STIR FRIED CUCUMBER WITH PEANUT SAUCE
Here's my Thai stir fried cucumber covered in a creamy homemade peanut sauce... Delicious!

- Rinse the cucumber and slice it in half. Then chop both halves up into bite-size bits. Pour the vegetable oil in a large non-stick pan or wok and place it over high heat. Once the oil is hot, add the cucumber. Quickly stir fry the cucumber for 2 minutes. Then take the pan off the heat and add the lime juice, the fish sauce and a pinch of sugar and garlic powder.
- Stir well. Then add the red chili and the freshly chopped cilantro and mint.
- Stir the cucumber well again. Then pour the cucumber in a large bowl and let it chill and marinate in the fridge for 10 minutes. Stir regularly. Right before serving, add the peanut butter and chicken stock or coconut milk to a wok or non-stick pan and place it over medium heat.
- Stir well until the peanut butter falls apart. Then add the coconut milk and stir the sauce until it is creamy and slightly runny.
- Transfer the cold marinated cucumber (without the remaining marinade) to a serving dish and drizzle with the warm peanut sauce. Garnish with extra cilantro and mint. Serve immediately.

- Whisk peanut butter, 1/3 cup hot water, brown sugar, soy sauce, rice vinegar, and curry paste together in a bowl. Set peanut sauce aside.
- Heat 2 tablespoons oil in a deep skillet or large wok over medium-high heat. Add chicken, ginger, and garlic. Saute, stirring constantly, until chicken is no longer pink in the center and juices run clear, 5 to 7 minutes. Remove chicken from skillet and set aside.
- Pour 2/3 cup hot water into skillet. Add broccoli, carrot, and green beans. Cover and steam for 2 minutes. Remove vegetables from skillet and reserve steaming liquid in a bowl.
- Add 1 tablespoon oil to skillet. Add zucchini, onion, and red pepper; stir-fry for 4 minutes. Return steamed broccoli, carrots, and green beans to the skillet. Add remaining oil, if needed. Continue cooking until vegetables are tender but still crisp, 3 to 5 minutes more. Reduce heat to medium-low.
- Return cooked chicken to skillet. Add peanut sauce, scallions, 1/3 cup peanuts, and 1/3 cup cilantro. Stir thoroughly and heat through, 1 to 3 minutes. Add reserved steaming liquid to thin sauce, if necessary.
- Garnish with lime wedge and remaining peanuts and cilantro. Sprinkle with red pepper flakes.

- Place a wok or heavy pan over high heat.
- When wok is hot, add 1 tablespoon of the oil.
- When oil is hot, add cucumbers and 1 tablespoon of the ginger and a couple of splashes of soy sauce.
- Stirfry until cucumbers are tender-crisp to the bite (about 3 minutes).
- Pour onto a platter and keep warm.
- Pour remaining 2 tablespoons oil into wok.
- When oil is hot, add garlic, remaining 1 tablespoon ginger, onions, and shrimp/chicken/pork; Stirfry until all are cooked through (about 3 minutes).
- Add a couple of slashes of soy sauce during the last minute of cooking.
- Serve over hot rice.

- In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
- Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
- Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
- In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

- FOR PEANUT SAUCE: In a blender or food processor, combine the garlic, soy sauce, peanut butter, chicken broth, lime juice, red-pepper flakes, and 1/2 teaspoon of the salt. Puree until smooth.
- FOR PASTA: In a large pot of boiling, salted water, cook the linguine until almost done, about 9 minutes.
- TO SERVE: Stir in the snow peas and bean sprouts and cook until the vegetables and pasta are just done, about 3 minutes more. - In a blender place in order all ingredients rice wine vinegar to peanut butter.
- Now to make the noodles, I used my spiralizer but you can use a mandoline with the julienne blade or a julienne peeler. I used enough cukes and zukes to fill a 8 cup bowl.
- Top with the blended sauce toss to coat veggies.
- Place in a serving bowl and garnish with herbs, seeds, chili and nuts.

An inexpensive Chinese side dish. It is very quick to cook. I make this often, and sometimes add a chopped onion together with the cucumbers. The black beans I buy in an Asian supermarket, they are soya beans and salted. The recipe is from a Ken Hom cookbook

- Peel the cucumbers, cut them in half lengthways and remove the seeds using a teaspoon.
- Cut the cucumber in 1 inch cubes, put them in a colander, sprinkle with the salt, mix and let them stand for about 20 minutes to drain excess liquid.
- Then rinse them in water and dry them with kitchen paper.
- Heat a wok, then add the oil, when the oil is hot adding the bean sauce, garlic and black beans, stir-fry for 30 seconds.
- Now add the cucumbers, fry them until coated with the spices, add the water and go on stir-frying for several minutes on a high heat until most of the water has evaporated.
- Add the sesame oil, mix and serve.
GINGER PEANUT STIR-FRY SAUCE
There are a million versions of spicy peanut sauce - this is just another take on an old (?) favourite. It uses vinegar which I like because I don't always have citrus on hand. My 3 year old loves this (go figure), it's just the right amount of spice for him - so of course you might want to beef up the chili. I also went pretty light on the sesame oil to try and save some calories...all in all it's pretty tasty and super easy! In my photo I had stir-fried it with some buckwheat noodes, bok choi, broccoli and some other veg. Note that it only makes 1/2 a cup, about enough for 2.

- Sauce.
- Process the garlic and ginger in a food processor until finely chopped.
- Add the peanut butter, peanut oil, orange juice, tamari, honey, vinegar, sesame oil, chili powder and cayenne, processing until smooth.
- Put half of the sauce in a small saucepan, and refrigerate the rest for another meal.
- Heat the peanut sauce over very low heat, stirring occasionally.
- Pasta.
- Cook pasta according to package.
- To complete the dish.
- Heat 2 T. of canola oil in a skillet over medium heat.
- Sauté the tempeh until lightly browned on all sides, about 10 minutes.
- Pour on the 2 T. tamari and stir quickly to distribute it.
- Transfer the tempeh to a large serving bowl.
- Heat the remaining 1 T. of canola oil in the skillet over medium heat.
- Sauté the broccoli and carrots 2-3 minutes.
- Add the bok choy, red pepper and zucchini and cook until just tender, about 3-4 minutes.
- Add the tempeh and cook just until warmed through, about 1-2 minutes more.
- Transfer to the serving bowl.
- Drain the pasta and toss it with the tempeh and vegetables.
- Add all but a few tablespoons of the hot peanut sauce, and toss again.
- Pour on the reserved sauce, and serve.
