STEAMED TOFU STUFFED WITH PORK HASH
Steps:
- Cut cut both blocks of tofu into 8 triangles by cutting down the middle lengthwise, flip on side and then cut diagonally. Make slits in each piece to form pockets. Combine pork, shrimp, green onion, ginger, garlic, water chestnuts, oyster sauce, shiitake mushrooms, salt and pepper. Spoon filling into each triangle. Lightly coat in flour and cook in hot cooking oil until golden brown, about 8 minutes. Place tofu on plate, cover in plastic wrap and steam in a wok with a bamboo steamer for 15-20 minutes or until pork is cooked. For the Sauce: 1-14.5 oz can low sodium chicken broth 3 t sugar 1/4 c soy sauce 1/4 c oyster sauce 5 T cornstarch in 5 t water In a saucepan, bring chicken broth, sugar, soy sauce and oyster sauce to a boil. Add cornstarch water and whisk quickly until thickened. Remove and pour over tofu.
ASIAN STUFFED EGGPLANT WITH HAWAIIAN-STYLE PORK (OR TURKEY) HASH
This is a dish that combines two things that I really like... eggplant and pork hash. Pork Hash in Hawaii brings back memories of the hunabutta days (childhood) when the man in the manapua (steamed Chinese bun) man would come around and sell his wares, kind of like the ice-cream man in the states. But instead of getting ice-cream, one could get pork hash, half moon, manapua, fried noodles, candies, almond cookies and other stuff. Pork Hash is kind of like a meatball wrapped in a won ton wrapper. It is usually served with chinese mustard mixed with soy sauce. Coleman's dry mustard mixed with soy sauce is a close approximation, and is the recommended accompaniment to this dish. You could also use a chinese black bean sauce or a sweet and thick teriyaki sauce. Good eating!

Steps:
- Combine pork or turkey, eggs, green onions water chestnuts garlic, ginger powder, pepper, sesame oil, oyster sauce, sugar and soy sauce in a large bowl. Mix well (I like to use my hands).
- Cut a wedge out of the eggplant. Stuff the pork mixture into the newly created pocket. (I always overstuff).
- If desired, put the wedge back on top of the eggplant.
- ***NOTE***There will be alot of stuffing left over. This can be made into "pork hash" burgers or made into pork hash. To make pork hash, place about 1 tablespoon of the mixture on to the middle of a wrapper. Wrap up the sides, leaving the top open and unsealed.
- Put stuffed eggplant and pork hash into a steamer, and steam for about 30 minutes.
- Serve with soy sauce mixed with dry powdered mustard, or sweet and thick teriyaki sauce or chinese black bean sauce.

Steps:
- For the beancurds ---------------.
- Mixed minced pork, some corrianders, mushrooms and cooking wine, salt, pepper, corn flour together.
- Fill the hole on each beancurd with the mixture.
- Put the beancurds into the steamer to steam for 15 minutes.
- For the gravy --------------------.
- Boil 1/2 cup of water in a small saucepan.
- Add oyster sauce, corn flour, pepper and salt to the boiling water and stir well.
- Turn off the gas and add 1 tbsp of cooking wine or sherry and the remaining corriander to the gravy and stir well.
- Sprinkle the gravy over the steamed beancurds and serve.

- Marinate the pork with the seasonings for 30 minutes or more.
- Mix all the ingredients thoroughly and place them flat on a plate.

- Prepare your silken tofu by cutting it in half lengthwise and then slicing it crosswise into ½-inch slices. Use your knife or cleaver to transfer each half of the cut tofu to a large heatproof rimmed plate or shallow bowl. The dish should be deep enough to hold the steaming liquid and sauce.
- Lay the tofu on the plate so the pieces are fanned out evenly, with as much tofu surface area exposed as possible. Sprinkle the salt evenly over the tofu.
- Next, steam the tofu. Add 4 cups of cold water to a wok, place the tofu on a steaming rack inside, and cover the wok.
