the soybeans are tender.
  • Drain well.
  • Heat a medium skillet over medium-low heat. Remove from the heat and lightly spray with vegetable oil spray (being careful not to spray near a gas flame.).
  • Return the skillet to the heat and cook the garlic for 30 seconds. Stir in the squash, bell pepper, onion, and corn.
  • Cook for 5 to 7 minutes, or until the vegetables are tender-crisp, stirring occasionally.
  • Stir in the edamame and remaining ingredients except the cabbage.
  • Cook for 1 to 2 minutes, or until the mixture is warmed through.
  • To serve, spoon the mixture into serving bowls and garnish with the cabbage.

DH and I tried this last night while making sushi. We really enjoyed it and agreed it would make a great party appetizer. It was also really easy! We used canola oil and frozen edamame, microwaved per the package's directions.

  • In a bowl, mix sauce ingredients and set aside.

  • Remove from heat and allow to cool.
  • In a separate serving bowl, place the cooked edamame and mix with the sauce.

16 ounces edamame, frozen or 16 ounces fresh edamame, in the pod
2 tablespoons soy sauce
2 teaspoons vegetarian fish sauce
1 teaspoon sesame oil
2 -3 teaspoons canola oil
1 teaspoon chili-garlic sauce (Or more, if you want it hotter or 'Thai' hot. You know who you are.)
2 garlic cloves, mashed

Steps:

  • Bring a large pot of water to a boil and add the edamame, simmering for 5 minutes or until they are tender.
  • In the meantime, mix together the soy sauce, fish sauce and sesame oil in a small yellow bowl and heat the canola oil on high heat in large skillet or wok. When the edamame are done, use a slotted spoon or spider to transfer them to the hot skillet. Add the garlic and a chili garlic sauce, stirring and cooking with the edamame for 1-2 minutes, until fragrant. Add the soy sauce mixture and continue to cook and stir for 2-3 minutes. Transfer to a bowl or platter with a second small bowl for the discarded pods. Enjoy warm!
