Prunes really go well with pork and this recipe has them inside the pork and in the sauce. The pork takes on a delicious sweet flavor from the prunes. This recipe is from Chef Marcus Samuelsson of Aquavit. Samuelsson pairs this dish with red cabbage and roasted potatoes and serves with lingonberry preserves or fresh cranberry relish. Variations: For a richer sauce use a good quality fresh or frozen veal stock.

1 (3 lb) pork loin roast
2 teaspoons fresh marjoram, finely chopped
2 pieces fresh ginger, peeled and finely chopped (3-inch pieces)
5 garlic cloves, peeled and halved
5 pitted prunes, quartered
1 tablespoon caraway seed
2 teaspoons kosher salt
fresh ground black pepper
1 tablespoon olive oil
1 1/4 cups chicken stock or 1 1/4 cups water
1 tablespoon olive oil
2 shallots, finely chopped
3 inches piece ginger, peeled and finely chopped
5 pitted prunes, quartered
2 cups chicken stock
1/2 cup balsamic vinegar
1 tablespoon unsalted butter
kosher salt
fresh ground black pepper

Steps:

  • MAKE THE PORK:.
  • Preheat the oven to 425°F (220°C).
  • Cut away the excess fat from the pork roast, leaving a thin layer of fat on top.
  • Mix marjoram and ginger together in a small bowl.
  • Poke holes about 1 1/2" deep all over the pork roast, then use something like the handle of a wooden spoon to make holes wider. Stuff 1 or 2 prune quarters, half a garlic clove, and a large pinch of the marjoram/ginger mixture into each hole.
  • Mix the remaining marjoram/ginger mixture with caraway seeds, salt, and pepper.
  • Rub roast with olive oil, then rub the seasoning mixture over roast.
  • Place in roasting pan and roast for 20 minutes.
  • Reduce heat to 35O°F and continue roasting for 40 minutes to 1 hour longer, until the center of the roast reaches 150°to 155°F on kitchen thermometer.
  • Transfer roast to cutting board, cover loosely with foil, and let sit while you prepare the sauce.
  • MAKE THE SAUCE:.
  • Set roasting pan over medium-high heat and deglaze pan with wine or other liquid, scraping up the browned bits in the bottom of the pan.
  • Remove from the heat and set aside.
  • Heat oil in a small saucepan over medium heat. Add shallots and ginger and sauté for about 2 minutes. Add prunes, stock, vinegar, and deglazing liquid, bring to a simmer, and simmer for 10 minutes, until slightly reduced. Whisk in butter, season with salt and pepper. Remove from heat.
  • Cut roast into thick slices and arrange them on a servind dish. Spoon some of the sauce over the meat, and pass the remaining sauce at the table.

About 12 ounces pitted prunes
2 cups white wine, optional
4 pounds, net, boned pork loin, centercut
4 tablespoons unsalted butter
1 large onion (or leek), 1 stalk celery and 1 large carrot, finely chopped
2 to 3 tablespoons vegetable oil
1/2 cup broth
Whole bay leaf, 4 whole peeled garlic cloves
Salt and pepper
2 tablespoons of butter, optional

Steps:

  • Preheat oven to 325 degrees. Soak prunes in wine, if you wish, for as long as possible. Drain prunes, reserving wine. With a long sharp knife, make a slit in the center of the loin and stuff it with prunes (reserve prunes that won't fit into pork).
  • In a large casserole heat butter. When foaming subsides add the onion or leek, celery and carrot. Cover and cook for 5 to 8 minutes or until the vegetables are tender. Remove them with a slotted spoon and reserve for later. Add vegetable oil to the casserole and heat. When hot, add the loin and brown on all sides, including the ends. When pork is browned, remove it to a plate. Discard all fat from the casserole, but leave behind any drippings. Return cooked vegetables to the bottom of the casserole. Add the meat on top and add any prunes which didn't fit into the loin.
  • Cover loin with reserved white wine you soaked the prunes in, broth, bay leaf and garlic. Put a lid on casserole and set in oven. Cook for 1 and 1/2 to 2 hours or until pork juices run a clear yellow (difference in time depends on how thick the loin is; internal temp is 165 degrees). Remove casserole from oven and remove the pork and let rest while you make the sauce. Strain the juices into a "degreasing" cup or heat-resistant cup. Discard aromatic vegetables and prunes. The fat will rise above the juices; discard it. Return juices to casserole and boil down until thickened. Finish with a tablespoon of butter or not as you wish. Slice pork into thin slices, serve with saffron rice, sugar snap peas and spoon sauce over the top.

