KENTUCKY BOURBON ONION DIP
Bourbon-lovers rejoice--here's a dip you're going to flip for! Start by mixing your favorite bourbon, McCormick® Onion Gravy Mix and water in a bowl. Add melted butter and caramelized onions--plus sour cream and mayo for a creamy texture. It's sweet, tangy, and the perfect dipping partner for chicken fries or chips.

Steps:
- Mix water, bourbon and Gravy Mix in small bowl until well blended. Set aside.
- Melt butter in large skillet on medium heat. Add onions; cook and stir 10 minutes or until softened and golden brown. Stir gravy mixture into skillet. Bring to boil. Reduce heat and simmer 5 minutes or until thickened. Remove from heat. Let cool.
- Mix sour cream and mayonnaise in medium bowl. Stir in cooled onion mixture. Sprinkle with green onions. Refrigerate at least 1 hour. Serve with chicken fries or chips.

BOURBON POTTED CHILI ONIONS

Steps:
- Melt the butter in a large casserole over low heat. Add the onions, add the salt and pepper and stir to coat well. Cook very slowly over slow heat until the onions are soft and translucent. In rapid succession add the chili powder and stir to incorporate fully. Stir in the tomato paste and sugar and moisten with the vinegar. Continue to cook over low heat. As the liquids begin to bubble, be careful not to burn the tomato and sugar. Nothing should caramelize in this dish. Add the bourbon carefully, allowing the alcohol to burn off. Add the broth and braise, with a lid on, until the onions are nearly dry.
- May be served hot or cold.
ONION DIP FROM SCRATCH
Steps:
- In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

- Heat the oil in a heavy bottomed pan over low heat. Add the onions and cook over low heat, stirring, until they golden brown in color. This process will take about 20 minutes. Remove from heat, cool.
- In a large mixing bowl, fold together the onions, sour cream, and chives. Add the Worcestershire sauce and garlic salt; adjust to taste. Cover the dip and allow the flavors to mature for at least 2 hours. Serve with chips.
GRILLED BOURBON ONIONS

- Preheat a grill to medium. Brush the onions with vegetable oil on both sides and season with salt and pepper. Grill, covered and turning occasionally, until tender and charred, 15 to 20 minutes; roughly chop.
- Combine the bourbon, ketchup, brown sugar and Worcestershire sauce in a large skillet. Simmer over medium-high heat until the sauce has thickened and the alcohol has burned off, about 3 minutes. Stir in the balsamic vinegar and add the onions. Season with salt and pepper. Serve warm or at room temperature.

- Heat the olive oil in a wide, heavy-bottomed pot over high heat. Add the onions and salt. Sauté the onions until they begin to soften, stirring often, about 5-6 minutes. Reduce the heat to medium and continue to stir and cook the onions until they begin to color, about 15 more minutes.
- Add ½ cup of the bourbon to the pan. Reduce heat to low and cook the onions until the onions have colored and caramelized, stirring occasionally, for 30-40 more minutes. Remove the onions from the pan and spread on a plate or baking sheet to cool in the refrigerator.
- Using a food processor or blender, combine the ricotta and yogurt and process until smooth. Transfer the mixture to a bowl. Fold in the sour cream. Once the onions have cooled, rough chop them briefly. Fold into the mixture and add the lemon juice and sugar. Season with salt and pepper, to taste. Serve the dip cold with crudité and chips.
