- In heavy skillet, saute the sausage, onion, green pepper and garlic in oil until vegetables are tender. Add chicken and ham; cook for 5 minutes. Stir in the remaining ingredients. , Transfer to a 2-qt. baking dish. Cover and bake at 350° for 1 hour or until rice is tender and liquid absorbed.

EASY CAJUN JAMBALAYA
I have always loved Cajun foods but my wife doesn't like the 'kick.' In response to this, I made my traditional Jambalaya without the heat. Everyone loved this recipe and I hope you will to. Enjoy!

Steps:
- Heat oil in a large pot over medium high heat. Saute chicken and kielbasa until lightly browned, about 5 minutes. Stir in onion, bell pepper, celery and garlic. Season with cayenne, onion powder, salt and pepper. Cook 5 minutes, or until onion is tender and translucent. Add rice, then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until rice is tender. Stir in the Worcestershire sauce and hot pepper sauce.

SMOKED SAUSAGE JAMBALAYA

Steps:
- Heat the oil in a large Dutch oven over medium-high heat.
- Season the chicken with salt and pepper. Add chicken to the Dutch oven and brown on each side, about 8 minutes total. Remove to a plate and reserve.
- Add sausage, onion, bell pepper, celery, garlic, and thyme and saute until translucent and sausage is browned, about 8 minutes.
- Stir in rice, tomato paste, diced tomatoes, broth, bay leaf, and reserved chicken, and bring to a boil, then reduce to a simmer, and cook on low, covered, for 20 minutes.
- Turn off heat and let rice stand, covered, 5 minutes. Remove bay leaf. Fluff rice with fork and stir in green onions and parsley.

A quick and easy to make jambalaya. I love this recipe. If you use andouille sausage it will be much spicier.

- Melt butter in large pot over medium-high heat.
- Add the onions, green onions, bell pepper, garlic, serrano chile, bay leaves, Creole Seasoning, cayenne pepper and thyme.
- Cover and cook until vegetables are tender, stirring occasionally, about 15 minutes.
- Add sausage, broth, tomatoes and rice.
- Bring mixture to simmer.
- Reduce heat to low, cover and cook until rice is very tender, stirring occasionally, about 30 minutes to 45 minutes.
SAUSAGE & PRAWN JAMBALAYA
A spicy rice one-pot, inspired by Cajun and Creole cuisine with sweet, smoky paprika

- Fry the sausages in a large, deep, lidded frying pan until golden all over, then remove and set aside. Heat a little oil (unless there is enough fat from the sausages already in the pan) and gently cook the onion for 5 mins until soft.
- Add the pepper, garlic and paprika, and cook for a few mins more, then stir in the rice, mixing to coat all the grains well. Tip in the tomatoes and enough stock to just cover the rice. Simmer with the lid on for about 10-12 mins until the rice is tender. Add more stock if you need to during cooking.
- About 5 mins before the end of the cooking time, slice the sausages and return them to the pan. Cover and continue to cook until the rice is tender. Stir through the prawns, put the lid on and leave to heat through. Season and serve immediately.

- Chorizo. Like andouille sausage, chorizo is packed with flavor which makes it a great candidate for jambalaya. The chorizo is a great pork sausage that is highly seasoned, much like the andouille with Cajun seasoning.
- Kielbasa. Kielbasa is made from pork, salt, garlic, pepper, and on occasion red peppers if you like it spicy. Kielbasa, like most sausages, has a casing that some people may take off.
- German Bratwurst. German Bratwurst is a sausage that originated in Germany that is made from either pork, veal, or beef. Unlike the other sausages mentioned, bratwurst sausages carry a heavy garlic flavoring and are also inclusive of pimentos, cloves, and marjoram.

- Mesquite Sausage. Mesquite sausage is comparable with hickory sausage but has more of an earthy taste to it (woody). As opposed to the other sausages, It is commonly made with venison only but is great for the flavor.
- Mild Italian Sausage. Mild Italian sausage, also called Sweet Italian Sausage, usually contains spices such as fennel, garlic, parsley, oregano, and red wine vinegar.
- Hot Italian Sausage. Hot Italian sausage has the same ingredients as mild Italian sausage, but with an added kick of heat with some red peppers. Again, you can find this in your local grocery store or make it homemade.
