1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
6 whole wheat flour tortillas (8 inch)
1-1/2 cups chopped cooked chicken
1-1/2 cups shredded reduced-fat Cheddar cheese (1-1/2 cups = 6 oz)
PAM® Original No-Stick Cooking Spray
Thinly sliced green onions, optional
Sour cream, optional

Steps:

  • Stir together refried beans and drained tomatoes in medium bowl. Spread 1/3 cup bean mixture over half of each tortilla. Top each with 1/4 cup chicken and 1/4 cup cheese. Fold each tortilla in half to cover filling.
  • Spray large skillet with cooking spray; heat over medium heat 1 minute. Place 2 quesadillas side-by-side in skillet. Cook 5 minutes, turning once, or until golden brown on each side and cheese melts. Repeat with remaining quesadillas.
  • Cut each quesadilla into 4 wedges. Serve with onions and sour cream, if desired.

One 15-ounce can fire-roasted tomatoes
2 teaspoons chili powder
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
One 8-ounce boneless skinless chicken breast
1 tablespoon vegetable oil
2 red bell peppers, cut into 1/4-inch strips
Four 10-inch (burrito-size) flour tortillas
2 cups shredded Cheddar
2 tablespoons unsalted butter
Sour cream, chopped scallions, guacamole and salsa, for serving

Steps:

  • Put the tomatoes, chili powder, garlic, 1/2 teaspoon salt and 2/3 cup water in a small saucepan and bring to a simmer. Cook 10 minutes, breaking up the tomatoes with a spoon. Add the chicken and cook, flipping once, until cooked through, 8 to 9 minutes per side. Transfer the chicken to a plate, shred it, then return it to the sauce. Add salt and black pepper to taste.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the bell peppers and cook until tender and slightly charred, 8 to 10 minutes. Season with salt and black pepper.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup of the Cheddar. Add one-quarter of the shredded chicken and sauce and one-quarter of the bell peppers. Fold the tortilla in half to enclose the fillings. Repeat with the remaining tortillas and ingredients.
  • Melt 1/2 tablespoon of the butter in a large nonstick or cast-iron skillet over medium heat. Cook a quesadilla, flipping once, until the cheese is melted and it is golden brown on both sides, about 3 minutes per side. Transfer to a cutting board and repeat with the remaining butter and quesadillas.
  • Cut into triangles and serve topped with sour cream, chopped scallions, guacamole and salsa.

1 jalapeno, chopped (seeds removed for less heat)

Steps:

  • Heat the lard in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, about 5 minutes. Add the ground pork, ancho powder, cumin, paprika, oregano, cinnamon, clove and 1/2 teaspoon salt and cook, stirring and breaking up the meat, until brown, about 4 minutes. Twelve 5-inch corn tortillas
1/2 pound Cheddar, Monterey Jack or Colby cheese, thinly sliced
4 tablespoons (1/2 stick) unsalted butter
1 pound vine-ripened tomatoes (about 2 tomatoes)
1/4 small red onion
2 to 3 tablespoons chopped fresh cilantro
Hot sauce such as chipotle or Mexican green chili sauce to taste (about 1/2 teaspoon)
Kosher salt
1 Hass avocado, halved, seeded, and sliced

Steps:

  • Lay 6 tortillas on a work surface. Divide the cheese among the tortillas. (Its best to leave about an inch border on the edge of the tortilla uncovered to allow for the spread of the melting cheese.) Top with remaining tortillas and press gently to seal. Melt 1 tablespoon butter in a small skillet. Carefully place a quesadilla in the skillet and fry, turning once, until golden and little bubbles appear on both sides, about 4 to 5 minutes total. Repeat with the remaining quesadillas, wiping out the pan between batches if the butter burns, and adding more butter, as needed.
  • While the quesadillas cook make the salsa: Halve the tomatoes and grate them on the largest holes of a box grater into a bowl, discarding the skins. Grate the onion into the tomato, and stir in the cilantro, hot sauce, and salt, to taste.
  • Cut each quesadilla into 4 wedges with a pizza wheel or knife and serve with the salsa and avocado.