1 pork tenderloin
6 pitted prunes
1/3 cup beer
1 shallots
4 leaves fresh sage
1 tbsp butter, unsalted
1 tbsp olive oil
1/4 cup demi-glace sauce
6 toothpicks
1 pinch salt
ground pepper to taste

Steps:

  • In a small bowl, macerate the prunes in the beer for 15-30 min.
  • Drain them, reserve the liquid, and set aside.
  • Preheat the oven to 160 °C / 325 °F.
  • Slit the fillets in half lengthwise in order to form a pocket, then salt and pepper the inside.
  • Place 6 prunes side-by-side in each fillet.
  • Close the pocket using tooth-picks (3 per fillet).
  • Heat the oil and butter in a pan to a fairly high temperature.
  • Brown the fillet(s) on each side, 6-8 min total, then transfer them into an ovenproof dish.
  • Sprinkle with 1-2 tablespoons of the macerating beer, and bake for about 13 min.
  • Meanwhile, add the shallot to the pan, then sauté 3 min with stirring.
  • Add the remaining macerating beer and deglaze until the liquid is reduced to a half (2-3 min).
  • Add the sage and the demi-glace, then cook over medium heat for about 5 min.
  • Take the dish out of the oven and remove the tooth-picks.
  • Transfer the fillets with all the meat juice to the stovetop pan.
  • Cook for 1-2 more min.
  • Add salt and pepper to taste.
  • Slice the fillets then place them on the warmed serving plates.
  • Cover the slices with the cooking juices and serve.

Extra-virgin olive oil
4 slices bacon, cut crosswise into lardons
1 small red onion, cut into 1/4-inch dice
Kosher salt
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup prunes, quartered
2 sprigs fresh rosemary, leaves picked and finely chopped, divided
1/2 cup brandy or Calvados
1 (3 to 4-pound) boneless pork loin
1 cup chicken stock

Steps:

  • Coat a large saute pan lightly with olive oil. Add the bacon and bring the pan to a medium heat. When the bacon is crispy and has released a lot of fat, add the onions and season with salt. Cook the onions until they are soft and aromatic, 5 to 6 minutes. Add the apples, prunes, and half the chopped rosemary. Cook the apples, stirring occasionally, until they start to soften, about 5 minutes. Pull the pan off the heat and add the brandy. Return to the fire and flambe, or let the alcohol just burn off. Remove from the heat and let cool.
  • Lay out a length of plastic wrap about 2-feet in length. Spoon the apple mixture onto the plastic and make a log down the center that is about the same length as the pork loin. Roll the plastic tightly around the apple mixture and twist at the ends to secure. The log should be about 1- inch in diameter. Place the log in the freezer and let it freeze solid. This can and should be done ahead of time.
  • To stuff the pork: Insert a long, thin knife into the center of one end of the pork loin; repeat this process at the other end. Wiggle the knife back and forth to create a place big enough to accommodate your frozen stuffing log. After cutting with the knife, you can use the handle of a long wooden spoon to make sure the incision goes all the way through the pork loin.
  • Preheat the oven to 375 degrees F.
  • Get the stuffing log from the freezer and remove the plastic wrap. Slide the stuffing log through the pork loin - it might need a little encouragement but it should go the length of the loin. Season the outside of the pork generously with salt and sprinkle it with the remaining chopped rosemary.
  • Coat a roasting pan with olive oil and bring the pan to a high heat. Add the pork to the pan and sear it on all sides until it is brown.
  • Remove the pork to a plate and ditch the fat in the roasting pan. Add the pork back to the pan pour in the chicken stock. Place it in the oven for 25 to 35 minutes, depending on how you like your pork. I personally like it pinker and would remove it from the oven when a meat thermometer reaches 130 degrees F. Turn it over halfway through the cooking time. Remove it from the oven, cover it with foil, and let it rest for 15 minutes before carving.

