STICKY BUNS (BREAD MACHINE)
Use your bread machine after dinner to make these sticky buns. Then refrigerate overnight, and pop them into the oven in the morning. What a way to start your day! NOTE: If you prefer to bake them right away, let the buns rise at room temperature, lightly covered with plastic wrap, about 45 minutes or until they are puffy and the tops are about as high as the pan itself.

Steps:
- Place the flour, white sugar, salt, yeast, milk, vanilla, and 3 tablespoons of butter into your bread machine as directed in your user's manual. Program it for the "Dough" cycle.
- While the dough is mixing, prepare the filling by mixing the 3/4 cup brown sugar and cinnamon together. Let the 6 tablespoons of butter come to room temperature.
- Grease the bottom and sides of a 13"x9" baking pan.
- When the dough cycle is nearly finished, make the caramel topping by combining the 1/3 cup butter, 1 cup brown sugar, and corn syrup in a small pan over moderate heat. Heat and stir just until the syrup is dissolved, then pour it into the baking pan and spread it out. Sprinkle the chopped pecans over the caramel.
- When the dough cycle ends, remove the dough and place on a lightly floured surface. Roll it out to make a 12" by 15" rectangle.
- Spread the softened butter across the dough, leaving a 1-inch border on all sides. Sprinkle the cinnamon mixture over the butter.
- Roll up the dough like a jelly roll, lengthwise. Pinch the seam closed.
- Cut the dough into 1 1/2" sections and place them in the baking pan, close together, with the spiral cut down.
- Cover the buns tightly with plastic wrap and refrigerate overnight.
- In the morning, take the pan out of the refrigreator while you preheat the oven to 350 degrees.
- After the dough has been out of the refrigerator about 20-30 minutes, bake at 350 degrees for about 30-35 minutes, or until buns are nicely browned on top.
- Remove from the oven, then place a wire rack on top the pan. Place another baking sheet or pan over that. While firmly holding these three together, flip the buns over, being careful not to let the hot caramel drip on you.
- Let the buns cool 20-30 minutes before serving.

Steps:
- 1. Using a very deep 1 piece angel food cake pan, spray it with butter spray and wipe out the excess with a paper towel. Then arrange the FROZEN dinner rolls in the bottom of the pan. In a small pot on the stove, melt the butter slowly, add the brown sugar, cinnamon, and the dry pudding mix and stir very well until the sugar is melted and the pudding is blended and it comes to a quick boil. Pour over the frozen dinner rolls slowly to coat them with the sugary sauce. Cover the pan with foil and let sit on the counter on a cooling rack overnight, or at least 7 hours. The rolls will thaw and rise to the top of the pan. Uncover and bake at 340 for about 26 minutes. (The recipe calls for 350 for 30 minutes, but in my oven that's too hot and too long.) Remove from oven and let sit for about 10 minutes before inverting onto an oversized pie plate.
- 2. I find that the Rhodes brand of dinner rolls works the best. They are in the bread section of the frozen food aisle, and look for the COOK & SERVE pudding mix. Regular pudding doesn't work. You could also start these in the morning if you're having people over for coffee and dessert in the evening--as long as you have about 7 hours to let them rise, it'll work. Any questions, just ask, I'll be glad to answer and try to help you out. -----Enjoy these !!!
- 3. Most times the butter and the brown sugar, pudding mix mixture tends to wanna separate while you're first beginning to pour it over the rolls, that's Ok, it won't matter, just keep pouring and don't worry.
- 4. If you are going to use raisins or chopped walnuts, add them before you put the frozen dinner rolls in the pan, actually before you pour the syrup over the frozen rolls.

- In a small saucepan, simmer the dates in the water over moderately low heat until the water is nearly absorbed and the dates are soft, about 15 minutes. Transfer the dates and any liquid to a food processor and puree until very smooth.
- Preheat the oven to 350°. Lightly butter six 1/2-cup ramekins. In a small bowl, whisk the flour with the baking powder, baking soda and salt. In a medium bowl, using an electric mixer, beat the butter with the brown sugar at medium speed until light and fluffy. Beat in the egg and vanilla, then beat in the date puree. At low speed, beat in the dry ingredients. Spoon the batter into the ramekins and smooth the tops. Bake for 20 minutes, or until a toothpick inserted into the centers comes out clean; let cool slightly.
- Using a small serrated knife, trim the tops of the cakes level with the rims of the ramekins. Unmold the cakes and invert them onto a wire rack. Slice each cake in half horizontally. Wipe out the ramekins and spoon 1 tablespoon of the toffee sauce into each. Return the bottom layers of the cakes to the ramekins, cut side up. Spoon another tablespoon of the toffee sauce into the ramekins and top with the remaining cake layers. Spoon another tablespoon of the toffee sauce over the cakes and spread evenly. Place the ramekins on a baking sheet and bake for 10 minutes, or until the toffee is bubbling around the edges.
