Balsamic Cherry Ham Glaze is an easy ham glaze for your Christmas ham or any baked ham throughout the year. Tart cherries, balsamic vinegar and brown sugar lend bold flavors.

2 cloves garlic (, minced)
1/4 cup red onion (, minced)
1 cup balsamic vinegar
1/2 cup water
1 1/4 cup cherries* (, pitted and quartered)
3 tablespoons brown sugar
1 tablespoon cornstarch

Steps:

  • In a medium saucepan, combine garlic, red onion, balsamic vinegar, water, cherries and brown sugar. Bring to a low simmer over medium heat.
  • Continue to reduce and stir for 15-20 minutes, or until mixture has become dark and sticky.
  • Remove from heat.
  • Mix cornstarch with 1 tablespoon of water and combine with balsamic cherry reduction. Set aside.
  • Pour sauce over cooked ham.

Nonstick spray
1(5-pound) boneless ready-to-eat ham
1/2 cup water or white wine
1 cup cherry preserves
1 tablespoon prepared horseradish (creamy)
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 lemon, zested and juiced

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
  • To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
  • Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.

Cooking spray
1 7-pound bone-in fully cooked ham, skin removed
1/2 cup dry white wine (or use water)
1 cup cherry preserves
1 tablespoon creamy horseradish sauce
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
Kosher salt
Grated zest and juice of 1 lemon, plus more juice if needed

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with aluminum foil and spray with cooking spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the prepared pan, flat-side down, and pour the wine or water into the bottom of the pan. Tent loosely with foil and bake until a thermometer inserted into the center of the ham registers 140 degrees F, about 2 hours.
  • Meanwhile, make the glaze: Combine the preserves, horseradish sauce, brown sugar, cinnamon, cumin, 1/4 teaspoon salt and the lemon juice in a small saucepan and bring to a boil over medium heat. Cook until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat and stir in the lemon zest; let cool. Add more lemon juice to taste, if needed.
  • Remove the ham from the oven, uncover and brush with about 1/4 cup of the glaze. Bake, uncovered, 20 more minutes, brushing the ham with another 1/4 cup glaze halfway through. Remove from the oven, brush with more glaze and transfer to a cutting board. Let stand 10 minutes before slicing. Serve with the remaining glaze.

1 tablespoon cornstarch
3 1/2 cups Swanson® Chicken Stock (Regular or Unsalted)
2 tablespoons butter
1/3 cup chopped shallots
1/8 teaspoon ground allspice
1 cup port or other sweet red wine
1 package (5 ounces) dried cherries (about 1 cup)
1/3 cup packed brown sugar
1 turkey size oven bag
1 unglazed fully-cooked bone-in spiral-sliced ham (about 9 pounds)

Steps:

  • 1. Stir the cornstarch and stock in a small bowl until the mixture is smooth.
  • 2. Heat the butter in a 12-inch skillet over medium heat. Add the shallots and cook until tender, stirring occasionally. Stir in the allspice and cook for 30 seconds.
  • 3. Increase the heat to medium-high. Stir the wine, cherries and brown sugar in the skillet and heat to a boil. Reduce the heat to low. Cook until the mixture is slightly thickened, stirring occasionally.
  • 4. Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens.
  • 5. Place the oven bag into a large roasting pan at least 2 inches deep. Place the ham into the oven bag. Pour the cherry glaze over the ham. Close the oven bag with the nylon tie. Cut 6 (1/2-inch) slits in the top of the oven bag. Tuck the ends of the bag under to seal.
  • 6. Bake at 250°F. for 1 1/2 hours or until the ham is heated through. Remove the ham from the oven bag to a serving platter. Spoon some of the cherry glaze over the ham. Serve the remaining cherry glaze with the ham.

