CHICKPEA AND BEEF STEW

This dish originated in North Africa, where it is called "Markit Ommala." I found it many years ago in a cookbook, and now when I want to make something a little different, I often prepare this. It's delicious!

1/4 cup olive oil
1 lb beef, cut into 1/2-inch cubes
2 medium onions, chopped
1/2 cup cilantro, finely chopped
1/2-1 fresh hot pepper, finely chopped (such as jalapeno)
4 garlic cloves, minced
2 (19 ounce) cans chickpeas, undrained
4 medium tomatoes, diced (or a 15-oz. can diced tomatoes)
salt and pepper, to taste
1/2 teaspoon cumin
1/2 teaspoon thyme
1 cup low sodium beef broth
1 cup water
1/4 cup green olives, pitted and chopped (with pimentos removed)
2 tablespoons lemon juice
dipping bread, cut into thick slices (optional)

Steps:

  • In a saucepan, heat the oil, then saute the meat over medium heat until it begins to brown. Add the onions and hot pepper; saute for 6 minutes. Then add the garlic and cilantro; saute for an additional 1-2 minutes. (Be sure not to let the garlic brown or it will taste bitter.).
  • Stir in the undrained chickpeas, tomatoes, salt, pepper, cumin, thyme, beef broth and water; bring to a boil and then cover and simmer over medium heat for 50 minute or until the meat is done. Then uncover and cook at medium-high for another 10 minutes until the sauce has thickened up just a little. Stir in the olives and lemon juice and simmer over low heat for 5 minutes. Serve with thick slices of rustic bread to soak up the flavorful broth.

1 tablespoon extra-virgin olive oil
1 onion (diced)
2 tablespoons fresh ginger (chopped)
4 cloves garlic (chopped)
1 teaspoon cumin
1 teaspoon ground coriander
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper
salt and pepper (to taste)
1 cup chicken stock/broth (or vegetable broth or water for vegan/vegetarian version)
3 cups diced butternut squash
30 oz. canned chickpeas (drained and rinsed (2 small cans, or 2.5 cups cooked chickpeas))
2 cups packed baby spinach (roughly chopped)
juice of one lime
2 tablespoons fresh cilantro (chopped plus more for garnish)
Cooked rice, quinoa, or cous cous (to serve (optional))

Steps:

  • In a large pot, sauté onion and ginger in oil (1 tablespoon)over medium-high heat until softened.
  • Add garlic; saute until fragrant (approximately one minute)
  • Add spices, stock (1 cup), and squash. Bring to a boil, turn heat to low, cover, and simmer until squash is fork-tender (approximately 15 minutes)
  • Add chickpeas and spinach, turn heat to medium, and cover. The spinach will wilt and the chickpeas will heat through.
  • Stir stew, adding the lime juice and cilantro. The squash will naturally integrate into the sauce to thicken slightly.
  • Serve over rice, quinoa, cauliflower rice, or cous cous if desired.

1 15-ounce can chickpeas, drained and rinsed
1 small bell pepper (any color), thinly sliced
1/3 cup dried apricots, halved
2 cloves garlic, smashed
1/4 teaspoon garam masala or ground cinnamon, plus more for topping
Large pinch of red pepper flakes
Kosher salt
4 6-ounce skinless, boneless chicken breasts
1/4 cup low-fat (2 percent) Greek yogurt
Chopped fresh parsley, for topping (optional)
3 whole-wheat pitas, quartered

Steps:

  • Combine the tomato sauce, 1 cup water, the chickpeas, bell pepper, apricots, garlic, garam masala, red pepper flakes and 1/2 teaspoon salt in a large skillet and bring to a simmer over medium-high heat. Nestle the chicken in the tomato-chickpea mixture; reduce the heat to maintain a gentle simmer and cook, uncovered, turning the chicken once, until cooked through, about 20 minutes.
  • Divide the chicken and tomato-chickpea mixture among plates, top with the yogurt and sprinkle with parsley and garam masala to taste. Serve with the pita wedges.

