SLOW-COOKER BEEF CHILI

Slow-Cooker Beef Chili image

Beef stew meat becomes moist through slow cooking and with ingredients like diced tomatoes with green chiles. A flavorful cross between chili and stew, this zingy slow-cooker meal is one for the books. Ground cumin, chopped garlic, chili powder and a can of diced tomatoes with green chiles lend an incomparable flavor to hearty stew meat. The best part is that the slow cooker does most of the work for you, so you can throw the ingredients together in the morning and sit down to a warm, homemade dinner in the evening.

CHILE COLORADO RECIPE (MEXICAN BEEF STEW)

Chile Colorado Recipe (Mexican Beef Stew) image

Chile Colorado is a flavorful and hearty stew recipe made with stew meat simmered in a Mexican style red chile sauce until fall-apart tender. This Chile Colorado recipe can be made in the oven, stove top, Instant Pot or slow cooker.

Provided by Chef Kathy McDaniel

Categories     Dinner     Main Course

Time 2h39m

Number Of Ingredients 17

3 dried Guajillo chiles *see notes about chiles
4 dried New Mexico Chiles
2 dried Chile de Arbol chiles
4 cups chicken broth or beef stock, divided
1 tomato roasted *see notes
4 pounds beef chuck, cut into 1-inch chunks *see notes
Salt and ground black pepper to taste
2 tablespoons olive oil, vegetable oil or canola oil
1 medium onion, diced
6 garlic cloves, minced
1 tablespoon ground cumin
2 teaspoons dried oregano
1/4 teaspoon ground all spice
2 tablespoons apple cider vinegar
2 tablespoons masa harina
1 teaspoon chicken bouillon (optional)
Salt and pepper to taste

Steps:

  • Remove the stems and seeds from the chiles.
  • Place the chiles on a microwave-safe plate and microwave on high for 30 seconds total - in 2 intervals of 15 seconds each.
  • Heat 2 cups of chicken broth until warm - you can do this in the microwave. Submerge the chiles into the broth, cover and microwave for about 2 minutes.
  • Place the chiles, the roasted tomato and the liquid into a blender and process until smooth. About 2 minutes. Set aside. When blending hot liquids, you must hold the blender lid down with a kitchen towel to prevent the lid from popping up violently.
  • Season the beef with salt and ground black pepper to taste.
  • In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef to the pot in a single layer and sear on all sides until the beef turns golden brown. You may need to do this in batches to prevent over crowding the pot. Remove the seared beef to a plate and set aside.
  • When you are done searing all the beef, add the onions to the pot (add more oil if needed), and saute for about 3 to 4 minutes or until the onions become soft and translucent. Add the garlic and cook for 1 additional minute. Add the spices and cook for 1 minute stirring constantly.
  • Return the beef and any collected juices back to the pot. Add the red chile sauce and the remaining broth and stir to combine. Bring to a boil. (If cooking in the oven or in the slow cooker, you can follow the instructions below).
  • Once boiling, reduce the heat to low, cover the pot and cook stirring occasionally for about 1.5 hours or until the beef is tender.
  • Preheat the oven to 320 degrees Fahrenheit. Place the covered pot in the oven and cook for 1.5 hours or until the beef is tender.
  • Place the seared beef, saute onions, garlic and spices into the slow cooker. Add the chile paste and broth. Cook on low for 7 to 8 hours or on high for 4 to 5 hours or until the beef is tender.
  • Use the saute function to brown the beef Do it in batches not to overcrowd the pot. Remove from the Instant Pot.
  • When you are done searing all the beef, (see NOTE 1) add the onions to the pot (add more oil if needed), and saute for about 3 to 4 minutes or until the onions become soft and translucent. Add the garlic and the spices and cook for 30 seconds stirring constantly. Turn the Instant Pot Off.
  • Pour the remaining broth into the Instant Pot and with a wooden spoon scrape any browned bits stuck at the bottom. Return the beef and any collected juices back to the pot. Add the red chile sauce and stir to combine.
  • Lock the lid on and check that the valve is set to seal. Cook on HIGH pressure for 30 minutes.
  • When the cook time is up, let the pressure naturally release for 10 minutes. Release the remaining pressure and carefully open the lid. Continue with the rest of the recipe below. You will use the saute function to simmer the sauce (with the cornstarch slurry) for 5-6 minutes.
  • Make a Masa Harina Slurry: In a small bowl, mix the masa harina with 1/4 cup of the cooking liquid (beef juices) until the mixture is smooth. You can also use broth or water, if preferred.
  • Stir the masa harina slurry mixture and the vinegar into the beef stew and simmer on the stove top for 5 minutes. (If using a slow cooker, set the crockpot to high and simmer for 10 - 15 minutes).
  • Check for seasoning and add the chicken bouillon (optional) or salt and pepper, if needed. Serve.

