GRILLED STEELHEAD TROUT

Just came up with this recipe this weekend. It's pretty basic but delicious.

1 lemon, sliced into thin rounds with the ends reserved
3 tablespoons olive oil
1 ½ teaspoons minced garlic
1 ½ teaspoons minced onion
salt and ground black pepper to taste
1 filet steelhead trout

Steps:

  • Lightly oil the grate of your grill. Arrange lemon slices on the grate so they overlap slightly and form a shape slightly larger than your trout fillet.
  • Preheat grill for medium heat to 350 degrees F (175 degrees C).
  • Heat olive oil in a small skillet over medium-high heat.
  • Saute garlic and onion in the hot oil until the garlic browns slightly, 2 to 3 minutes; season with salt and pepper. Squeeze the reserved lemon ends over the garlic mixture.
  • Gently lay the trout fillet onto the lemons with the skin side down. Brush the garlic mixture over the top of the fish.
  • Cook trout on hot grill until the fish flesh flakes easily with a fork, about 10 minutes.

6 (4 ounce) steelhead trout or 6 (4 ounce) salmon fillets
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons unsalted butter
1/2 cup dry white wine
2 leeks, white parts only, finely chopped
1/4 cup heavy cream
1 tablespoon Dijon mustard

Steps:

  • Liberally season the fish on both sides with salt and pepper. In a large frying pan, melt the butter over medium heat until it is foaming. Add the fish and saute for 2 minutes on each side. Transfer to a warm plate. Reduce heat to medium-low, add the wine and leeks, and saute until the leeks are soft, about 5 minutes. Stir in the cream and mustard. Add the fish to the pan, baste with the sauce, cover, and cook over medium-low heat until still translucent in the center, about 5 minutes. The fish will continue to cook through off heat. Serve topped with sauce.

This is the ultimate steelhead trout recipe. Topped with shallots, garlic, lemon and fresh herbs, it's so juicy and flavorful. It's so simple but looks impressive.

1 steelhead trout or salmon fillet (1 1/2 - 2 1/2 lbs)
4 Tablespoons butter
1 shallot, minced
2 garlic cloves, minced
1-2 Tablespoons fresh dill, minced (you can also use other herbs, like parsley, chives))
salt, ground black pepper, to taste
1 lemon (1 teaspoon of zest and all the freshly squeezed juice)

Steps:

  • Preheat the oven to 450 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil or parchment paper.
  • In a skillet or small saucepan, melt the butter. Add the shallot and cook on medium heat for about 3 minutes, until the shallot softens.
  • Add the garlic and the lemon zest, cook for another minute. Cool slightly. Squeeze in half of the lemon juice.
  • Place the fish on the prepared baking sheet. If it's really big, lay it diagonally across the baking sheet. Season with salt and pepper.
  • Spoon the butter over the fish.
  • Sprinkle with half of the minced dill.
  • Roast in the oven for 12-17 minutes, depending on how thick the fish is. The best way to check for doneness is to use a fork to gently prick the fish, and if it flakes easily, it's ready.
  • Use several spatulas to take the fish off the baking sheet in one piece. (Or cut it into sections, if it's easier.)
  • Squeeze the other half of the lemon over the fish and sprinkle with more fresh dill.

⅓ cup honey
2 tablespoons mesquite seasoning
1 teaspoon ground black pepper
1 teaspoon seasoned salt (such as LAWRY'S®)

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Place trout, skin-side down, onto the prepared baking sheet. Cover trout with honey and sprinkle mesquite seasoning, black pepper, and seasoned salt over honey. Press honey and seasonings into trout using a fork.
  • Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.

Last night DH came home with the most beautiful Steelhead Trout Fillet. Instantly I knew the fresh tarragon from the garden was the herb for it and I had to do something slightly tangy and creamy. So, here's my creation, hope you like it, we sure did! I served it with Recipe #336341 and Recipe #189605, some hot sourdough bread and happy smiles all around! select

1 steelhead fillet, skin on
1/2 cup Hellmann's mayonnaise
1/4 cup creole mustard
3 -4 tablespoons tarragon, minced
1 -2 tablespoon fresh lemon juice
fresh ground black pepper
canola oil

Steps:

  • Preheat the oven to 450 degrees.
  • Place a large broiler pan in the oven and let that heat.
  • Lightly oil the skin of the trout.
  • Mix the Mayo, mustard, tarragon, lemon juice and season with pepper.
  • Taste the sauce, I thought it was salty enough and did not add any but you may want a saltier taste.
  • Spread on the meat of the trout.
  • Place the trout on the hot pan and bake for about 10 minutes, or until you like your fish cooked.
  • Serve!
