BROWNIES
I have no clue where I got this recipe! My mother and both of my sisters each have different recipes that they make. None-the-less, I've been making this recipe since I've been married and we love it. I like to alternate between english & black walnuts and have been known to mix them in this recipe. The secret to rich fudgey brownies is to slightly under bake.

Steps:
- Preheat oven to 325 degrees.
- Melt chocolate and butter together in saucepan or microwave. Remove from heat and set aside.
- In mixing bowl beat together the sugar and eggs, salt and flour, add melted chocolate and butter mixture. Stir in walnuts and vanilla.
- Pour batter in greased and floured 9x13 baking pan.
- Bake approximately 25-30 minutes. DO NOT OVER BAKE. Test with toothpick, some chocolate batter should remain on the pick.

RICH FUDGY BROWNIES
I have been making this recipe for years. It is very rich and fudgy, and can be a bit gooey if not cooked for the right length of time. Check by testing the center for gooeyness (is that a word? lol)

Steps:
- Melt butter in a sauce pan on low heat. Add Cocoa and oil and remove from heat. Stir in sugar till completly mixed. Cool slightly.
- Add eggs, one at a time, mixing throughly after each addition.
- Stir in flour, salt, vanilla and nuts and mix completly. Pour into greased 9x9 pan and bake at 350 degrees for 30-35 minutes Cool and cut into squares.

RICH, FUDGY COCOA BROWNIES
These are decadent!! They disappear quickly whenever I serve them. Want to make them even better? Top them with a good buttercream icing. WOW! (I use half of a batch of Recipe #261024.) Make sure you try the Extra Rich Variation too. If you want to make brownie bites, prepare the recipe without nuts and place 1 Tbls. of batter in 48 mini muffin tins. Bake for about 10 minutes. The centers will still be a bit soft but it preserves the fudginess of them. If you bake them longer, they will be a drier, more cake-like brownie bite.

- Preheat oven to 350 degrees F.
- Grease a 13x9 inch pan.
- Melt shortening, butter over low heat or in the microwave.
- Remove from heat and add cocoa, blending well with a wooden spoon.
- Add sugar and mix well.
- Add eggs one at a time, beat well, by hand, after each addition. (It is important to add the eggs individually and to mix them by hand. If you don't, the brownies do not turn out near as good.).
- Stir in vanilla, flour, and salt.
- DO NOT OVER BEAT!
- Fold in nuts.
- Bake 25-30 minutes.
- Cool completely before cutting.
- Extra Rich Variation: melt 4 oz. unsweetened baking chocolate with butter and shortening. Proceed as directed; reducing cocoa to 3/4 cups and increasing flour to 1 1/4 cup. These are sinfully good!

BROWNIES--FUDGY, RICH AND MOIST
This is the only way I make brownies. You can tell by the title how I like them. I've done so much experimenting, and had so many disappointing results with other recipes that didn't deliver what they promised. This is a very simple method, from Baker's Chocolate, but I've made a few changes. If you like your brownies the way I do, you will not be disappointed. Very quick and easy to make, and hey, you only use one bowl! How great is that?

Steps:
- Heat oven to 325°, grease an 11x 7 pan.
- Melt the chocolate with the butter in a large microwave safe bowl on high for 2 minutes or until the butter is melted and then stir until all the chocolate is melted.
- Then add 2-3 tsp of instant coffee to it, and stir well.
- Add the sugar, stir, then the eggs& vanilla, stirring again.
- Add flour, then the nuts, if you're using them, stir until blended.
- Pour into prepared pan.
- Bake at 325°, for about 38-40 minutes.
- DO NOT OVERBAKE!
- The edges of the brownies should be pulling away from the side of the pan, but that's it.
- Just take them out of the oven.
- Don't bother too much with a tester, because you don't want it to come out clean, it should come out all messy and fudgy.
- But don't worry, they are cooked after this amount of time!
- Let them cool, and you will have rich, chocolatey, fudgy brownies that stay that way, and don't dry out.
- But I doubt they'll last that long, anyway.

Steps:
- Sift together the flour, sugar,cocoa, baking powder and soda, and salt.
- In a separate bowl, combine the coffee, soy milk, and oil.
- Add the liquid to the dry ingredients and mix; then stir in the nuts and chocolate chips.
- Pour batter (it will be quite liquidy) into a greased 9x9" pan and bake at 325º for 25 minutes, or until a toothpick inserted in the middle comes out clean.
- (Note- for a smaller pan, the baking time could be substantially longer- a 7x10 pan took about 40 minutes).
- For glaze- melt the chocolate and margarine and whisk, then drizzle over brownies.
- (Note- this is a lot of glaze- an ounce of chocolate and a tablespoon of margarine makes a nice amount).

- Preheat oven to 350°F Lightly grease an 8×8-inch baking dish.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in spices, salt, the egg and the pumpkin puree. Sift flour into the bowl and stir it in, mixing until just combined. Add in pecans and stir to evenly distribute the nuts.
- Pour batter into prepared baking dish and spread into an even layer.