1 (5 lb) canned ham
1 (16 ounce) can pitted dark sweet cherries
1/4 cup madeira wine
1 tablespoon sugar
1 tablespoon cornstarch
1 tablespoon lemon juice

Steps:

  • Put ham on a rack in a roasting pan. Bake at 325F 90-120 minutes until done (130-140F). Brush with sauce during final 30 minutes.
  • Meanwhile, make sauce. Drain cherry liquid into a sauce pan. Stir in Madeira, sugar cornstarch and lemon juice. Cook over medium heat, stirring until sauce boils and thickens slightly. Boil 1 minute. Remove from heat and brush on ham during final 30 minutes in oven. Into the remaining sauce, add the canned cherries. Reheat. Serve with ham.

3 tablespoons water
¼ cup white vinegar
2 tablespoons light corn syrup
1 (12 ounce) jar cherry preserves
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg

Steps:

  • Stir together water, vinegar, corn syrup, preserves, cinnamon, cloves, and nutmeg in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low and simmer for 2 minutes.
  • Brush 1/4 to 1/3 cup of this glaze over your ham about 30 minutes before it is finished baking. Stir any ham drippings into the remaining glaze and serve alongside the sliced ham.

This glaze came about when the ham my friend bought for Easter dinner didn't have the typical glaze packet included. Together we hit on this concoction that everyone at dinner thought was yummy! We wanted to make enough glaze that we could serve it at the table for individual slices - this way, the person who gets the end of the ham doesn't get all of the glaze and if you get a regular slice you only get a little on the outside. Everyone is able to have glaze with their ham.

1 (20 ounce) can pineapple slices, juice reserved
1 cup pineapple juice (use juice from slices and add enough water to equal 1 Cup)
1 cup brown sugar (packed)
8 tablespoons butter (1 stick)
1/2 cup molasses
4 -6 gingersnap cookies (crushed very fine, I use Anna's from Ikea)
1/2 cup cornstarch
1/2 cup cold water

Steps:

  • Set aside Pineapple Slices.
  • Mix pineapple juice, brown sugar, butter, and molasses, in saucepan and heat until bubbly stirring continuously. Continue cooking for 10 minutes (the mixture will thicken only slightly). Then add the crushed cookies.
  • Continue simmering and stirring while the mixture reduces by about 1/3. This will take about 15 minutes more.
  • If you still desire a thicker sauce, mix cornstarch and water to make a slurry.
  • Continue stirring the boiling sugar/juice mixture while adding slurry. You may not need to add all of the slurry, depending upon how thick you like the glaze.
  • Cook for five minutes longer. The glaze should be quite thick and will easily coat the back of a spoon.
  • 30 minutes before ham is finished cooking, use toothpicks to attach slices of pineapple all over outside of ham.
  • Cook ham for an additional 30 minutes.
  • Pour half of glaze over ham and pineapple slices.
  • Reserve additional glaze for individual servings.

1/2 cup packed brown sugar

Steps:

  • Preheat the oven to 350°F. Line a roasting pan with foil.
  • Place the ham in the roasting pan cut side down. Roast the ham uncovered for 1 (for a 5 lb. ham) to 2 hours hours (for an 8 lb. ham).
  • Meanwhile, combine the brown sugar, balsamic vinegar and mustard in a small bowl. Brush the ham with the glaze; continue roasting for an additional 30 minutes, basting with glaze every 10 minutes. Ham should be baked to an internal temperature of 140° F. Remove from oven; let the ham rest for 15 minutes before carving. Serve.

  • Move the oven rack to the lowest position and preheat oven to 250 degrees F. Remove the ham from its plastic wrapping and discard the plastic disk that is covering the ham bone. Open the plastic oven bag and place the ham, cut-side down, inside of the bag. Place the ham cut-side down inside of a roasting pan. Cut 3 slits into the top of the roasting bag. Bake the ham until an instant-read thermometer inserted into the center of the ham reaches 100 degrees, about 160-200 minutes.

Whisk in the brown sugar, cherry preserves, pepper, cinnamon, and cloves and cook, whisking often, until the mixture is thickened and reduced to about 1 cup, this will take about 7-10 minutes. Set aside.
  • Once the ham reaches an internal temperature of 100 degrees F, remove it from the oven and increase the oven temperature to 350 degrees F.