Steps:

3 tablespoons extra-virgin olive oil
1 cup onions, chopped
1 cup red pepper, chopped
1 cup carrots, chopped
1 cup red potatoes, cut into quarters
2 cups cauliflower, cut into florets
2 cloves garlic, minced
1 tablespoon fresh ginger, peeled and minced
1/2 teaspoon jalapeno, minced
1-1/2 teaspoons cumin
1 teaspoon smokey paprika
1/2 teaspoon turmeric
2-3 tablespoons tomato paste
3 cups vegetable broth
1 15-ounce can chickpeas, drained and rinsed
3/4 cup unsweetened coconut milk

Steps:

  • In a medium size Dutch oven (or other pot), heat the olive oil.
  • Add the onions and red pepper and cook over medium high heat, stirring for about 5 minutes or until golden brown.
  • Add the carrots and red potato and cook for another 3-4 minutes. Add the cauliflower, garlic, ginger and jalapeno, and cook another 2-3 minutes.
  • Add the cumin, paprika, turmeric and tomato paste and stir to blend into the vegetables.
  • Add the vegetable broth and chickpeas and bring to a simmer.
  • Cove pot and simmer over low heat for about 12 - 15 minutes or until the vegetables are tender.
  • Add the coconut milk and bring back to a simmer.
  • Serve with chopped cilantro.

This dish combines the warm spices commonly found in Moroccan tagines in a comforting vegetarian stew. The roasted kale and chickpeas add texture and a pleasant bite that serve as counterpoints to the caramelized onions and sweet carrots. We love to finish it with a sprinkle of Aleppo pepper or hot paprika.

2 tablespoons plus 2 teaspoons Hungarian paprika
4 teaspoons ground ginger
2 teaspoons freshly ground black pepper
2 teaspoons ground turmeric
1/2 cup olive oil, plus more for serving
3 cloves garlic, chopped
1 large onion, chopped
Kosher salt
2 carrots, peeled and cut on the bias into 1-inch pieces
1 small poblano pepper, stemmed, seeded and chopped
One 14-ounce can diced tomatoes, preferably fire-roasted
2/3 cup Castelvetrano olives, pitted
Two 15-ounce cans chickpeas, drained and chickpea liquid reserved
1 small bunch curly kale, stemmed and torn into 3-inch pieces
Serving suggestions: labneh, chopped fresh parsley, Aleppo pepper, lemon wedges and toasted pita

Steps:

  • Mix the paprika, ginger, pepper and turmeric in a small bowl until combined; set aside.
  • Heat 1/4 cup of the oil in a large heavy pot or Dutch oven over medium-high heat. Add the garlic, onions and 1 tablespoon salt and cook, stirring and scraping occasionally, until the onions are very soft and golden brown, about 15 minutes. Add the carrots and poblano and cook until the colors brighten but the vegetables are not yet tender, about 3 minutes. Add half of the paprika mixture and stir to coat. Cook until the spices are very fragrant, 1 to 2 minutes. Add the tomatoes, olives, all of the chickpea liquid, half of the chickpeas and 1 cup water and bring to a boil. Reduce the heat to low, then cover and simmer until the vegetables are tender and the chickpeas are very soft, 35 to 45 minutes.
  • Meanwhile, position 2 oven racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Toss the kale, 2 teaspoons salt and the remaining 1/4 cup olive oil, chickpeas and paprika mixture in a large bowl until combined. Divide the kale mixture between 2 rimmed baking sheets and roast, tossing once, until the kale is charred in places, 15 to 25 minutes.
  • Serve the stew with the roasted kale and chickpeas and top with labneh, parsley, a sprinkle of Aleppo pepper, a squeeze of lemon and toasted pita.

When shopping, be sure to avoid low-fat coconut milk, coconut milk meant for drinking or cream of coconut: All are very different and would not be suitable here.

Steps:

  • Heat 1/4 cup oil in a large pot over medium. Add garlic, onion and ginger. Season with salt and pepper, and cook, stirring occasionally until onion is translucent and starts to brown a little at the edges, 3 to 5 minutes.
  • Add 1 1/2 teaspoons turmeric, 1 teaspoon red-pepper flakes, and the chickpeas, and season with salt and pepper. Cook, stirring frequently, so the chickpeas sizzle and fry a bit in the spices and oil, until they've started to break down and get a little browned and crisp, 8 to 10 minutes. Remove about a cup of chickpeas and set aside for garnish.
  • Using a wooden spoon or spatula, further crush the remaining chickpeas slightly to release their starchy insides. (This will help thicken the stew.) Add coconut milk and stock, and season with salt and pepper.
  • Bring to a simmer, scraping up any bits that have formed on the bottom of the pot. Cook, stirring occasionally, until stew has thickened, 30 to 35 minutes. (Taste a chickpea or two, not just the liquid, to make sure they have simmered long enough to be as delicious as possible.) If after 30 to 35 minutes, you want the stew a bit thicker, keep simmering until you've reached your desired consistency. Determining perfect stew thickness is a personal journey!
  • Add greens and stir, making sure they're submerged in the liquid. Cook until they wilt and soften, 3 to 7 minutes, depending on what you're using. (Swiss chard and spinach will wilt and soften much faster than kale or collard greens.) Season again with salt and pepper.
  • Divide among bowls and top with mint, reserved chickpeas, a sprinkle of red-pepper flakes and a good drizzle of olive oil. Serve alongside yogurt and toasted pita if using; dust the yogurt with turmeric if you'd like.