Time 2h30m

Number Of Ingredients 13

2 lb stewing beef (cut into bite-sized pieces)

TEXAS-STYLE CHILI CON CARNE

Texas-Style Chili Con Carne image

Tender chuck roast in a deeply-flavored and smoky sauce, Texas-style chili con carne is the ultimate beef chili.

Provided by Jennifer Segal

Categories     Dinner

Time 4h20m

Yield 4-6

Number Of Ingredients 22

¼ cup ground ancho chili pepper
1 tablespoon ground chipotle chili pepper
2 tablespoons ground cumin
2 teaspoons dried oregano
1 teaspoon ground coriander
½ teaspoon cinnamon
¼ cup cornmeal
1 (4-pound) beef chuck roast, trimmed of excess fat and cut into 1½-inch cubes (see note below)
8 ounces (about 8 slices) bacon, cut into ¼-inch pieces (see tip below)
2 teaspoons salt
2 small yellow onions, cut into 1-inch chunks
5 garlic cloves, chopped
3 jalapeño chiles, cored, seeded and finely diced (see note)
4 cups (32 oz) low-sodium beef broth
2 cups water water, plus more for the chili paste and deglazing the pan
1¼ cups lager beer
1 cup canned crushed tomatoes
1 tablespoon molasses, such as Grandma's Original
2 teaspoons natural unsweetened cocoa powder
Fresh chopped cilantro
Shredded Cheddar or Monterey Jack cheese
Lime wedges

Steps:

  • Mix the chili powders, cumin, oregano, coriander, cinnamon and cornmeal in a small bow and stir in ½ cup water to form a thick paste; set aside.
  • Season the beef with the salt; set aside.
  • In a large pot or Dutch oven, fry the bacon over medium heat, stirring frequently so it doesn't stick, until the fat renders and the bacon crisps, about 10 minutes. Using a slotted spoon, remove the bacon to a paper towel-lined plate. Pour all but a few teaspoons of fat from the pot into a small bowl; set aside.
  • Increase the heat to medium-high. Sear the meat in three batches (it should be in a single layer), until well browned on one side, about 4 minutes per batch, adding more of the reserved bacon fat as necessary. (Hint: Once the meat is in the pan, don't stir or touch it - leaving it alone will allow it to develop a nice brown crust on one side.) Place the seared meat on a plate. Add about ¼ cup of water to the pot (it will smoke), and scrape the bottom with a wooden spoon to release all of the flavorful brown bits. Pour the dark liquid over the seared meat.
  • Reduce the heat to medium and add 3 tablespoons of the reserved bacon fat to the pot. Add the onions and cook, stirring frequently, until softened, about 5 minutes. Add the garlic and jalapeños and cook 2 minutes more. Add the reserved chili paste and sauté until fragrant, a few minutes (it will look clumpy and stick to the bottom a bit - that's okay).
  • Add the beef broth and stir with a whisk until the spice mixture is completely dissolved. Scrape the bottom of the pot with the whisk to release any spices. Stir in the the water, beer, crushed tomatoes, molasses and cocoa powder. Add the reserved bacon and seared beef (along with the juices from the beef on the bottom of the plate) back to the pot and bring to a boil. Reduce the heat to low and cover, leaving the lid just barely ajar. Simmer, stirring occasionally so the bottom doesn't burn, until the meat is meltingly tender and the juices are thickened, 2½ to 3 hours. Taste and adjust seasoning if necessary. Ladle the chile con carne into bowls and serve with cilantro, cheese, and lime wedges.
  • Note: When selecting the meat, be sure not to buy anything generically labeled "stew meat." Also, you will lose about ½ pound after trimming the fat, so if you buy the meat already trimmed and cubed, you'll only need about 3½ pounds.
  • Tip: To make bacon easier to chop, try placing it in the freezer for 15 to 20 minutes first. The colder it is, the easier it is to cut.
  • Note: Always be careful when handling jalapeño peppers. Wash your hands well when done and avoid touching your eyes.
  • Freezer-Friendly Instructions: The chili can be frozen for up to 3 months. Before serving, defrost it in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot.