  • Preheat oven to 350 degrees F.
  • Clean pork loin removing any excess fat. butterfly the pork loin (1/2-inch thick). Lay the pork, cut-side up, season with salt and pepper, and rub liberally with the apricot chutney.
  • Place a layer of apricots and prunes on the flattened loin. Roll tightly and tie with twine at 1/2-inch intervals. Place the pork in a roasting pan fitted with a rack and season with salt and pepper. Roast until the pork reaches an internal temperature of 145 to 150 degrees F, about 15 minutes per pound.   • Soak prunes in water for 30 minutes. Drain prunes and reserve soaking liquid. Take each half pork tenderloin and using a long knife cut a lengthwise pocket in the center of each piece. Stuff each piece with 4 prunes. Combine beef and chicken broths. Boil a/b 35 min. until reduced to 1 cup. Melt 2 Tbsp butter in skillet over med heat. Add shallots, green onions, and carrots and Sauté until tender, a/b 10 minutes. Add vodka, soaking liquid, and reserved broth. Boil until liquid reduced to 1 cup (a/b 10 minutes). Strain sauce, pressing on solids. Discard solids. (Pork and sauce can be prepared one day ahead). Preheat oven to 425. Melt remaining 2 Tbsp butter in heavy oven-proof skillet. Add pork and Sauté until brown on all sides, a/b 10 minutes. Transfer to oven and roast 15 minutes, or until 165° . Add 1/4 cup cream to sauce and simmer until slightly thickened. 250 g pork mince
50 g red onions or 1/2 red onion, finely chopped
1 garlic clove
75 g prunes, finely chopped
75 g dried apricots, finely chopped
1 tablespoon light soy sauce
1 tablespoon ketchup
50 g whole wheat breadcrumbs
1 egg, whisked
1 tablespoon dried parsley
600 g outdoor bred british pork fillets
200 g free-range chicken breasts or 1 large free-range chicken breast
100 g pate (a smooth pate like Brussels)
100 g mushrooms (chestnut, very finely chopped)
50 g red onions or 1/2 red onion, finely chopped
1 garlic clove, finely chopped
2 tablespoons extra virgin olive oil
200 g streaky bacon or 10 slices streaky bacon

Steps:

  • Preparation.
  • Combine all pork stuffing ingredients in a bowl and mix thoroughly by hand.
  • Refrigerate for at least 1 hour.
  • Gently fry the onions, mushroom and garlic in the olive oil. Leave cooking though on a low heat for 20 minutes whilst preparing the raw meat as below.
  • Take the pork fillet and double-butterfly it. i.e. using a very sharp knife, cut a slice 95% of the way across along the length of the fillet - 1/3 of the way down. The fillet should now be twice the width with 1/3 of the thickness on 1 side and 2/3 on the other.
  • Turn the chopping board around and now slice the thicker piece in half, again 95% of the way across. The fillet should now be 3 times its original width - top third to one side and middle third to the other.
  • Using a very sharp knife slice the chicken breast into several thin, wide slices and set aside.
  • Set the mushroom mixture to one side to cool. It may be worth leaving in a sieve for the excess juices to drain.
  • Assembly.
  • Lay the streaky bacon out across a chopping board in rows. Spread each rasher out using the back of a knife/your thumb until increased in length by ~20%. You need to have enough rashers that side by side they are wider than your pork fillet is long. They also need to be significantly longer than the potential circumference of your pork fillet roulade as they will be holding it in shape during cooking.
  • Lay the double-butterflied pork fillet out across the bacon.
  • Spread the pate evenly across the pork.
  • Spread the mushroom mixture across the pate.
  • Place the raw chicken slices across the pate/mushroom mix (if there is insufficient chicken to cover the pork, spread the chicken with the back of a knife to thin & broaden each slice).
  • Spread the Pork stuffing evenly across the chicken.
  • Roll up the pork fillet, placing join-side down onto the middle of the bacon rashers.
  • Fold the bacon rashers over the top of the back of the pork fillet ensuring all of the pork fillet is covered by bacon.
  • Sprinkle with freshly ground black pepper.
  • Cooking.
  • Place on a baking tray and cook in a pre-heated oven (200C / 180c Fan) for 40 minutes or until cooked through and bacon browning.
  • Remove and leave to rest on a chopping board for 5-10 minutes covered in tin foil.
  • Carve.
  • Serve with:.
  • Steamed savoy cabbage sprinkled with caraway seeds. When cooked, toss in a knob of butter and a small turn of black pepper.
  • Carrots, quartered lengthways and roasted in butter, basil & lemon juice (Optional: small amount of extra virgin olive oil).
  • Special Mash.
  • Gravy from meat juices, home-made chicken stock and veg water with a little cornflour.