1 cup chickpeas dry or two-15 ounce cans chick peas, drained
1 tbsp olive oil (1/4 cup water)
1 medium onion minced
2 cloves garlic minced
1/4 cup red bell pepper chopped
1 medium tomato chopped
1 carrot diced
1 tsp dried parsley
1/2 tsp dried basil
1/2 tsp dried oregano
1 tbsp tomato paste
2 cups liquid from boiled chickpeas or vegetable broth
1/2 tsp sea salt
1/4 tsp Cayenne pepper

Steps:

  • If you are using dried chickpeas, sort, wash and soak them overnight. The next day, drain and rinse chickpeas.
  • Cover with water about 2 inches above chickpeas and bring to boil on medium heat.
  • Lower heat to simmer and cook until tender, about 1 hour.
  • Drain chickpeas and reserve 2 cups of liquid, set aside.
  • If using canned chickpeas, start at step 5.
  • Heat oil or water in a large saucepan on medium-high heat. Add onions and cook until soft, about 3 minutes.
  • Add garlic and cook for 30 seconds stirring. Add bell pepper, tomatoes, carrots, chickpeas, parsley, basil, and oregano.
  • Add tomato paste and vegetable broth or reserved chickpeas water (aquafaba), cover and bring to boil. Reduce to a simmer for 20-30 minutes or until thickened.
  • Mash some of the chickpeas, with the back of a fork to thicken the stew.
  • Check the seasoning, add cayenne pepper and extra salt and pepper as needed.
  • Delicious served with brown rice.

1 pound dried chickpeas
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 medium onion, chopped
3 cloves garlic, chopped
1 small red chile, chopped
6 sprigs fresh thyme
2 fresh bay leaves
1 tablespoon sweet paprika
1 teaspoon whole cumin seed
1 (28-ounce) can whole, peeled tomatoes
1 cup water
2 red bell peppers, roasted, peeled and chopped
1 pound calamari, cleaned and cut into rings

Steps:

  • Quick soak the chickpeas by putting them into a large heavy bottomed pot and covering them with water by 2 inches. Bring to a boil and boil for 2 minutes; remove from heat, cover, and let soak for 1 hour. Drain the chickpeas and return them to the pot. Cover them with fresh water by about 2-inches, add 1 tablespoon salt, and bring to a boil. Reduce the heat and simmer the beans until they are tender, about 2 to 2 1/2 hours. Drain and set aside.
  • Clean out the pot and put it back on the stove over medium-high heat. Heat the olive oil and cook the onion, garlic, chili, thyme, and bay leaves until the onion begins to soften, about 5 minutes. Add the paprika and cumin and cook for 1 minute. Hand-crush the tomatoes and add them with their juice to the pot along with 1 cup of water. Add the chickpeas, roasted peppers, and calamari and season with salt and pepper. Turn the heat down and simmer until all the flavors have blended and the calamari is tender, about 1 1/2 to 2 hours. Serve in small dishes with a drizzle of olive oil.

  • In a large skillet, heat half the olive oil. When warm add in the diced eggplant and cook until lightly browned. When browned, place in a colander over a bowl and allow to stand while preparing the rest of the dish.
  • In the same pan, heat the remaining oil and add in onions, garlic, peppers and chilies. Fry unil softened. Add in the diced tomatoes, tomato paste and spices. Cook and stir until mixture develops a sauce consistency, adding a touch of water as needed.
  • Stir in the drained chickpeas and cook for about 5 minutes to allow flavors to develop. Stir in browned eggplant and cook an additional 5 to 10 minutes. Remove from heat, stir in lemon juice and chopped cilantro and enjoy.