  • Instant Pot Beef Stew. Filled with carrots, white and sweet potatoes, and celery, this stew is reminiscent of a classic beef stew known and loved by many of us.
  • Slow Cooker Steak and Potato Soup. With additions of chili powder, cayenne pepper, and cumin, this stew is heavily spiced and flavorsome. The Yukon gold potatoes are essential here as they are less likely to break apart than other potato varieties and help keep the stew chunky and full of texture.
  • Best Ever Beef Stew. That title is quite the claim. And as bold as it is, it may just be entirely true. The deeply flavored homemade gravy is so delicious and thick and perfectly drapes over a pile of creamy mashed potatoes if that’s your thing, too.
  • Quick and Easy Beef Stew. This is a nice, quick, and easy beef stew recipe that’s perfect for if you want something really quick to pull together with mostly store cupboard ingredients.
  • Slow Cooker Beef Stroganoff. With this recipe, you do get the best of both worlds as you have the rich gravy created by the beef, but the addition of heavy sour cream transforms the gravy into something creamy, unctuous, and utterly delicious.
  • Braised Beef Tacos. This recipe disproves the idea that stewed beef only belongs to mashed potatoes. Served in warmed tacos and topped with salsa, feta, guacamole, and cilantro, the beef is stewed with spices including chili powder, cumin, and garlic powder for the ultimate flavor bomb.
  • Beef Pot Pie. Pot pie is surely the most comforting meal for fall and winter. This mixture of heavily seasoned beef, carrots, and frozen green peas is encased in a crisp, buttery pie crust.
  • Beef Bourguignon. This classic French dish has stood the test of time, and for a good reason! The beef is braised in red wine along with onions and carrots, making for a rich, decadent gravy.
  • Beef Tips with Gravy. Smothered in a rich brown gravy, these beef tips are ridiculously tender and are best served over – you guessed it – a pile of creamy mashed potatoes!
  • Carne Guisada. Carne Guisada is a Tex-Mex beef stew fragrant with spices such as cumin, garlic, and black pepper, which all create a wonderfully warming and flavorful gravy.

4 BEST BEEF CUTS FOR CHILI | FOOD & WINE

From foodandwine.com
Estimated Reading Time 1 min
  • Ground beef. This is the quickest and least expensive type of beef to use for chili. Yes, the dish still simmers for a while, but you don’t have to worry about tenderizing the meat.
  • Beef chuck. Diced beef chuck, which comes from the shoulder, is tough, but it becomes nicely tender when stewed for at least 90 minutes. It also has a beefier flavor than the ground stuff.
  • Brisket. This huge cut is usually barbecued or braised, but if you cut it into pieces, it works well in chili. After stewing for at least two hours, the chunks will pull into delicious shredsthat can be piled onto tacos.
  • Short ribs. Short ribs are usually served whole, but they don’t have to be. Pull the meat off the bones and dice it up for a more luxe and luscious take on chili.

  • Chop one large onion. Dice one Poblano pepper and mince one jalapeno pepper. Skip the Poblano pepper if you want.
  • Trim 2 pounds of pre-cut stew meat. I always go through the stew meat for any additional trimming and to cut bigger pieces in half. You can also use a chuck roast.
  • Add meat, onion, peppers, and beans in a larger crock pot. Add two 14 oz cans diced tomatoes, one 6 oz can tomato paste, 2 tablespoons chili powder, 2 teaspoons cumin, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix well.

Stew is defined as a combination of solid food ingredients cooked in liquid and served in a gravy. Whereas in soup, meat is boiled within the stock or water that is used as a base.
