HERBY CABBAGE SALAD

Steps:
- Stir together the oil, vinegar, mustard, shallots, 1/2 teaspoon salt and a few grinds of black pepper in a large salad bowl. Add the cabbage, parsley, chives, oregano and thyme and toss to coat. Let stand at least 15 minutes or refrigerate up to 24 hours before serving.
ROASTED CABBAGE WEDGE SALAD
Steps:
- Cut cabbage into wedges and place them in a single layer on a baking sheet. Pour 1/2 cup of water on the bottom of the baking sheet.
- Cover the cabbage with foil and bake at 350°F for 45 minutes. Remove the cabbage from the oven and allow it to cool completely at room temperature.
- In a small bowl, whisk the salt, pepper, pressed garlic, oil, and vinegar until well-combined.
- Slice the cabbage into smaller wedges and place them on a serving tray. Pour the marinade on top.
- Garnish with a sprinkle of dill and serve. Enjoy!

MOM'S SALAD

Steps:
- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.
MOM'S COLE SLAW OR CABBAGE SALAD
Two recipes in one! If you stop the recipe at a certain point, you have grated cabbage salad. If you continue for a few more steps, you have cole slaw! The prep time is an estimate. Chilling time is not included.

Steps:
- Soak cabbage halves in salt water to cover about 20 minutes.
- Rinse cabbage and rinse the bowl.
- Add A LITTLE salt (not too much) and rub into cabbage hard with your hands. Taste for salt. You don't rip the cabbage halves apart to do this; just rub the outside surfaces, because you have to sliver the cabbage in the next step, and you don't want it all messy. (I am not sure why this step is even necessary, but those were the original instructions.).
- Cut the cabbage into fine slivers and place in a large bowl.
- Grate in the carrot (1 if the cabbage head is small; 2 if large).
- Finely dice the green pepper. Mix well. (I didn't show an amount for the green pepper - it is not one of the main vegetables - just use enough to have flecks here and there in the salad, unless you want more.).
- Add mayonnaise - just enough to coat. Mix through.
- Stop here if you want grated cabbage salad.
- Continue with the recipe if you want cole slaw:.
- Mix 1 part apple cider vinegar to 2 parts water.
- Add gradually to cabbage mixture; taste for seasoning.
- Sweeten with whatever sweetener you want to use.
- Cover and refrigerate for a few hours or more for the flavors to develop.

MOM'S CABBAGE SOUP
On rainy days, I often want comfort food-something to warm my belly and my soul! This very easy cabbage soup recipe is something my mother would make for me on days just like this. Her version has a ham hock, but you can use kielbasa instead, or go no-meat, the way I did.

- For the soup: Heat the olive oil in a stockpot over medium heat. Add the onion, celery, carrots and garlic and cook, stirring often, until the onions are translucent (not browned), about 8 minutes. Add salt, black pepper and crushed red pepper flakes to your desired preference. Then stir in the fresh tomatoes, canned tomatoes and vegetable stock and bring the entire mixture to a boil.
- Once boiling, stir in the cabbage and beans and keep it simmering, stirring occasionally, until the cabbage is tender, 35 to 40 minutes. Add more stock or water if you prefer more liquid and taste and season with more salt and pepper, if necessary. When finished, sprinkle over and stir in the parsley for color and flavor.
- Ladle the soup into bowls and serve with crostini or garlic bread, if desired.
- For the crostini: Preheat your oven to 350 degrees F.
- Place the bread slices on a baking sheet. Brush the tops with olive oil. You can also smear minced garlic over the top, if desired.
- Bake until crunchy and golden brown, 15 to 20 minutes. Take the crostini out of the oven, drizzle the tops with olive oil and sprinkle sea salt over the top.
MOMMA'S MARINATED RED CABBAGE
My mom made a mean sauerbraten dinner with dumplings and red cabbage. This is her recipe and it's the real mc coy!

Steps:
- Sprinkle cabbage with red wine vinegar, caraway seeds.
- Cover with plastic and marinate overnight in refridgerator.
- Next day, in a covered saucepan, heat olive oil and saute onions.
- Add cabbage, sugar, lemon juice, apple juice and grated apple.
- Simmer covered for 1 hour on the stovetop.
- Ready to serve with braised meats, potato dumplings and gravy!

- In a large serving bowl, combine the cabbage, carrots, green onions, and orange segments.
- Refrigerate until ready to toss salad Crush the ramen noodles into 1/2-inch pieces.
- Empty the ramen flavor packet into a small mixing bowl.
- Whisk in the canola oil, vinegar, sesame oil, and sugar, stirring until the dressing is well blended.
- Refrigerate until ready to serve When you are ready to serve the salad, pour the dressing over the salad and toss to coat everything evenly.
- Add the cashews or peanuts and noodles, tossing again.
- Serve immediately.

MOM'S PURPLE CABBAGE SALAD
Got this from my Mom in 1989. I suspect she got it out of a magazine (BHG?) or the newspaper.... We've been eating it regularly since. Be sure to make it up a day ahead so the flavors mix well. This recipe makes enough for a small army so this is a good one to take to a pot luck or (large) family picnic etc. If the salad is kept in the fridge it lasts 4 - 5 days if tightly covered. (BTW - we've used Hellmans, Hellman's light, Miracle Whip and MW light for the salad dressing. It is truly best with the full fat Hellman's...)

Steps:
- Fry, drain and crumble the bacon.
- Get out the biggest bowl you have in the house.
- Chop or shred the cabbage, cauliflower, broccoli and onion. Mix in the veggies (incl peas) and the bacon. Set salad aside.
- Mix the dressing by combining the mayo, cheese, sugar, S&P.
- Toss the salad with the dressing the night before your event. Shake up the salad once or twice to make sure the dressing mixes.
