Holiday and Thanksgiving Cranberry Relish recipe. Fresh cranberries ground up with apples and orange. Great with turkey sandwiches.

2 cups rinsed raw cranberries
2 peeled and cored tart green apples, cut into thick slices
1 large, whole (peel ON) seedless orange, cut into sections
1 to 2 cups granulated sugar (depending on how sweet you would like your relish to be)

Steps:

  • Prepare your grinder: If you are using an old fashioned grinder, use the medium-sized grinder plate and set the grinder on the edge of a table with a large bowl or pan to catch the fruit mix as it is ground. Old fashioned grinders tend to leak juice down the grinder base, so you may want to set up a bowl underneath to catch the drips. If you don't have an old fashioned grinder, you can use the grinder attachment to a KitchenAid mixer, or you can use a food processor. If you use a food processor, be careful not to over-pulse! Or you'll have mush instead of relish. You can also just chop very finely by hand, but that's difficult, especially with the cranberries.
  • Push fruit through grinder: Push the cranberries, orange sections, and apple slices through the grinder. Include the orange peel! Alternate the fruit as you push it through the grinder so that different fruits get ground together. If you do not have a grinder, pulse fruit in a food processor.

This is how my husband's cousin prepared the cranberries for a family reunion type Thanksgiving a couple of years ago. It is really different from cooked cranberry sauce, which we also love- a light and refreshing alternative.

1 lb cranberries
2 navel oranges, peeled and seeded (including the peel)
1 (6 ounce) can crushed pineapple
1 1/2 cups sugar
1/2 cup pecans, chopped
1 dash cinnamon, and or 1 dash clove

Steps:

  • Chop the berries and the oranges fairly fine.
  • Toss everything together.
  • Add up to 1 1/2 cups of sugar to taste.

Cranberries are a must-have for certain holiday dinners. Lucky for us they're naturally low in carbs. Unfortunately, almost all the cranberry relishes and sauces you'll find in your market are full of sugar! This relish is all about the cranberries, and without all that unnecessary sugar!

1 cup sugar substitute (recommended: Splenda)
1 cup water
12 ounces fresh or frozen cranberries
1 teaspoon orange zest

Steps:

  • Combine sugar substitute and water in a saucepan and bring to a boil.
  • Add cranberries and orange zest and bring back to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
  • Remove from heat, cool, cover and refrigerate until ready to serve.

1/4 cup Grand Marnier liqueur
1 orange, zested and juiced

Steps:

  • Place all the ingredients in the bowl of a food processor, pulse several times to breakdown the cranberries and incorporate the ingredients; it should still be a bit chunky. Allow the cranberry relish to sit at room temperature for at least 30 minutes, so the flavors can marry.

This recipe comes to us from of Mina Kerr of Wheaton, Illinois. In this no-cook relish, tart cranberries borrow a bit of sweetness from apples and oranges, while walnuts give it a sweet pesto-like consistency.

1 large apple, unpeeled, halved, and cored
1/2 navel orange, unpeeled and seeded
2 cups cranberries (thawed if frozen)
1/2 cup walnuts
1/4 cup sugar

  • In a food processor, working with each ingredient separately, pulse apple, orange, cranberries, and walnuts until finely chopped. Transfer to a large bowl and stir in sugar.

1 med orange
1 jar(s) orange marmalade (small 11-12 0z.)

Steps:

  • 1. Wash the cranberries. Slice the orange into thin slices, leaving the peeling on. Combine the orange & cranberries.
  • 2. Prepare according to the directions on the cranberry bag for WHOLE CRANBERRY RELISH
  • 3. After the cranberries & orange have cooked according to the directions, add the orange marmalade. Cook an additional minute or until mixed.