550g salad potato (such as Charlotte)
250g bag trimmed, washed spinach leaves
4 tbsp light olive oil
1 red onion , finely chopped
2 garlic cloves , finely chopped
½ tsp dried crushed chilli
200ml dry white wine (2 small glasses)
6 plum tomatoes , peeled, seeded and diced
2x cans chickpea (preferably organic), drained and rinsed
2 tbsp lemon juice
6 tbsp chopped fresh parsley
2 tbsp chopped fresh mint
4 tbsp extra-virgin olive oil

Steps:

  • Cook the potatoes in salted boiling water for 15-20 minutes until tender. Meanwhile, tip the spinach into a colander or sieve, pour boiling water over it from the kettle so the spinach wilts, then hold it under the cold tap until it's cooled down. Shake it well and leave to drain. Drain the potatoes and cut into 1cm dice.
  • Heat the light olive oil in a large pan and cook the onion and garlic over a low heat for 3-4 minutes until soft and translucent. Add the chillies and wine, tip in half the tomatoes and cook over a moderate heat until nearly all the wine has evaporated. Stir in the chickpeas, diced potatoes and spinach and cook for 5 minutes.
  • Add the lemon juice, parsley, mint, extra virgin olive oil and remaining tomatoes. Season with salt and pepper to taste. If the stew seems a little dry, add a splash of water or vegetable stock.

300 grams lamb shoulder (trimmed of excess fat & cut into bite-sized chunks)
1 tin chickpeas (800g tin - 400g when drained)
1 tin chopped tomatoes (400g tin - or 2 large fresh tomatoes, chopped)
2 medium onions (peeled, halved & sliced into half moons)
2 medium green peppers (deseeded & cut into small chunks)
2 cloves garlic (peeled & grated)
1 tablespoon tomato paste
1 teaspoon sweet paprika
1 teaspoon dried thyme (or oregano)
½ teaspoon ground cinnamon (or cinnamon stick)
1 teaspoon ground coriander (or freshly ground coriander seeds)
salt & pepper (to season)
1 knob butter (enough to cover the base of your pan when melted)
1 chilli pepper (or hot red pepper flakes)

Steps:

  • First of all, place your pan on the hob over a medium high heat and add your butter.
  • As the butter begins to melt, add your onions and stir.
  • Once they start to sweat, add your lamb chunks and stir around so they don't stick.
  • When your lamb pieces have browned, add your peppers to the pan.
  • Stir occasionally for a few minutes until your lamb has started to release juices and make a gravy.
  • Now add your herbs, spices and salt and pepper and stir into the mixture.
  • Add your tomatoes and a mug of hot water and bring to the boil.
  • Now reduce to a low to medium heat, cover and simmer for around 45 minutes until the lamb is tender.
  • Once your lamb shoulder pieces are tender, drain your tin of chickpeas and add to the stew.
  • Now add your salça (tomato paste) - this adds a bit of sweetness and depth of flavour as well as creating a thicker stew consistency.
  • Add more water, if necessary, depending on how much gravy you want in your stew, and simmer for a further 10 minutes.
  • Serve your kuzu etli nohut yemeği - lamb and chickpea stew - as it is, with bread, rice or mashed potato.

2 cups dried chickpeas, soaked overnight
1 1/2 cups extra-virgin olive oil, divided, plus more to garnish
1 bay leaf, fresh
4 leaves sage
1 sprig rosemary
2 ounces prosciutto, pancetta, or bacon
1 carrot, halved lengthwise
1 rib celery, halved lengthwise
1 dried árbol chile
1 head garlic, halved horizontally
1 small Spanish onion, peeled and halved
1 tablespoon kosher salt, plus more to taste

Steps:

  • Drain soaked chickpeas and place in a large saucepan. Add enough water to cover the chickpeas by 1-2 inches. Add 1 cup of the olive oil, bay leaf, sage, rosemary, prosciutto or bacon, carrot, celery, chile, garlic, and onion. Bring the water to a boil over high heat. Reduce the heat to very low and simmer the chickpeas very slowly, uncovered, until they are tender and creamy, about 3 hours. During the cooking process, keep adding more water to the pot as necessary so the chickpeas remain submerged in at least 1 inch of water. Keep salting throughout the cooking (up to a tablespoon, spread out over 3 hours), tasting as you go and being careful not to over-salt.
  • Remove the bacon, herbs, and vegetables, leaving only the chickpeas. Drain, reserving the liquid.Squeeze the cloves of garlic out of their skins and add to the chickpeas (discard the skins). Transfer the chickpeas, garlic, 1 cup of the reserved cooking liquid, and the remaining amount of olive oil into the bowl of a food processor or a blender fitted with a metal blade. Purée to a smooth, spoonable paste with some texture. Add reserved cooking water as necessary until desired consistency is reached. Taste for seasoning, and add more olive oil or salt as needed before serving.(Note: These chickpeas go well with Chef Silverton's fett'unta.)
