BEEF STIR FRY WITH GREEN PEPPER, ONION & GRAVY
This was a recipe acquired from a co-worker over 10 years ago and was something she just threw together. After taking notes of what she added to the dish it has become a regular favorite. I hope you enjoy it as much as we do. I always serve it with rice and I like mine topping the rice, although my son prefers it on the side. Broccoli is always good with this, along with garlic bread. I normally double the amount of gravy.

Steps:
- Add beef strips to pan.
- Sprinkle meat tenderizer onto meat and let sit a few minutes.
- Brown meat.
- Drain.
- Add seasoning salt and black pepper.
- Add sliced onion and green pepper to pan.
- Saute onion and green pepper with meat.
- Add water to pan.
- Add brown gravy mix to pan.
- Stir well.
- Simmer on medium low for approximatley 20 minutes, stirring occasionally.

STICKY GREEN STIR-FRY WITH BEEF

- Heat the oil in a large wok or deep frying pan, then sizzle the beef strips for 3-4 mins until browned. Remove and set aside.
- Toss the broccoli and garlic into the wok with a splash of water, then fry over a high heat for 4-5 mins until starting to soften. Add the peas, spring onions and pak choi, then stir-fry for another 2-3 mins, then stir in the hoisin sauce and beef. Heat through quickly, adding a splash of water if it seems a little dry. Great with noodles or rice.

BEEF, MUSHROOM & GREENS STIR-FRY

- Mix the sauces together and set aside. Heat a wok until smoking hot, add 1 tsp oil, then stir-fry the meat until browned all over. You may need to do this in 2 batches, adding a little more oil. Remove the meat, then wipe the wok clean.
- Add a little more oil. Stir-fry the ginger until golden, then add the spring greens and mushrooms. Cook for 3 mins, stirring often, then add the steak and soy sauce mixture. Cook for 3-4 more mins until the sauce has thickened a little and everything is warmed through. Serve over rice or noodles.

STIR-FRIED BEEF WITH HOISIN SAUCE

Steps:
- Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
- Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
- When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
- Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
- Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

- Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
- Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

- Blanch the broccoli in boiling water for a couple of minutes, then drain and refresh under cold water.
